The marbled horse meat is delicious (((o(*゚▽゚*)o))) I also like the fatty part called "Koune". Next is the cherry blossom shabu-shabu, where you quickly dip the horse meat in kelp broth and eat it almost rare. It's refreshing and easy to eat with plenty of vegetables! Healthy, right? The grilled horse tendon has a chewy texture and a good amount of fat, which brings out the flavor as you chew. Delicious~ Horse hormone stir-fry with sweet and savory sauce pairs perfectly with the hormone. The fatty hormone is so tasty! The horse mince cutlet might be my favorite. A shop I used to visit every time I traveled to Osaka when I was younger. They offer delicious horse meat dishes all year round, as well as wild boar, bear, and pheasant during the winter. I still can't forget the shock (it was so delicious) of being served the delicious testicles of wild boar. I made a reservation after a long time (they recognized me immediately by my voice and name) and arrived 18 hours before on a weekday. I wanted to try bear meat, but they said the bears this winter had no fat at all, so I opted for the horse and wild boar hot pot course. While sipping on cucumber and Chita highballs, I caught up with the owner who is the same age as me. Their relatively compact new store has been open for 8-9 years now. Depending on the reservation situation, the owner often runs the place alone, and today it was just the two of us. I enjoyed a delicious assortment of horse sashimi and horse rib meat skewers while transitioning to Japanese sake (Senkin, Akabu, Kokuryu) which they are expanding in the new store. I also ordered the tongue sashimi and liver sashimi that I always used to eat. The tongue sashimi had a rich umami flavor and a unique texture that paired perfectly with sesame oil, while the liver sashimi was delicious with its intense flavor. The wild boar meat was perfectly fatty, tender, and sweet. They also cut some bear meat for me to try, and while the meat itself was tasty, I did miss the strong sweetness and aroma of the fat. For dessert, I had udon noodles, which were stewed thoroughly and very satisfying. It was a wonderful time filled with delicious food and nostalgic memories.

Recently, I went to try the trendy bear hot pot, made with meat from the Japanese black bear, known as "Tsuki no Waguma." I reserved a set meal which included hot pot, horse sashimi, a finishing dish, and dessert. It cost around 8,000 yen per person, and with one drink each, the total bill was around 20,000 yen including tax. The restaurant was small, with only four tables, and we were served cucumber as an appetizer. The cuts of meat were skillfully done with a sharp knife, showing the craftsmanship of the chef. Next, we were served horse sashimi, which had four different cuts, each with its own unique flavor and a fresh, sweet aroma. The horse meat skewers were also delicious, with a firm yet tender texture. The main dish was the miso hot pot, with the bear meat being cooked shabu-shabu style. The meat was lean and had a muscular texture, similar to horse meat. Sprinkling it with sansho pepper made it incredibly tasty. It wasn't heavy like beef, and we could enjoy it until the last bite. I'm looking forward to trying wild boar next time!

I heard that you can enjoy a limited-time game dish featuring pheasant from November to the end of March, so I decided to try it out for a small year-end party! You must make a reservation 4-5 days in advance for this pheasant course located just a 1-minute walk from exits B28 and B30 of Nihonbashi Station. We had the "Pheasant Hot Pot Set"! We started with a cucumber pickled appetizer, which was a surprising palate cleanser. Then we enjoyed pheasant sashimi with various textures, including liver, heart, and gizzard. The liver had a unique aroma that was a bit challenging for me, but the heart and gizzard were delicious with sesame oil and ginger soy sauce. Next, we had grilled pheasant wings and drumsticks, which had a great chewy texture and were a favorite among those who love chicken. I wish we could have had more of those! The highlight was the pheasant hot pot, with a golden broth made from bones and meat, where we cooked thigh meat and skin first, followed by breast meat and tenderloin for shabu-shabu. Personally, I preferred the chewy texture of the skin and thigh meat over the shabu-shabu style. The pheasant sushi was a delight with its fresh and juicy flavor, although one piece per person was not enough! To finish, we had a special porridge set for the hot pot, cooked in a rich broth with added ponzu sauce for a comforting end to the meal. This dish is best enjoyed by three people, as four might find it lacking in portion size. Overall, it was a great experience to savor pheasant at this restaurant, and I would love to come back for more!

I wanted to eat horse meat, so I made a reservation and visited a horse meat specialty restaurant. I was torn between choosing the restaurant called "Horse" and another one, but ended up choosing this one randomly. In addition to horse meat, they also offer wild boar, bear, and pheasant meat depending on the season, but the horse meat is the main attraction. I had the hot pot set (7000 yen) which included horse Achilles tendon with ponzu sauce, salt, and vinegar miso, and raw horse meat slices (900 yen). I also had a Chita highball (700 yen). The total amount includes consumption tax and a table charge (8% consumption tax + 2% table charge). It may be a bit confusing, but just consider the total amount as having an additional 10%. The hot pot course (7000 yen) includes a table charge and dishes such as assorted horse meat sashimi, choice of cherry blossom hot pot, ramen or udon for dessert. I also added horse Achilles tendon with ponzu sauce and salt and vinegar miso (700 yen) and raw horse meat slices (900 yen). The rare parts of horse meat are reasonably priced and delicious. When I went, I was alone so it was relaxing, but having a few more customers would make the atmosphere even better. However, if you're not interested in horse meat, pheasant, bear, or wild boar meat, you may not be inclined to visit. They also offer single person hot pot, which is convenient for me as hot pots are usually for two people. Having a single person hot pot is a rare find, but it can look a bit lonely. Overall, it was a great experience.

