Ordered a set of Mizutaki (chicken hot pot), tebasaki (chicken wings), ojiya (rice porridge), and cold sake. The Mizutaki started with bite-sized pieces of meat simmering in the pot. The collagen-rich meat paired perfectly with the vinegar soy sauce, making it easy to eat with chopsticks. As more ingredients like tsukune (chicken meatballs) and chicken thighs were added, the broth became richer and more flavorful. The broth seasoned only with salt and green onion was intense in chicken umami. The quality of the dish made it worth waiting for the meat. For the finale, we ordered ojiya, which was rice soaked in the chicken umami and topped with a raw egg. It was absolutely delicious. Not only the food but also the service and atmosphere were exceptional. The spacious tatami room and attentive service created the perfect environment to relax and enjoy the meal. The value for money was outstanding, something that is hard to find in Tokyo. I confidently recommend this place to my friends.

People from Hakata often enjoy having "Mizutaki" at home, and during winter, they may have it up to three times a week. Although "Mizutaki" is a simple dish, it's exciting to try the course that is ranked in the top 5000. I had a reservation for 19:30, but my plans finished earlier, so I called and they kindly agreed to change it to 18:00. When I arrived, the restaurant was very bright and clean, which was pleasing to see. The staff, including the waitress, were very beautiful and kind. The Hakata Mizutaki set for two arrived with additional porridge. The pot came with chicken pieces already inside, and the waitress explained the dish thoroughly. Before eating the ingredients, we were served Mozuku vinegar to start with. The soup, made with plenty of fresh chicken bones, was clear and rich in flavor. It was recommended to taste the soup first, and it was incredibly delicious. As the meal progressed, the soup became darker and more flavorful. The finished golden soup was full of depth and richness, the essence of Mizutaki. At Kagyuya, they change between porridge and udon noodles based on the day's mood, and I have been in charge of this for over 30 years. Mizutaki has been a part of my life since childhood, and I believe it's all for the porridge. Today, I left the choice of porridge to the waitress, and it was a delightful experience. The second serving of porridge was best enjoyed as it was, without any additional seasonings. The meal was incredibly delicious, and I look forward to visiting again in the future.

Every cut of meat served in the course is carefully prepared and has a wonderful flavor and texture, but what surprised me the most was the thigh meat. It had a strong aroma and flavor, rich in umami, and was so delicious that it felt like a waste to swallow it. If you make sure to enjoy every last bit, including the rice porridge at the end, you will be incredibly full, so I recommend visiting on an empty stomach.

Traveling to Fukuoka with friends. I had never tried Mizutaki before, so I looked up a delicious place and made a reservation. It's located between Hakata and Tenjin, not on a main street, but it has a sophisticated atmosphere. We reserved a course. From the beginning soup to the appetizers, fried dishes, and finally the porridge, everything was incredibly delicious. I thought the portion would be large, so I went easy on the alcohol, but I was still full. The best part was the special orange ponzu sauce. They also sold it on the spot, and my friend bought some to take home right away. It's a seasoning that will definitely improve your quality of life.

I had hot pot for the first time dining out. I was able to taste the direct flavors of the ingredients, and it was very delicious. The taste of the soup changed with each ingredient added, and I drank many cups of it. The fried chicken was also piping hot and very tasty.

I made a course reservation through Tabelog and visited the restaurant. It's a bit difficult to get to as it's a little far from the airport line station. The interior is too clean and new, so those looking for a more traditional atmosphere should be aware (but it's good for families with children). Despite that, all the courses were delicious. The chicken with yuzu pepper was amazing. The soup gradually became richer in flavor, and the noodles for the finish (you can choose either porridge or regular noodles) were also very tasty. Maybe because we had a late lunch, the portions were quite generous.

There are many water hot pot restaurants in Hakata, and Hamadaya is one of the well-known shops with several locations in the city. This time, we visited their shop in Yataimachi. Despite being close to Kushida-machi, Gion, and Nakasu-Kawabata, the atmosphere here is a bit quieter. The restaurant has table seating on the first floor, tatami seating on the second floor, and table seating on the third floor. We ordered the water hot pot course for 4,400 yen. We started with appetizers and a three-item platter, then the hot pot began. The soup was initially light, but as more chicken meat was added, it became richer. We also enjoyed fried chicken wings and thighs in between. The course allowed us to savor both the chicken and the hot pot. For the finale, we chose the porridge, which was delicious with a strong chicken broth. Hakata is definitely the place to enjoy water hot pot!

