After work, I went for some ramen recently. I've been into lighter flavors lately and have been trying out different ramen stalls. However, feeling a bit tired of that, I decided to try something new. I heard good things about the salt ramen here, so I ordered the salt ramen for 950 yen. It was a mellow salt ramen, surprisingly with a hint of sweetness. I savored it slowly and finished every last drop of the soup. It had a really nice flavor that lingered in my mouth. It's not often you come across ramen places like this. Thank you for the meal.

I visited a ramen restaurant called "Yonsanei no Mise" around 6 pm on a certain day in May 2023. It is a sister store of the Sapporo Susukino "Isotsu" located about a 2-minute walk from Nishi-Nippori Station. The interior of the restaurant is not very spacious, with only one other customer present. I sat at the counter alone and ordered the "Miso Ramen" for ¥1,000. Although the restaurant seems to recommend the salt ramen, I decided to try the miso ramen instead. After waiting for about 7-8 minutes, the dish was served. The miso ramen came with chashu, bean sprouts, green onions, spinach, menma, seaweed, and wheat gluten on top. I first tasted the soup and noodles. The soup didn't have a very strong miso flavor, and the noodles had a good chewy texture. It seemed like they used aged noodles, which gave it a unique taste. The balance of ingredients was neither outstanding nor disappointing. The ramen overall was light and not oily. It was interesting to eat the wheat gluten soaked in miso soup. By adding grated garlic from the table, you could enhance the richness of the soup. I thought it might have been nice to have rice with the large seaweed. After finishing the somewhat refined miso ramen, I felt satisfied. Although the ramen had its own unique touch, I felt that the price of ¥1,000 for a bowl of miso ramen was slightly high. I think it might be better to try the salt ramen at this restaurant next time.

[First Visit on April 12, 2023] From the south exit of Tokyo Metro Nishi-Nippori Station, head towards Nippori on Ogubashi Street. After crossing the Keisei Main Line, take the first left turn and you will find a shop on your left. It may not look like a ramen shop at first glance. On this day, I left work early to go to the hospital. After that, I stopped by this shop for dinner. I arrived around 6:00 pm on a weekday, with no other customers at first, but during my visit, a couple and a regular customer, a man, came in. The ramen menu only had three options, and it's rare to not have soy sauce. Among them, I decided to order the recommended "Salt Ramen," which was also the signature dish. By the way, the regular customer I mentioned earlier ordered the "Miso Ramen." The ramen arrived in about 5 minutes! Clear soup ramen! It reminded me of "Ajisai" in some way... When I took a sip of the soup, it confirmed my thoughts! I don't dislike salt ramen, but there are very few places where I genuinely think it's delicious... and this place fell into that narrow category! The flavor was as expected, with a chicken base. I felt some thickness, so maybe pork? Seafood dried goods? I was curious, so I asked the staff, and they said they only use chicken and pork. Despite that, the soup was clean because they extract it slowly over time! The noodles were closer to Hokkaido style. They were slightly yellowish, straight, medium-thick noodles with a firm texture, reminiscent of "Nishiyama Seimen." The finish that goes well with miso ramen was also delicious! The chashu that crumbled when picked up with chopsticks was to my liking in terms of taste. The thinly sliced chashu, cooked thoroughly, had a irresistibly delicious sweetness from the fat. The menma was a small, slightly sweet type. And the addition of wheat gluten made it somewhat reminiscent of Hokkaido ramen! Lastly, I left some soup behind... no, I intentionally left some. The saltiness wasn't too strong, just to my liking... so I made the forbidden additional order of "rice"! The menu mentioned that they use "Akita Komachi" rice, but what I wanted to emphasize was the cooking level! The slightly firm finish was just right for me! After taking a few bites, I dropped it into the soup! This is when the superb cooking level shines through! The combination with the sweet pickled daikon served together was also very good... I finished the meal with complete satisfaction! The staff's service was also excellent, making the visit very uplifting. It may be a bit inconspicuous, but I hope they continue to do well. Next time, I'll come back to try the "Miso Ramen." Thank you for the meal.

