The ramen has a foamy tonkotsu cappuccino-like richness on the surface. It is open until 4 am, so it is popular among the people in Nakasu. The rich flavor is evident just by looking at it. Personally, I love it, but for those who are not fans of tonkotsu, the smell might be too strong. The soup was delicious, of course, but the noodles, unlike those in Tokyo, have a unique chewy texture that is enjoyable. In Tokyo, Kyushu ramen is usually eaten firm, so I ordered mine firm as well. I realized that Tokyo's firm noodles are just hard, but here they have a nice chewy texture that makes the noodles tasty. Crushed garlic, ground sesame, pickled vegetables, and other essential toppings for Hakata ramen are available on the table, allowing you to customize the taste to your liking. The restaurant is not very spacious, and when I went around midnight, there was a bit of a line. However, the service is quick, so the turnover is fast, and we were seated quickly. The ramen is very delicious, but the space is a bit tight for a group. For a date with a tonkotsu ramen-loving partner, it is recommended if you don't mind the smell sticking to you.
