In February 2023, I arrived in Hakata and had dinner at "Restaurant SNOW". On my way back to the hotel, I suddenly craved for a bowl of tonkotsu ramen, so I quickly researched on the Tabelog app. I found "Menchan Ramen" near the hotel! The strong tonkotsu flavor filled the restaurant. I had high expectations. There were mostly male customers who seemed to be returning from work. Although the counter and table seats were all full, I was able to sit at one of the two empty counter seats without waiting. I ordered the ramen and it arrived in a few minutes. Let's dig in. The noodles were thin, which I love about Hakata-style ramen. They were just the right firmness, delicious even though I didn't specify the hardness. The soup had a strong tonkotsu smell, perfect for sipping. The toppings included chashu, wood ear mushrooms, and green onions. The chashu was also delicious. The owner suggested mixing in some spicy pickled mustard greens, which added a nice flavor change. I was quite full, but the soup was so tasty that I ended up finishing it all. Despite thinking it's not good to eat late at night, I was taken to the Tenjin area and decided to visit this place. Among various options, I ordered the Negi Ramen and Gyoza. The Gyoza had a simple yet flavorful soup, and most importantly, there were so many green onions that you couldn't even see the noodles! With this much green onions, I couldn't resist getting an extra serving of noodles! The restaurant is small, but it's bustling with customers, which adds to the atmosphere!

Today, I visited "Menchan Ramen". The interior of the restaurant is not very spacious, but the owner is very friendly and of course, the tonkotsu ramen is very delicious. I had been curious about Menchan Ramen for a while. Since they open at 7:00 PM, I hadn't been able to visit until today. It was my first visit, and it was after 8:00 PM, with only me as the customer. I noticed their operating hours are from 7:00 PM to 4:00 AM. I imagined they must get a lot of customers late at night. Looking around the restaurant, I saw many photos and signatures, giving a sense of the long history of this ramen shop in Nakasu. The bowl filled with pickled ginger caught my eye - I love this. I ordered the firm noodles ramen for 700 yen. After a while, it was served. The ramen had green onions, chashu pork, wood ear mushrooms, and sesame sprinkled on top. The floating oil looked delicious too. I took a sip of the soup. It was a light broth, but you could feel the history of the traditional Hakata tonkotsu soup. Delicious. I slurped the noodles. Huh? They weren't firm. They were just regular firmness. A bit disappointing, but I redeemed it with an extra firmness noodle refill for 150 yen. Then, four more customers came in. They ordered beer, gyoza, and roasted pork before their ramen arrived. I envied their way of enjoying Nakasu. I drove home, feeling satisfied. Thank you for the meal. The ramen was delicious.

This is a late-night tonkotsu ramen shop located by the river in Nakasu. It offers delicious Hakata-style ramen that is always crowded on weekends. Today, I drank too much until late at night... so I decided to hit up a ramen shop for a late-night meal! I had been to this shop about 3 and a half years ago, so it's been quite a while! It's been over 3 years since I last did some bar hopping too... it's good to do it once in a while, haha. The shop has a counter and table seating, with a capacity of about 15 seats. Even though it's 3 o'clock, there are still a few customers here and there! They seem lively, haha. I looked at the menu and decided to try something I hadn't had before! I ordered the miso ramen (950 yen). After about a 5-minute wait, the ramen arrived at my table! The soup, which is a mix of pork bone broth and miso, had a slightly brown color due to the miso. When I tasted it, I could first taste the pork bone base, followed by the aroma of miso... Personally, I wish there was a bit more mellow miso flavor. The noodles were the same ultra-thin straight type as the regular tonkotsu ramen, with a firm texture that paired well with the soup! The toppings included chashu pork, wood ear mushrooms, bean sprouts, and seaweed. There was also plenty of green onions sprinkled on top, adding a crunchy texture to the vegetables! Despite it being a late-night meal at 3 am, I managed to finish it all and felt satisfied! I'll make sure to live healthily starting from tomorrow... Thanks for the meal!

While walking back from Nakasu to Hakata Station, I searched for Hakata Ramen and found a place right in front of me while waiting at a traffic light! There were counter seats and about two table seats, and when I entered, I was greeted with a cheerful "Irasshaimase!" It felt refreshing to wake up in the middle of the night! The ramen arrived quickly after ordering and it had a rich flavor. The tonkotsu (pork bone) broth was delicious. I added sesame and red pickled ginger, and there was also chili pepper as a condiment for a change in flavor. Be careful not to add too much chili pepper as it is spicy. The chef was very attentive and interacted with customers. I will definitely go back again! ✨

Late at night, I was taken to a famous local ramen shop by a local resident. The walls were covered with many autographs of famous people, although I'm not particularly interested in that. According to my companion, there was even a signature from a former foreign minister. As for the ramen, I wonder if there is such a thing as bad Hakata ramen? It was a light tonkotsu broth with plenty of green onions, and it was very delicious. Despite having already eaten at three other places and being quite full, I couldn't stop eating. It's a taste I want to enjoy every week. Even though I was taken there by the president of a business partner, we hardly spoke at all while slurping down the ramen. It was just too delicious.

After drinking in Nakasu, I went to Menchan Ramen for a final bowl of ramen. Since I have to work early tomorrow, I only had one bowl without alcohol and extra noodles, and quickly headed home. I ordered the ramen for 700 yen, of course with firm noodles. It arrived in about 5 minutes. Huh, the soup doesn't seem very kind. It's a pork bone broth, but it feels a bit sharp, lacking in roundness. When I have ramen in its birthplace, I always feel a sense of gentleness. Tokyo's pork bone broth has a strong flavor, but it's not heavy. It has a powerful aroma, but surprisingly light when you taste it. However, the ramen here lacks that lightness. The chashu also lacked flavor, it felt like just a piece of meat. It was very disappointing.

I found the ramen shop I was looking for in Hakata, at the end of my meal near Kushida Shrine. The owner of the shop, as well as the employees, seemed to be relatively older. The shop was filled with the smell of tonkotsu broth. The soup was relatively light and refreshing. I enjoyed adding red ginger and spicy pickled mustard greens for extra flavor. Tonkotsu ramen. After drinking heavily in Hakata, I was heading back to the hotel when I saw a ramen shop with a long line. My instincts told me I had to try it, so I went in. Normally, I would have a beer as a finisher, but looking back at the photos, I didn't drink any. Tonkotsu ramen is good for a finisher after drinking, it seems. I was searching for a ramen shop nearby and decided to enter one based on the photo, which looked like exactly what I was craving. I ordered a bowl of ramen, which was served without any extra toppings like green onions. The presentation was quite pleasing, with lots of wood ear mushrooms and slices of chashu buried underneath. When I took a sip of the soup, a strong pork bone aroma hit my nostrils, making me think, "This is it, this is the taste of pork bone broth!" The straight noodles were cooked perfectly and didn't dilute the flavor of the soup. However, the soup portion was surprisingly small, making it difficult to slurp the noodles properly. The bowl size was smaller than average, which may have been to save on soup costs. I wished they had at least added a bit more soup to the bowl. The initial punch of flavor in the soup faded as I ate, possibly due to the soup cooling down quickly. Adding an extra serving of noodles made the soup lose its initial impact. It seems like even at a popular ramen shop in Hakata, they are reducing the amount of soup in their bowls. Perhaps it's a cost-saving measure.

I came here right after the opening of a new subway station. I had the chashu ramen, which had a slightly transparent tonkotsu broth. The aroma is purely tonkotsu. The noodles may be slightly thicker than typical Hakata style. It was topped with plenty of green onions. Thank you for the meal.