I went to a ramen shop called In Sun Ei in Nishi-Nippori and ordered the salt ramen and shumai. It's located near Matsuchan, with a better location and a sign that clearly indicates it's a ramen shop. I don't know much about places outside of Tokyo, but I heard it's a sister shop to a place in Susukino, Sapporo. I ordered the salt ramen because it was recommended. When I went to the toilet and looked at the menu again, I saw they had shumai on the back side, so I added an order of shumai. The salt ramen was served first. The soup was smooth with just the right amount of saltiness, very good. It had a clear broth with a nice amount of oil and umami flavor. The noodles were chewy with a high water content, a good balance with the soup. The toppings included pork shoulder chashu, bamboo shoots, spinach, green onions, seaweed, and wheat gluten. The pork shoulder chashu was delicious. The texture of the bamboo shoots was also good. But the wheat gluten soaked up the soup well and was really tasty. The shumai was also delicious, I tried it with the chili sauce but it was good on its own too. I wanted more than just two pieces. I really wanted to eat more, but I held back. The hospitality was great, and I was very satisfied. I might have some work nearby for a while, so I think I'll come back again. Next time, I'll try a different menu item.

The interior lighting of the shop became brighter. I ordered the same shio ramen as last time (with green onions and bamboo shoots). First, I tried the soup, and without the distraction of chashu or nori, the pure shio flavor tasted delicious. I quickly finished the ramen without hesitation. I prefer the plain shio ramen.

On Thursday, I visited a new restaurant in Sapporo Susukino that I've been curious about, called "Isotsu." It is the sister store of "Ramen Yunsongyong's Shop." Spicy Miso Ramen for 1,000 yen. Located a 3-minute walk from Nishi-Nippori Station on the Shitamachi Line, arriving at 1:56 pm. Upon entering the restaurant, I was seated at a shared table, second from the back, with 4 seats. The restaurant was almost full, with only 2 customers waiting. The staff consisted of the owner, a female cook, and a female server, with 3 people working in total. The menu offered three types of ramen: salt ramen, miso ramen, and spicy miso ramen. Although salt ramen seemed to be the specialty, I decided to try the spicy miso ramen as it caught my interest. I placed my order verbally, paid at the end, and received my bowl in about 10 minutes. The bowl contained plenty of sliced green onions, seasoned bamboo shoots, large chunks of char siu, crunchy bean sprouts, and a sheet of seaweed. The soup was a blend of pork, chicken broth, and dried ingredients, with a miso base made from 14 different blends. The spiciness came from adding gochujang and sun-dried chili peppers, creating an original spicy miso flavor. The miso was fried in lard, and the fragrant oil was also made from lard. The noodles were yellow in color, made from high-quality ingredients directly sourced from a factory in Hokkaido. They were cooked al dente and had a smooth texture that paired well with the flavorful soup. The only downside was the char siu, which had a strong pork smell that was a bit off-putting. Overall, the unique blend of miso flavors, delicious soup, and perfect level of spiciness made it a great choice for the cold season. The restaurant also uses mineral water for drinking and cooking, without any artificial additives. It would be nice to see more toppings like seasoned eggs, extra char siu, or spicy green onions in the future. Since salt ramen is their signature dish, I look forward to trying it next time. ■Yonsanei Ramen Shop Last December, I had dinner at Yonsanei Ramen Shop, which opened in Nishi-Nippori. This shop offers salt ramen supervised by Isotsu, a popular chef from Susukino in Sapporo. Although it's a bit far from the station, customers keep coming in one after another. I ordered the salt ramen with Akita Komachi rice, and also tried the new menu item, special shumai. ■Salt Ramen The soup is clear with medium-thick noodles. It has a light flavor as it appears. It has a soothing effect on the stomach after drinking alcohol. The chashu has a solid texture. ■Special Shumai The shumai costs 350 yen for 2 pieces. They are quite large and full of juicy meat. They have a soft texture and are very satisfying to eat. Ordering the shumai before the classic dumplings must mean that there is definitely some kind of special touch to them.

Arrived at 1:30 pm on Saturday with no waiting customers, so I was able to enter the restaurant. There are 8 tables and 3 counter seats. The owner and 3 staff members were working. I had the salt ramen for 850 yen. The chashu ramen had seaweed, green onions, spinach, and gluten. The noodles were thin and the soup was delicious! It is said to be a sister shop of a famous restaurant in Sapporo. Thank you for the meal!

