The restaurant uses various cuts of meat for their "Genghis Khan," so the cuts are not fixed. They start by carefully grilling a variety of cuts, with a good balance of red meat. The "Special Lamb Loin" has a unique thin slice. Yes, it's a common dish. The "Lamb Tongue Ajillo" has tongue, mash, and garlic sprouts. It's quite salty, which may be too salty for non-alcohol drinkers. It has a crispy texture, but the taste is light like pork tongue. The "Aomori Garlic Whole Roast" is huge. It has a fluffy texture like a potato with a rich flavor. It is placed on a stone for grilling, which is specifically for the "Stone-grilled Lamb Basil Set." The stone grill is coated with plenty of salad oil, olive oil, and basil. Various cuts of meat are not specified for the stone grill, and it might be better to apply olive oil. The flavor of raw basil envelops the lamb, with the basil overpowering.
