I have been interested in this additive-free charcuterie shop for a while. The owner has won awards in Germany and is well-respected by German Meisters, resulting in trustworthy flavors. The ham has a beautiful color and tastes delicious, and the sausages are exceptional. Personally, I highly recommend the white mold-aged sausages. They are more affordable than Culatello and have a perfect taste. The Lyon-style salami has a meaty texture, a bold aroma, and spice fragrance that are irresistible. The chorizo has a strong spiciness but also a complex flavor due to the aromatic spices. The texture is chewy with a juicy fat content. The beer bratwurst has a strong fragrance and a firm yet moist texture, packed with flavor. The Lonza is incredibly flavorful, with a concentrated meaty taste and good fat melt-in-the-mouth sensation. The color of the roast ham is beautiful despite being completely additive-free. It has a great aroma, a tender texture, and natural juiciness. The roast pork with Provencal herbs has a strong herb aroma and allows you to enjoy the meaty texture. It pairs wonderfully with liver pate. The liver pate emphasizes the liver's aroma without any unpleasant smell, making it a great complement to the liver.

Located around the midpoint between Iogi Station, Shimoiigusa Station, and Ogikubo, facing Waseda Street and closer to the Seibu Line than the Chuo Line. A shop specializing in additive-free charcuterie, run by a highly skilled chef (which I didn't know until I entered). The shop is quite prominent and impressive. They have won gold medals for their Munich Weisswurst, Nuremberger, and liver pate. I chose the following items: Frozen gourmet hamburgers (540 yen for 100g x 2), Terrine Provence (540 yen), Direct flame-grilled pork slices (583 yen for 80g), Oven-baked sausage (432 yen for 100g, limited to Saturdays). The hamburgers were juicy and fluffy with a pre-seasoned taste, no sauce needed. The pork slices had a rich pork flavor. The Terrine Provence, made from chicken thigh meat, had a moist and flavorful taste. The oven-baked sausage had a refreshing taste, possibly due to excess fat being removed. Everything was delicious, affordable, and well-prepared. The straightforward deliciousness was evident due to the lack of unnecessary additives. I would definitely want to come back. The bacon, Vienna sausages, and others looked delicious as well. I would like to try a set next time (such as the Gold Medal Set for 4320 yen, Pate, Prosciutto, and Smoked Duck for Wine for 4320 yen, or the Gourmet Country Hiro Special Choice for 5000 yen). I have never eaten some items that I buy as souvenirs. For example, "Hanazono Manju" or "Kurinuki Fruit Jelly" from Senbikiya, or cakes from Obon Vuitton. Today, I decided to review these items that I have never tried before. The store had a variety of sausages and meats on display, and the prices seemed a bit high compared to supermarket products. I tried the Munich sausage, which had a refreshing lemon flavor, and the Liver Pate, which was rich and flavorful. The Chicken Terrine had a distinct chicken taste that stood out. These products are a luxurious treat and worth the price. The quality of these items is exceptional, and the flavors are authentic. It's like homemade without any additives, which makes a huge difference in taste. Overall, the products from this store are truly delicious and worth trying as souvenirs or treats.

On April 29, I visited the additive-free ham and sausage workshop "Gourmet Kunihiro" near Myoshoji Park, where the azaleas were only 5% bloomed. After admiring the azaleas, I continued my aimless walk northward. I was interested in the Myoshoji River that flows from the pond in Myoshoji. It flows towards the city center, eventually merging with the Kanda River near Shimo-Ochiai, and has a lot of historical significance. The name "Ochiai" seems to come from the merging of the Myoshoji River and the Kanda River. I eventually reached Waseda Street and stumbled upon a ham and sausage workshop at a street corner. I decided to take a look inside, hoping to try some ham, salami, or roast beef and purchase some if I liked them. However, all the products were vacuum-packed and there were no samples available. I hesitated a bit but ended up buying some sausages to taste. I bought a Frankfurt sausage and a small liver paste. The natural aged ham on display was priced well over 80,000 yen per piece. When I got home, I boiled the Frankfurt sausage and ate it with mustard, but I didn't really enjoy the flavor. On the other hand, I liked the liver paste. It was covered in jelly to maintain freshness, made from tender chicken liver. It tasted delicious when spread on hard bread. However, I still feel like I need to try the ham, salami, and other products to fully satisfy my curiosity. I also want to visit the cafe attached to the garden shop across the street on my day off.

