After a light meal near one of the nine major hospitals, I felt the urge to eat ramen. I checked on Tabelog and found several appealing options, but since it was close to 9 p.m., I chose this place. The lanterns were lit, which was reassuring. The exterior had a nostalgic Showa era look, but upon researching, I found out that this shop was actually established in the past few years. I bought a ticket for the special wonton noodles after some hesitation. I wonder what makes it special. They had three types of extra noodles to choose from, and I selected the flat noodles. I also ordered spicy mustard greens. The inside of the shop had a nostalgic atmosphere as well. While the Hakata area usually has a pervasive tonkotsu smell, it wasn't as strong here. When the ramen was served, it looked ideal with a nice broth. Scooping up the soup with a spoon, it was light and delicious. The umami flavor was delightful, with a natural sweetness and saltiness supporting it. The aroma was outstanding, with a tonkotsu base but also hints of cheese or fermented foods, creating a unique taste. The noodles were like the ideal Hakata ramen - thin, low-water content noodles that were easy to chew but not too hard. They were amazing. I sprinkled some pepper and continued eating absentmindedly. The chashu wasn't bad either, serving its purpose as a nice break between bites. The wonton had a soft, chewy skin with a flavorful filling that had hints of garlic and soy sauce. The extra noodles were soft and had a longer cooking time than expected. They were moist and smooth, holding the soup well and tasting delicious. The smooth and firm noodles had a gentle elasticity, different from traditional Hakata noodles, adding to the overall appeal. I finished by adding crushed garlic and spicy mustard greens for some flavor variation. This place was innovatively delicious, offering various options like salt flavor. I would definitely come back if I have the chance!

I happened to be near Kyushu University Hospital, so I decided to make a detour to visit the shop. I bought my meal ticket in advance and waited outside. The smell of pork bone broth was strong, but that's just part of the experience of eating delicious ramen. The soup was different from recent ramen trends, with no sweetness, but it had a deep and rich flavor. The noodles were served with a special wonton that was meaty and tasty. The pickled vegetables were also delicious, with a sweet and spicy version available. The owner and staff were very friendly, and I would definitely rank this shop as one of my favorites.

Komaya Honpo. I was impressed by the bustling atmosphere on weekends and hadn't been here for a long time... I think we arrived just before 9 p.m.? Thanks to the weather, my junior and I were able to smoothly approach the counter. I had heard about the wonton men and the spicy noodles with extra noodles from acquaintances, so I purchased them from the ticket machine. It's nice that you can choose the type of extra noodles! On 8/26, I arrived in Fukuoka from Haneda. I reached Maedashi Kyudai Hospital in front of Umade at 10:45. The name "Maedashi" was a bit tricky to read at first! The restaurant was just a few minutes away by foot. I arrived 10 minutes before opening, and luckily they opened right on time. I ordered the Wantanmen for 900 yen. If paying with cash, you need to purchase a ticket from the machine. If using PayPay, you can pay at the store later. I scanned the QR code in the store for payment. A few minutes later, my bowl arrived. The hot soup was mild and easy to drink. It was a bit light for my taste, maybe because of the ramen sauce. The wantan had thin skin and was slippery. Be careful, as it's easy to burn your mouth if you eat it in one bite! The meat had a garlic flavor and was slightly crunchy. The two thin slices of chashu were probably pork shoulder. Adding crushed garlic halfway through made the flavor really come together. It felt like true tonkotsu ramen. Adding red pickled ginger at the end changed the taste again and made it delicious. I finished the soup and it was a great meal. P.S. After this, I went to Tenjin and participated in the preliminaries at BR Fukuoka.

The positive aspect of this review is why? I ordered wonton noodles. First of all, the soup... it was too salty and had a strong pork smell. The pork smell may be a matter of taste, but the excessive saltiness is a problem. The wontons were delicious. At that time, a regular customer came in and chatted loudly with the chef the whole time. Maybe they were so focused on chatting that they neglected the cooking and that's why it turned out so salty. Their attitude as a chef is lacking. I usually finish the soup, but this time I left most of it. I won't be visiting again.