I knew that this place had been open for a while, but I had always assumed that the ramen wouldn't be that delicious. By chance, I couldn't get into the two places I originally wanted to go to, so I ended up here. The exterior of the restaurant didn't give off a vibe of deliciousness to me. Today, I entered with low expectations. The interior was quite spacious, maybe a former establishment? Even dining alone didn't feel cramped, and the tables attached to the walls allowed for a relaxed eating experience. When I went, it was about 90% full, so it's already a popular spot! I was curious about the miso ramen, but I decided to go with the salt ramen, which seems to be their specialty. I wish they had options for larger portions or lunch sets with a mini chashu bowl! It took about 5 minutes for the ramen to arrive. I usually don't choose salt ramen, but I've had a lot of good experiences with salt ramen recently, so I decided to give it a try. First, the soup... it was amazing! Not too strong, not too weak... a truly flavorful broth that seeps into your body. I cook myself, but I can't recreate this. The soup goes down smoothly and each sip is just so delicious! The spinach, seaweed, thinly sliced menma, and medium-thin curly noodles were all good, but the soup was the star! It's hard to describe, but it's like a high-end Chinese dish's soup rather than a typical ramen soup. I can't explain it, but there's no guilt even if you drink it all! I've found a great restaurant! Also, the chashu was large and although not very thick, it was very tender with a lingering meaty flavor. I really hope they stop the trend of rare chashu in recent years... it's good on its own, but it doesn't always go well with ramen. Anyway, this salt ramen was really delicious! However, even popular and tasty ramen shops should consider offering lunch set menus or some kind of service to attract customers. Please consider it! By the way, at the time of payment, the staff asked if I had a card for the restaurant. No, I don't... (Maybe a loyalty card?) It turned out to be a referral card for the restaurant... well, that's not very useful...

I finally got to visit the new sister store of Isotu in Sapporo. Without hesitation, I chose the Shio Ramen and eagerly waited for it to be served. The clear soup was delicious and not too salty. The noodles were good, but I wish the flavor was a bit stronger. Next time, I'll ask for just fried tofu and green onions.

Salt Ramen 850 yen Today, I decided to try a local noodle shop, "Ramen Yun Sun Young (Yun Song Yong)" located nearby. It seems to be a sister shop of the famous Susukino shop in Sapporo, "Isotsu." Yun Corporation is the official distributor of original additive-free products from "Plus Care Company." And this ramen is supervised by Plus Care Company, provided at Yun Sun Young's shop. Well, as a general consumer, the background doesn't matter much. I arrived at the shop right after the opening on a weekday. It's a bit hard to find, so I thought it would be empty... but there were already 7 customers, so it was quite busy! However, there were still seats available, and I was guided to the front seat. The seating consists of two 4-person table seats in the back and 4 counter seats facing the long table in the front. You order orally here and pay at the entrance-side register after eating. I ordered the "Salt Ramen" without hesitation, which is the featured menu. Then, I waited for a while... The female staff turned on the stove, saying "It must be cold for you," and brought a chair to put my belongings, showing great hospitality. As mentioned in other reviews, this customer service attitude is great! The ramen was served quickly in about 4 minutes. Now, let's dig in! [Soup] The clear taste matches the appearance. As I approached to peek inside from the storefront, the kind lady noticed and welcomed me in (^_^) I settled into the seat she guided me to, and she kindly recommended, "The salt ramen is recommended~" Yes, I'm here for the salt ramen~ After placing my order verbally, it didn't take long for it to arrive. Its sleek appearance is nice~ It has a refreshing atmosphere but the flavor is strong. There's a powerful taste of dried ingredients in the soup. The noodles have a unique texture~ Firm chewiness and a slight springiness. I think the noodles are delicious ( ̄ー ̄)bグッ! The toppings are chashu, menma, greens, nori, fu, and garnish of green onions. It's simple but the balance is not bad (^^) It seems that there are no options for extra toppings at the moment. Personally, the fu soaked in the soup was the hero ^_^ Finished eating and drinking!! "Did it suit your taste?" the lady asked. I had an MRI scan in Nippori in the morning, and then went to eat some garlic fried rice at a place called "Ninniku Gorogoro." Unfortunately, the rice was too soft and there were hardly any garlic chunks as expected, just a few crispy chips. It was a disappointment, so I decided to come here for a second meal. I was originally planning to try the salt ramen, but since I was in a "garlic mode," I opted for the miso ramen with plenty of grated garlic. The soup was light and not too sweet, which I liked. I want to try the salt ramen next time.

Kuijirashi in Nishi-Nippori! [Visit: 2/2/2023] Today, I had a night ramen in Nishi-Nippori. The location is surrounded by JR, Tokyo Metro, Keisei, and Toden Arakawa Line. It is located near Shokakuji and opened in December last year. It is said to be a sister shop of a very famous Sapporo shop. I've been curious about it since the end of last year, so I decided to check it out. The specialty is salt ramen. So, I ordered the salt ramen (¥850). It took a little while to arrive. The soup is clear, transparent salt broth. The surface is covered with oil and very hot, so be careful not to burn yourself!