Near Waseda Street, close to the Koshu Kaido, there is a sign for "Gurumekunihiro" right next to Chuo Middle School. I thought it was a shop for imported motorcycles, but it turned out to be a shop specializing in sausages, ham, and bacon. I decided to stop by for some bacon and ended up buying 80g of sliced bacon for ¥522. It was about 6 slices. They also had sausages, with a pack of 6 long ones priced around ¥600. I stuck to my original plan and bought the bacon. I quickly brought it home and made bacon and eggs. While sipping on a highball, I enjoyed the bacon and eggs. The moment I took a bite, the smoky aroma was amazing. The thin bacon had a good chewy texture, with a strong presence. It was so delicious, making me reflect on it. It goes well with whiskey or wine. Bon appétit.

Today, we had a girls' gathering with family at my house. Yes, it's Hina Matsuri (Doll's Festival). Both mothers, sisters-in-law, wife, sisters-in-law, daughter, and two nieces (1st grade and preschool) totaling 8 people, admired the Hina dolls of my family's Mukuzuki Mataro. It's an annual tradition where only women participate, and the men stay home or go out on their own. On the day of the gathering, we had a lunch meeting with everyone bringing something. My sister-in-law brought a pork rillette topped with paprika jelly by gourmet chef Kunihito. It came in a cute heart-shaped container with two photo coasters and tiny spoons. I also received a portion to take home. While out and about, I stopped by a bakery called Boulangerie Auvergne near the Katsushika Ward Office and bought a few loaves of hard bread to enjoy with the rillette. The taste was refreshing, and it paired well with a slightly dry white wine.

I was surprised when I tried the gift I received! The bratwurst (Wiener) sold at German inns and butcher shops was incredibly delicious, but I couldn't quite find that same excitement in Japan. I even bought some from a ranch, and while it was tasty, it didn't quite meet my expectations. The bratwurst here reminded me of the ones I had in Germany. There was a variety pack available, and each one was reminiscent of the bratwurst I remembered. The skin, the richness of the meat, the chewiness, the saltiness, the balance of herbs - everything was amazing. They were different from the ones sold in Japan, and while herb preferences may vary, I personally loved them. When I read the pamphlet, I was impressed by the dedication put into making these delicious sausages. I've never been a fan of processed meats, but reading that the artisans here shared a similar sentiment made me even more surprised. After researching, they found that the taste I didn't like was due to additives, so they worked hard to create a product without them. I think even those who aren't fond of sausages or processed meats should try them! I'm sure those who were similarly impressed by bratwurst in Germany would also enjoy these. While they may be a bit pricey for everyday use for me, they are definitely worth it. They may already be a well-known shop, but I hope more people get to know about them and that delicious processed meats become more accessible. The photo doesn't show all the varieties, but they include Munich, Frankfurt, chorizo, herb mix, Sicilian, and more. Additional notes: Pork sausage - 3.3 stars. A bit salty, but still delicious. Bacon - 3.8 stars. Very tasty, but a bit salty. Ideal for carbonara. Roast ham - 4 stars. Delicious ham with a perfect balance of flavors. It's exactly how ham should be - not overly salty and with a meaty texture. This ham is made naturally and doesn't have any strange flavors like some other processed hams.

It's a bit hard to find the shop on Waseda Street, it's not your typical butcher shop so it can be intimidating to go in. However, a friend recommended it as delicious so I finally tried it recently (everyone knows it's located next to the junior high school). I played it safe and bought a chunk of bacon, but as I heard, the price was high. However, the taste is top-notch compared to store-bought bacon. The crispy texture when cooked is completely different. But it's still expensive, so we decided to only buy it for special occasions like anniversaries (birthdays, etc.). It would also make a great gift. It seems like online shopping is the main way to go, so they should definitely have a website. But you won't know how good it is until you try it.

