[First Visit on April 12, 2023] From the south exit of Tokyo Metro Nishi-Nippori Station, head towards Nippori on Ogubashi Street. After crossing the Keisei Main Line, take the first left turn and you will find a shop on your left. It may not look like a ramen shop at first glance. On this day, I left work early to go to the hospital. After that, I stopped by this shop for dinner. I arrived around 6:00 pm on a weekday, with no other customers at first, but during my visit, a couple and a regular customer, a man, came in. The ramen menu only had three options, and it's rare to not have soy sauce. Among them, I decided to order the recommended "Salt Ramen," which was also the signature dish. By the way, the regular customer I mentioned earlier ordered the "Miso Ramen." The ramen arrived in about 5 minutes! Clear soup ramen! It reminded me of "Ajisai" in some way... When I took a sip of the soup, it confirmed my thoughts! I don't dislike salt ramen, but there are very few places where I genuinely think it's delicious... and this place fell into that narrow category! The flavor was as expected, with a chicken base. I felt some thickness, so maybe pork? Seafood dried goods? I was curious, so I asked the staff, and they said they only use chicken and pork. Despite that, the soup was clean because they extract it slowly over time! The noodles were closer to Hokkaido style. They were slightly yellowish, straight, medium-thick noodles with a firm texture, reminiscent of "Nishiyama Seimen." The finish that goes well with miso ramen was also delicious! The chashu that crumbled when picked up with chopsticks was to my liking in terms of taste. The thinly sliced chashu, cooked thoroughly, had a irresistibly delicious sweetness from the fat. The menma was a small, slightly sweet type. And the addition of wheat gluten made it somewhat reminiscent of Hokkaido ramen! Lastly, I left some soup behind... no, I intentionally left some. The saltiness wasn't too strong, just to my liking... so I made the forbidden additional order of "rice"! The menu mentioned that they use "Akita Komachi" rice, but what I wanted to emphasize was the cooking level! The slightly firm finish was just right for me! After taking a few bites, I dropped it into the soup! This is when the superb cooking level shines through! The combination with the sweet pickled daikon served together was also very good... I finished the meal with complete satisfaction! The staff's service was also excellent, making the visit very uplifting. It may be a bit inconspicuous, but I hope they continue to do well. Next time, I'll come back to try the "Miso Ramen." Thank you for the meal.
