On this day, I had lunch in Omori. I arrived at this Hakata ramen shop. The location is a corner of Omori Ginza shopping street, about a 5-minute walk from JR Omori Station East Exit. This shop opened on February 24, 2019, in a space that used to be occupied by a restaurant called Teishoku Daruma. It seems to be a chain store with the main branches in Nagahama and Sasazuka. However, those branches are marked as "publication pending"! Teishoku Daruma had been trying hard while changing its business format, but it seems like it has finally closed down for real... There is a menu posted outside, so I first checked that. The main menu items are Hakata Ramen for 600 yen, Red Hakata Ramen for 680 yen, Black Hakata Ramen for 680 yen, Tonkotsu Shoyu Ramen for 680 yen, and Tsukemen for 750 yen. They also have rice bowls and set meals, but they were not available when they first opened. I made my choice and purchased a ticket from the ticket machine on the left as soon as I entered. After double-checking all the menu items, I bought Red Hakata Ramen for 680 yen and handed it to the staff. You can choose the firmness of the noodles from options like 3 seconds for soft to 60 seconds for extra firm. I chose the 10-second firmness. I would like to try the soft noodles someday... Inside the shop, it was almost the same as when Teishoku Daruma was there, with a counter for 6 seats, 2 tables for 2 people, and 3 tables for 4 people. It was run by two men. There was no background music, but there was a TV. The noodles are cooked in 10 seconds, so it only took about a minute for my order to be served. The Red Hakata Ramen (10-second firmness) had a passionate red color on the surface, served in a bowl with a pig logo. The toppings included chashu, seaweed, green onions, and white sesame seeds. The chashu was a bit dry. The noodles were extremely thin straight noodles that are typical of Hakata ramen. Since I chose the firmness, they were perfectly al dente. However, with such thin noodles, there was quite a difference between the beginning and the end of eating. By the time I finished, they had softened to a medium firmness. The soup is made from whole pig heads, creating a thick and creamy tonkotsu broth. I couldn't detect any pork bone smell, probably because I ordered the spicy version called Red Hakata Ramen. The bright red soup was dominated by chili peppers and chili-based sauce. Even as a spice lover, I found it satisfying, so I think it would be considered very spicy for most people. It doesn't reach the level of the Polar Bear from Moko Tanmen Nakamoto, but it's close. I like it even spicier, so I added some chili oil from the table. There is also spicy pickled mustard greens and red pickled ginger on the table, which I enjoyed as well. All this for 680 yen. It's a decent value. They have five basic ramen options and a variety of toppings, as well as rice bowls, set meals, appetizers, and alcohol, so you might not get bored with their menu.