For dinner that day, I purchased smoked salmon from IKEA Shinjuku as the main dish, along with cold dishes, bread, and wine. I wanted to add one more dish, so I explored the food section at Takashimaya Shinjuku and found a pop-up shop from a Ham and Sausage Workshop in Suginami-ku, Shimoigusa. They pride themselves on using no artificial additives to achieve beautiful color without relying on coloring agents, a method not even found in Germany. I decided to pick up some items here since I enjoyed the bacon I bought from them last November. The first item I chose this time was a variety pack of raw ham, containing premium prosciutto and coppa that won a gold medal in Germany. It costs around 750 yen for a pack of 50g. I also added a pack of 6 slices of aged charcoal-roasted ham for about 700 yen. The raw ham I had for dinner that day had a rich and flavorful taste, with the concentrated umami of aged meat. It's surprising that such high-quality raw ham can be produced in Japan, given its hot and humid climate. It's a completely different experience from the watery and salty raw ham sold by major ham manufacturers. As for the roasted ham, I made a sandwich with it the next day. It had a slightly dull color, lacked juiciness and firmness, but had a strong meaty flavor. It reminded me of Kaiser Schinken I had in Germany a long time ago. I thought this last year as well, but I really want to visit their physical store in Suginami. I hope to make that happen soon.

I visited a ham and sausage workshop located in Shimoinokubo, Suginami-ku, which was participating in the "Gourmet Exploration" event at the Shinjuku Takashimaya underground food market from November 23rd. They pride themselves on producing products without relying on artificial coloring agents, resulting in beautifully colored items. I had heard that the ham and sausage shops around Ogikubo are of high quality, so I decided to purchase a pack of bacon slices for around 600 yen. I haven't been making bacon at home lately, so I was looking for delicious bacon. When I opened the pack at home, the color looked natural. While traditional salt-cured ham and sausages often have a dull brown color, this bacon had a slightly pink hue. When I tried it raw, the smoky flavor was just right, and both the fatty and lean parts were tasty. Perhaps due to being completely additive-free, the taste was similar to bacon I had made at home using a CAMERON mini smoker. It's great as a snack with beer or whiskey, or even placed on top of warm rice where the fat melts perfectly. I also cooked the remaining portion by sautéing it with corn and Vienna sausages, which turned out delicious. I would definitely like to visit their physical store when I'm in the Suginami-ku area next time.

The liver paste is delicious♡ It's also affordable and tasty, perfect for women who are prone to anemia. It's easy to eat and refreshing. You can spread it on bread or enjoy it with crackers!! The pate is also easy to eat♡ It's energizing! I joined the monthly distribution club, which seems fun and reasonably priced. The person who took my order over the phone was friendly and nice. Looking forward to it every month!! In Gurumekunihiro's distribution club, you can receive ham and sausages at a discount every month. If you have plans on the Saturday delivery day, you can choose a different day. I often go out on Saturdays, so I chose a weekday for delivery.

I don't know how many times I've purchased from this place, but it's my favorite shop. It all started when I was given a taste at a steakhouse in the downtown area and found out it was the owner's son's shop. Since then, I have been regularly purchasing their delicious bacon. The aged charcoal-grilled bacon is consistently delicious. It's amazing when added to fried rice! The smoked chicken is delicious even without any seasoning. And the soup made from the leftover broth after eating is also delicious. It's like enjoying it twice! The roast beef is a must-buy every year. It tastes great even without any toppings when placed on baby leaf. I tried the Bresaola for the first time. It's tasty, but maybe because of my age, the fat feels heavy... I can't eat a lot, so this amount is just right haha. The Ice Wine, when sliced and grilled, is delicious. The soup made from the leftover broth is also tasty. There are many other delicious items, so I highly recommend this shop. They told me not to run out of bacon, but I can't just go buy it right away because it's not within walking distance!

The roast beef is aged, the beef prosciutto is aged for over 6 months, and the bacon and ham are also aged without any additives. The ham shop has amazing skills and has won several awards. Their hams are like works of art! They have all kinds of hams available.
