The chef, who has been featured in the Michelin Guide for five consecutive years at the renowned Tokyo restaurant Takayama in Hiroo, combines carefully selected ingredients from all over Japan with local Fukuoka ingredients to create excellent dishes that blend Edomae sushi and kaiseki. The quality of the courses, such as the "Chef's Choice Course (Dinner) - 12,000 yen (tax included)" which includes 24 dishes such as appetizers, sashimi, nigiri sushi, steamed dish, rolled dish, egg dish, soup, and dessert, reflects the high level of skill. As soon as you sit down and order alcohol, you will be served clam soup, rich in ornithine extract. This kind of hospitality makes you feel like drinking a lot of alcohol! The meal starts with edamame tofu and junsa (water shield) in the appetizer course, followed by dishes such as pickled ayu (sweetfish), dried kisu (sillago fish), wasabi-cured spear squid, baby scallops with winter melon, and a variety of nigiri sushi including horse mackerel, medium fatty tuna, spear squid, horse mackerel, sea bream, tilefish, shrimp, ikura (salmon roe), sea urchin, fatty tuna, and conger eel. In between, there are dishes like bonito sashimi and seared isaki (grunt fish) sashimi, as well as a white fish chawanmushi (savory egg custard) and a red miso soup with dried gourd roll and tamagoyaki (rolled omelette) to finish. Each dish on the menu was impressive, such as the rich flavor of the tilefish nigiri and the strikingly delicious large shrimp.