I felt energized after finishing the meal. The service was average, not particularly friendly but not unpleasant either. Recommended for those who want to feel energized and those who want to try delicious wild boar. The wild boar was excellent.

I was drawn to this restaurant by my interest in game meat, and I saw it on TV and thought I definitely want to go! This restaurant not only serves game meat, but it's also called "Gyusho" (meaning beef), even though there is no beef on the menu. I tried the bear hot pot, and even though it seemed rich and heavy, it was surprisingly light in the mouth with a subtle sweetness from the fatty meat. It's nice to try something like this once in a while, to appreciate the gift of life and discover new tastes. Thank you for the meal!

The main dishes were peony hot pot and horse meat sushi. I love horse meat, so there were many things I wanted to try, but I have a small appetite, so I ordered less this time. The miso flavor was delicious, and the wild boar meat was surprisingly light and had no unpleasant smell, it was delicious. The bear hot pot is starting soon, so I look forward to trying that next time. I am also curious about the pheasant hot pot that was on the menu.

It was delicious! I was able to eat it with peace of mind because it is high in protein and low in calories! It was summer so I didn't have hot pot, but I will try it next time. It's just a shame that the service from the staff was a bit lacking.

It had a lot of fat, which was surprising. The soup was miso-based. The meat was fresh, so we enjoyed it like shabu-shabu. Despite looking rich, the meat was actually quite refined and delicious. It was easy to eat without any greasiness or gamey taste. The vegetables also added a nice flavor to the dish! Finally, let's finish with a noodle dish! We ordered the Kuma (bear) hot pot rice porridge as well. The soup was incredibly tasty. It was a bit extravagant, but indulging in such meals once in a while can make you feel richer. The other day, I visited "Gyusho" for the first time in 2 years, as they had relocated. This time, I was looking forward to the bear hot pot that is in season. But first, we started with horse sashimi, which was delicious as always, along with the cucumber appetizer. Then we had horse sashimi a la carte, horse liver sashimi, horse sushi, and cherry blossom natto. Finally, we enjoyed the main dish, the bear hot pot, which was incredibly delicious with its fatty meat. Thank you for the wonderful meal.

The dining style is to share one pheasant among 2-3 people, with a course menu priced at 25,000 yen. We shared the meal. The hot pot dish, like a year-end party, was very comforting. The horse sashimi allows you to enjoy various parts. The cherry blossom natto with plenty of horse meat goes well with natto. The pheasant sashimi is served as a platter. It goes well with sesame oil. The ginger soy sauce is also very delicious. The gizzard, heart, liver, breast meat, and tenderloin all have a unique texture. You can taste each part and enjoy the different textures. The pheasant sushi disappears with a delicate touch. I wanted to eat more. The pheasant wing tips and wing roots had a surprising elasticity in the skin and meat. I was surprised by the bounce as I ate. The hot pot is served. The broth made from pheasant bones and meat shines with a golden color. And the meat is brought out beautifully on one plate. It is packed with breast meat, tenderloin, thigh meat, and skin. I dipped the meat in the broth with ponzu sauce and enjoyed the softness and aroma spreading in my mouth. The clear taste different from chicken and the wild flavor of the thigh meat made me smile. The chef may seem quiet, but his attentive service and hospitality are appreciated. I still want to try more winter hot pot dishes in the future.

I had been curious about Ushimasa-san for a while. Despite the name suggesting beef, it is actually a horse meat specialty store. In winter, you can also enjoy dishes like button nabe, sakura nabe, and bear nabe. On this day, I decided to visit on a whim and went without a reservation. - Horse sashimi: Since it's a horse meat specialty store, I wanted to try the horse sashimi. Unfortunately, the "special" option was sold out, so I opted for a mixed plate of horse sashimi. The slices were thick, tender, sweet, and delicious. - Smoked Tataki: I had been into smoked dishes recently, so I couldn't resist ordering this. The more you chew, the more umami flavor comes out. - Button Nabe: The hot pot had a rich soup base mainly made with red miso. The meat was simmered well to bring out its flavor before being served. The staff kindly informed us when it was ready to eat. Finally, I tried wild boar for the first time. The fatty part was light, and the lean part was very mild in flavor. It was unexpectedly not as rich as I had imagined from its appearance. - Ramen: I had ramen in the soup from the hot pot. The meat was mild in flavor, but the soup was rich and flavorful. We visited as a party of two, but since the restaurant is not very large, reservations are essential for larger groups.

Since the restaurant moved, it had been a while since my last visit. The previous location was a bit hard to find, but it was a hidden gem known only to a few. The new location is much easier to find and both the exterior and interior have become lovely. I can only afford to go when I have a little extra money to spare (lol), but when I feel like eating delicious horse sashimi, I will come to this restaurant. Normally, I order horse sashimi online, but the frozen delivery doesn't compare to the freshness you get from eating it in person. However, I can't travel all the way to Kumamoto or Nagano just to eat horse sashimi, right? In those times, I go to "Gyusho". What? Going to "Gyusho" to eat horse sashimi? You might be thinking, but they don't serve beef here (lol). I heard from the head chef that they started with beef when they first opened, but now they mainly serve horse meat along with pheasant, bear, boar, and deer, which are rare meats. Typically, most horse sashimi restaurants in Kyushu serve a sweet and rich soy sauce. I'm not a big fan of this soy sauce. However, at Gyusho, they serve it with fresh soy sauce and garnish it with ginger and leeks. I personally prefer this sauce. You can truly enjoy the flavor of the horse meat and it pairs very well. I highly recommend the "Sakura Negitoro Rice"!! You have to try it!! It's addictive!! It may be a bit pricey, but it never disappoints. I will definitely go back when I have the chance (lol).
