■ Overall Impression
I called ahead and found out that they were fully booked for lunch, but had availability for dinner, so I decided to go. Since they couldn't serve alcohol due to being in the middle of a mambo, I drove there. There are many trendy restaurants in this area. This restaurant was amazing. The order of the photos taken and the notes may be different, so the actual order of the dishes served may vary. The number of dishes was crazy. I've never taken 30 photos in one meal before, and there were nearly 20 just for the sushi part. The onslaught of dishes was incredible. If I had ordered alcohol, I would have definitely had a lot to drink.
■ Sweetfish Scales
The first dish was here. The aroma was fantastic, and the sweetness of the sweetfish was also excellent.
■ Horse Mackerel and Bonito
Next up was this dish. It's rare to have proper bonito, so I was happy. The horse mackerel was delicious, but the bonito was amazing.
■ Conger Eel
It's a bit blurry, which is a shame, but the plum was well-balanced. It's been a while since I had it, ever since I ate it in Kyoto. I'm happy.
■ Grilled Tuna Skewer
Skewers like this are complex. When sashimi is seared, it becomes tight and sweet. The balance with the green onions was also good.
■ Squid Salted Innards
This was definitely an appetizer for sake. I went with oolong tea. It was delicious, but I really wanted to drink some sake.
■ Sea Urchin Chawanmushi
The flavor of seaweed and the richness of sea urchin were exquisite. Just like at Isshin in Miyazaki, chawanmushi showcases the individuality of the sushi restaurant.
■ Cold Tofu
The freshness of this dish is delicious. I want to eat tofu dishes of this quality. They are available in places like Arashiyama in Kyoto, but not everywhere.
■ Wild Eel
Unexpectedly, there was eel. I didn't expect to have it at a sushi restaurant. It was tender and delicious.
■ Conger Eel Soup
Second time having conger eel. It was very refined.
■ Rockfish and White Shrimp
Next up was tempura. The number of dishes was crazy. It has its own flavor, so you can eat it as is. It was also tender.
■ Spear Squid
Finally, the sushi part. The spear squid was a greeting. The squid was sweet, and the texture was great. I'm not a fan of oversized sushi because I prefer to eat it in one bite to savor the taste.
■ Sweetfish with Kelp
Second sweetfish. The umami was incredible. At this point, I realized that this sushi restaurant doesn't need soy sauce or anything.
■ Pickled Ginger
This ginger is a must-have at a proper sushi restaurant. Where can I buy this? It's delicious.
■ Sweet Shrimp
Next was sweet shrimp sushi. I recently discovered that I might have a slight allergy to crustaceans. I remember feeling nauseous after eating a lot of shrimp and crab, but I was able to enjoy this dish.
■ Medium Fatty Tuna
I wasn't a big fan of tuna before, but proper tuna is really delicious. This phenomenon applies not only to tuna but also to sea urchin and salmon roe.
■ Mantis Shrimp
This was probably my first time having mantis shrimp. I remember being scared when I saw my relatives eating it after catching it with a brush in Kumamoto, as if they were eating an alien. Since then, I've been hesitant, but it was delicious. It's just a bit scary.
■ Shrimp Head
This is the safe option of shrimp. I couldn't eat shrimp heads when I was younger, but now I can.
■ Thread-sail Filefish
An unfamiliar fish. It seems to be a type of amberjack when I looked it up, but it offers a different kind of umami that continues.
■ Fish Head
A high-quality fish has arrived. Delicious.
■ Sea Urchin
This was the highlight of the day. Just like at Kikuzushi, it's all about the seaweed. It's completely different. The only downside is that the photo came out blurry.
■ Clams
Clams, which I haven't had in a long time, were delicious. The umami seeped out.
■ Vinegared Mackerel
I feel like it's been ages since I had vinegared mackerel, but it was delicious.
