Upon arrival at the restaurant, there was one person waiting outside. When I joined the line, three seats became available, so I was able to enter quickly. By the time I left, there were about 10 people waiting outside. The restaurant had a counter with 8 seats, and the spacing between seats was quite comfortable.
The Chicken Paitan Shoyu Ramen seemed to be the most popular dish. The noodles were flat, medium-thin, and straight. The creamy white soup coated the noodles well, giving them a chewy texture and delicious flavor. The soup had a rich chicken paitan flavor with a strong soy sauce presence. It was not too thick and had a smooth texture, making it incredibly tasty.
The Shoyu Chuka Soba had the same noodles as the previous dish. The soup had a generous amount of chicken oil, enhancing the chicken flavor and combining well with the rich soy sauce flavor and acidity. It was extremely delicious, reminiscent of traditional Chuka Soba that made me appreciate its taste.
Both the white and clear soup were equally delicious, and I was pleasantly surprised by the exceptional taste of this restaurant. Reflecting on the past, I realized that the area around Josenjo may not have many top-ranked or famous restaurants, but there are hidden gems that could easily compete with the top 5000 or similar establishments. It was a delightful experience at a restaurant that skillfully balanced contrasting styles of white and clear soup.
The couple sitting nearby mentioned that they were heading to a popular ramen shop for tsukemen (ranked in the top 5000) after this meal. The service at the restaurant was attentive and courteous, with a staff of two managing the kitchen and the dining area. Overall, it was a satisfying and enjoyable dining experience at this surprisingly delicious restaurant.

Today's lunch was at Ramenya Akagi with my husband. We've been wanting to try this ramen shop for a while but there's always a long line. Today, we arrived before the shop opened and were the first ones in. We ordered the chicken white broth salt ramen, extra noodles, and a chashu rice bowl. The creamy and rich chicken soup was delicious, and the noodles were perfectly cooked. The chashu pork and roast pork in the ramen were both tender and tasty. My husband's chashu rice bowl was also amazing, with seared chicken slices and flavorful meat. This shop is definitely worth a repeat visit, as it quickly filled up with customers after we arrived. I highly recommend trying their ramen if you're in the area. The chicken white broth salt ramen was 900 yen and the chashu rice bowl was 300 yen.

This is a famous shop of Espuma located in Jo-niigata. Although I was also interested in the clear broth, it had been a while since I last visited, so I ended up ordering the Paitan ramen after all. I had been curious about this place as it had been highly praised by food bloggers. The interior had a 7-seat counter with no partitions between seats and a decent amount of space between them. There were mostly female customers and couples. The attentive service left a great impression. I ordered the "Special Chicken Shoyu Ramen for 1150 yen". It took about 13 minutes for the dish to arrive. The presentation was visually appealing. The soy sauce flavor of the broth was rich, followed by the umami and sweetness of the chicken. The foam added a creamy texture and enhanced the smooth mouthfeel. The medium-thin straight noodles were cooked to the right firmness, with a satisfying chewiness. The toppings included pork shoulder, chicken breast, flavored egg, purple onions, and green onions. The rare pork shoulder was moist with a nice touch of black pepper. However, the fatty richness of the pork shoulder made it a bit heavy towards the end. The thick chicken breast seemed to be seasoned with herbs, giving it a slightly Western flavor. Although the texture was good, the seasoning didn't quite appeal to me. I wonder how many times I've been here already. I'm addicted. I rotate between chicken white broth soy sauce, Chinese soba soy sauce, and Chinese soba salt. And today, I finally went to try the limited edition cold ramen. I've been busy lately and couldn't make it here, even though I tried a few times, the line was always long. But finally, the cold ramen! It had a rich sea bream broth. I enjoyed every last drop of the soup. Personally, I wanted to get an extra serving, but this ramen doesn't allow extra servings, so I wanted to go for a second bowl, but the last order time had passed. What a shame. The combination with lemon was great, and for the finishing touch, the rice came with chopped seaweed and wasabi on top, which you can pour the leftover soup over for a delicious ochazuke. I regret not leaving the sea bream slice that came with the ramen. The flavor was the best I've had in cold ramen so far. The noodles paired well with the broth, and I could sense a slight smoky flavor, probably from searing the sea bream before making the broth. The chicken chashu also had an excellent match. I could easily have eaten two bowls. I'm not a fan of shiso leaves, so I had them removed, but I believe it would have enhanced the dish by reducing the fishy smell. It seems like there should be shiso-flavored oil drizzled on top. The staff here are always so kind and accommodating, even adjusting the dish to suit my preferences. On a rainy Saturday night at 9pm, the popular ramen shop in Kami-Shinjo was empty inside, so I thought I would have a chance, but there were 7 people waiting outside. It really is all about timing, isn't it? After waiting in line for a while, I was told to purchase a meal ticket, so I ordered the special chicken white broth ramen from the ticket machine. I handed the purchased ticket to the staff and waited outside again. After about 20 minutes, I was able to enter the shop. It only took about 7 minutes from entering to being served the ramen. The creamy color of the broth was beautiful. A beautiful bowl really tickles a woman's heart, doesn't it? The appearance is also part of the taste. I took a sip of the soup right away. Ah... delicious!! The soup was rich and creamy without feeling too thick. The deep flavor showed the careful work that was put into making it. The rare chashu was cooked just right in the bowl and had a good balance of flavor.