"My friend came to visit" On June 17, 2023, I became friends with a close friend during my time as a salaryman in Tokyo. After 3 years, I left my job and transferred to a medical school for my bachelor's degree. He also left his job and became a pharmacist. It's a story from over 20 years ago. Probably more than 5 years since we last met, but it's amazing how friends remain unchanged and wonderful. He mentioned wanting to eat Mizutaki during the conference, so we visited Hamadaya in Tenjin. Mizutaki is not something you often eat in Fukuoka, right? The staff there explained and served the dish perfectly, making us feel safe and at ease. The chicken dishes were delicious and paired well with white wine. During my stay in Fukuoka, I visited this restaurant with a friend and their spouse. I had been here once 5-6 years ago, and the atmosphere from the entrance is nice. We were seated at a table on the second floor. We had a full course of Mizutaki (chicken hot pot), a protein-rich dinner that left me very satisfied! As we simmered the ingredients, tasting the soup each time, the depth of flavor kept increasing, which was enjoyable. I would like to visit this restaurant again. After eating, we took a leisurely stroll around the food stalls in Nakasu. The photo is from that time.

First visit during my Fukuoka trip. I couldn't decide between motsunabe and sukiyaki, but ended up choosing this place. The sukiyaki was not too rich nor too light, and was very delicious. I had to resist ordering more because I wanted to try other restaurants today, but I definitely want to come back again. I bought the delicious orange vinegar soy sauce on my way out. I went to Hamadaya in Hakata-ku, Fukuoka City. When it comes to hot pot in Fukuoka, it's all about Mizutaki (chicken hot pot) and motsunabe (offal hot pot). I started with the Mizutaki course (4400 yen). It's great that you can enjoy it even if you're dining alone. The course included appetizers, three kinds of sashimi (new potatoes, sea bream, red clam), Mizutaki (chicken, vegetables), fried chicken, pork loin shabu-shabu, and rice porridge to finish. The Mizutaki started with chicken pieces in the pot, and the skilled staff took care of the cooking. The broth started with just slightly colored water, but as the mountain yam and vegetables cooked, the flavor changed and improved. I wish I had tried the chicken pieces when the broth was at its best. Personally, the Mizutaki was okay, and the fried chicken was just average.

We originally booked a mid-range course but upgraded to a higher one for a better experience. The Mizutaki is the same in both basic and premium courses, with additional dishes in the higher course. The mid-range course is recommended for those who want the best value. We started with draft beer and then moved on to finishing a bottle of shochu. The hot pot came with chicken broth for each person, which we lit up and enjoyed. The chicken pieces were delicious with a nice texture, and the appetizers were also tasty. The premium course included duck breast, homemade mentaiko (spicy cod roe), marinated sea bream, and horse sashimi. The freshly fried chicken was exceptional. We were already full by this point, but the chicken cartilage meatballs with pork and lots of chopped green onions were a highlight. We ended the meal feeling satisfied and slightly overindulged. I was led to a clean and tidy tatami room on the second floor, with a semi-private corner seat. We started with the soup for the Mizutaki, enjoying various parts of chicken in the broth. We also had Negi Buta Shabu Shabu, vegetables, champon noodles, and zosui. The staff kindly explained each dish, making us feel well taken care of. Soft drinks were reasonably priced at 300 yen. The total bill for two adults and two children was 10,000 yen. This restaurant offers great value for money, and I would love to come back if I can reserve a corner seat in the back of the second floor. They provide children's chairs and cutlery, which made the kids happy. It seems to be popular among inbound foreign tourists, so it may get crowded. I recommend going early.

The "Miseya-machi course" that I reserved included special chicken meatballs, chicken hot pot with diced chicken, fried chicken thighs and wings, horse sashimi, negi-wrapped pork shabu-shabu, and more. It was a fantastic experience. The soup made with meat juices and vegetables was amazing, and the finale of rice porridge was also very tasty.

Business trip to Kyushu. At the same time, a college classmate from Tokyo also came and we reserved a table at this restaurant to reminisce about old times. I arrived right on time for our reservation, but my classmate didn't show up. The next customer had a reservation as well, so I only had 2 hours. Hurry up! I had some beer and appetizers while waiting for my classmate, but after 30 minutes, I couldn't wait any longer. I started the hot pot by myself! As I cooked the ingredients, my friend finally arrived! Oh well, I enjoyed it by myself, but it was still nice to catch up over delicious hot pot. The restaurant was popular for a reason, the light and elegant hot pot was amazing. There are so many delicious foods in Fukuoka, but hot pot is still my favorite.
