This was my 6th visit, the 8th New Year's chicken pilgrimage (lol). It's a favorite yakitori restaurant in Nishinakasu that I don't really want to tell people about 😉 On this day, after asking the chef repeatedly since last year... I finally got to enjoy the full course of the legendary chicken "Kagoshima Shappon chicken"! What is Shappon? I'll explain at the end. *If you're lucky, you can find Shappon on the regular menu. *Regular customers can request it. I went with a gourmet friend I met on Instagram and another friend who is a foodie. It's a small restaurant with 8 counter seats and 1 table seat (for 4 people). The grill is at the center of the counter, so you can see the grilling process up close. The chef, Mr. Tominaga, grills the food perfectly and it's delicious ✨ The staff are all very friendly and it's one of my favorite places (*'▽'*). Here's what we had: - Sesame tofu *Delicious! - Golden chicken soup *Soothingly delicious! - Shappon chicken breast *Amazingly delicious (lol)! - Tanba black chicken sashimi with kombu *Perfect with lemon! - Kagoshima pure domestic chicken shoulder meat *Juicy and delicious! - Shappon chicken breast meat rolled with seaweed and plum *Unbelievably pink, but perfectly grilled and incredibly delicious! - Shappon chicken gizzard *Crisp and chewy, meaty and crunchy, delicious! - Satsuma red chicken simmered in soy sauce *Tender and flavorful, with the richness and sweetness of Kyushu soy sauce, incredibly delicious! - Shappon chicken *With kumquat and karasumi (bottarga) and hojiso, full of umami and delicious! - Shappon chicken thigh meat *Chewy and juicy, bursting with umami when you bite into it, like a beef harami steak, amazingly delicious! - Kumamoto shiitake mushrooms *Perfectly grilled and delicious! - Chicken tail *Crispy skin, perfectly grilled, tender and bouncy, meaty and delicious! - Red eggplant *Aged for 16 years in Pecorino Romano (sheep's milk), delicious! - Shappon chicken skin *Crispy skin with a lot of umami inside, incredibly delicious! - Zucchini *Perfectly grilled and delicious! - Shappon chicken liver *Large, perfectly grilled, rare and rich in flavor, incredibly delicious! - Satsuma red chicken heart meat grilled with green onions *Elastic and luxurious, delicious! - Satsuma red chicken wing tips grilled with green onions *Crispy skin, with a green onion flavor, rare and delicious, changing the concept of chicken wing tips, delicious! - Satsuma red chicken tenderloin *Elastic and delicious! - Pickled vegetables plate (cabbage, cucumber, sprouted ginger, turnip, eggplant, rapeseed blossoms, snap peas, koshindai konnyaku) - Tsukune (chicken meatballs) *Rare, with a crunchy cartilage texture, delicious! - Salted breast meat with yuzu, chili miso, and wasabi sweet vinegar pickles - Chicken rice in a clay pot *A bowl of tea, a bowl of chicken broth tea, and the rest as takeaway rice balls, incredibly delicious! - Homemade egg pudding - Kagoshima Chiran tea - Sake lees and sake tiramisu-style *A mix of Western and Japanese sweetness and umami, with black sesame as a nice accent, incredibly delicious! The bill was divided among 3 people and came to 10,900 yen. Shappon chicken is a premium chicken known to connoisseurs. Shappon chicken, known as the highest quality chicken in France, is raised for 7-8 months until it is shipped, unlike regular chickens, with the most concentrated meat umami. Raised only on organic feed, the soil is thoroughly cleansed of residual pesticides. The pursuit of the "taste" of chicken meat and the "safety" of food to the fullest extent is what defines "Kagoshima Shappon chicken".