I came back to Fukuoka and wanted to eat tonkotsu ramen, so I visited this place. I ordered wonton noodles with an extra serving of noodles. The tonkotsu broth was strong with a hint of soy sauce, which I really liked. The noodles were the classic thin noodles of Hakata ramen, and I finished the whole bowl, including the extra serving, in no time. The wontons were also to my liking and I was very satisfied. It was a shame that I couldn't try the fried rice, which is only available on weekday nights, but I definitely want to come back another day to try it.

(2023.08.05) I visited the famous 'Hakuryuken', established in 1952 and known as the origin of Hakata ramen, in Umadashi, only to find the shutter down... Unsure of what to do, I walked through the Umadashi Chuo shopping street and spotted a group of people gathered under a bright red tent, indicating it was a ramen shop. After waiting for about 15 minutes outside, the owner, a friendly man, greeted us a few times and apologized for the wait. The small shop had a counter with 7 seats, filled with regular customers from the neighborhood. Although 'Wonton Men' was the top choice on the ticket machine, I decided to go for a simple 'Ramen' as it was my first time there. The soup, despite its dark color and bone fragrance, was surprisingly light and had a pleasant hint of animal flavor. The low-hydration thin straight noodles had a great texture and paired well with the soup. They also offered flat noodles for those who prefer them. Overall, it was a delightful experience being able to customize the ramen to suit my preferences.

The ramen had a strong pork bone smell, but surprisingly, the soup was light. The soup had bubbles on top, indicating a well-cooked pork bone broth. I regularly visit a ramen restaurant that I love, and my favorite dish there is the "Salt Sauce Flat Noodles." This time, I ordered it again for the 3rd or 4th time. On this day, I brought the Harapeko Brothers, who were trying Japanese ramen for the first time, to Komaya for lunch. The staff at Komaya recommended the standard pork bone ramen to the Harapeko Brothers, who were visiting from abroad. The ramen was served, and the Harapeko Brothers were amazed by the delicious soup. However, when I tried my special order, something felt off. The soup seemed lighter and lacked the usual depth of flavor. It was a bit disappointing. Maybe it was because the head chef wasn't there. I will try the regular pork bone ramen next time. During their stay in Japan, the Harapeko Brothers also tried ramen at a food stall and at Ichiran, but they said that the ramen at Komaya was the best. That's how things are going at Komaya for now. I ended up ordering the Special Wonton Men for ¥1050 and an extra serving of noodles for ¥150 without knowing what the special ramen was, but it seemed to have ingredients like bamboo shoots. The wontons were delicious, and they could easily stand alone as a dish. The soup had a substantial weight to it, giving a real sense of eating ramen. It was probably made very carefully since it didn't leave me feeling heavy afterwards. It was definitely worth the trip to the Higashi Ward.

In the Hakoazaki area, there is a long-established ramen shop called "Komaya" that I had been curious about for a while. It is located about a 5-minute walk from the Hakozaki Line's "Bade Kyudai Hospital" station, and is marked by a red vinyl awning and a noren curtain. When I arrived just before noon, there was no line outside the shop, so I was able to enter smoothly after purchasing a meal ticket from the ticket machine outside. The interior of the shop had the typical strong pork bone smell that is common in old-fashioned pork bone ramen shops. Some people may not like this smell, but personally, it heightened my expectations. There were already two customers at the 7-seat counter. This time, there was only one option, "Wonton Noodles" priced at 900 yen, so I chose it without hesitation. I would have added a half-fried rice if possible, but they do not serve half-fried rice during lunch hours. A little disappointed, I placed my order as it was. In a few minutes, the "Wonton Noodles" arrived. As expected, the rich pork bone soup with plenty of fat bubbles was paired with thin noodles. The handmade wontons, some with torn skins, were topped with char siu and green onions. The soup had a low viscosity but was rich in flavor. Eating the wontons with the rich soup was incredibly delicious! The bouncy wontons had a strong meaty texture, making them one of the most satisfying wonton noodles I've had. The noodles were straight and of a standard thickness, not too thin or too thick, which balanced well with the rich soup. While I didn't finish the soup completely, I felt like I had experienced a rich pork bone ramen after a long time. Thank you for the meal.
