January 2, 2022. Day 2 in Tokyo. For lunch on this day, I went to "Musashi" at Aman Tokyo. I have a stay planned at Aman Tokyo at the end of this month, but I won't have the chance to visit "Musashi" then, so I decided to go now. I had a reservation for the counter seat at 12:00. The sky-high counter overlooking Tokyo is wonderful. Since I had an early dinner reservation at 5:00, I only ordered the omakase sushi (8 pieces) this time. I started with a toast with Musashi by Aman Sparkling Sake from Miyagi for 2,783 yen. It was a dry sake with gentle bubbles, perfect for sushi. The sushi I had this time included: Sayori (halfbeak), Hirame (flounder), Akami (lean tuna), Chutoro (medium fatty tuna), Kinmedai (golden eye snapper), Kuruma Ebi (tiger prawn), Sumiika (squid) and Bafun Uni (sea urchin), Toro, Miso soup, Tamagoyaki, and seasonal fruit (Amaou strawberry). I also added Hata (grouper) and Shiro Ebi (white shrimp). The pieces were generous in size, and the rice was firm but melted in the mouth with the fish. I particularly enjoyed the Kinmedai, Squid & Uni, and the additional Grouper. The chef added a touch of ichimi pepper to the Grouper instead of wasabi, giving it a nice kick. The sushi had a unique touch of Musashi's originality, and the staff were friendly and attentive. Although the price was a bit high, considering it's Tokyo, Aman, the sky-high counter, delicious sake and sushi, and the overall experience, I was very satisfied. I would like to try it next time with some appetizers. Thank you for the wonderful meal!

I went to Musashi at Aman Tokyo. The sushi I had in this beautiful space within Aman was amazing! Musashi by Aman was incredibly delicious. It was so good that I felt like I was flying. It seems that the chef, who has even won a Michelin star, runs this restaurant. It was the best! ✨✨✨

My first visit was for a collaboration course between Alva and Musashi. I really enjoyed Musashi's sushi during that time, so I decided to revisit Musashi later on. The photo is from the collaboration event, I didn't take any photos during the solo visit, but the squid was particularly soft and delicious. My husband even ordered extra squid and medium fatty tuna after finishing the course.

This time, I stayed at Aman, so I visited for lunch... I ordered the "Omakase Nigiri 15 pieces." The rice was firm, which I liked. The toppings included flounder, nodoguro, squid, lean tuna, medium fatty tuna, gizzard shad, flatfish, salmon roe, small dried fish, horse mackerel, mantis shrimp, shrimp, fatty tuna, sea urchin, eel, and tamagoyaki. Among these, I liked the shrimp the most! The shrimp was so delicious! Also, the tamagoyaki was made with not only shrimp but also other shrimp, giving it a rich flavor. I added kanpyo, surf clam, and golden eye snapper. The total cost was 38,500 yen... It feels a bit expensive, but it's because of the location...

I was able to have a meal in a very lovely space within Aman. We had an early start time, so we finished our meal relatively quickly, which was a shame as we couldn't linger. Each dish was carefully prepared, with just the right portion size, and they were delicious.

At the beginning of January 2020, the owner of a renowned sushi restaurant in Aoyama, which had earned a Michelin star, relocated to the luxurious hotel "Aman Tokyo" after running the restaurant for 12 years. Despite the anticipation surrounding this new venture, there hasn't been much buzz or information about it. Curious, I decided to check it out myself. The first thing that impressed me was the elaborate approach. The dimly lit staircase illuminated by lanterns creates a sense of excitement. The ambiance inside the restaurant is great, and the chef and staff provide excellent service. The sushi and other dishes are delicious as well. I heard they use aged rice from Akita for their vinegar rice. The environment is well-prepared to ensure guests from all over the world enjoy their sushi experience, making dining a pleasant experience. However, I couldn't help but feel that there was something lacking in terms of uniqueness, which may explain the lack of buzz. For those who are sushi enthusiasts and have tried many different places, there might be a slight sense of dissatisfaction. It could also be due to the fact that I visited during a less favorable time, as the Tsukiji Market was closed. Being located in Japan's most luxurious hotel naturally raised my expectations as well. This is just my honest impression.

I stayed at Aman Tokyo in Otemachi. It's a very high-quality hotel with great expectations for the restaurant! When I visited for dinner, surprisingly, it was a private reservation for just two people. The interior was beautiful with both counter and table seating. The restaurant served appetizers first, followed by sushi. The appetizers were of high quality overall, especially the simmered fatty tuna which was incredibly delicious. The sushi was traditional Edo-style and while it wasn't very impactful, it was still delicious. However, I was a bit disappointed by the small number of sushi pieces. The prices were quite high, probably due to being located in a hotel, so the cost performance may not be the best. Thank you for the meal.

At check-in, we asked the hotel staff for a restaurant recommendation and made a reservation. The restaurant had a clean atmosphere with wooden tables, walls made of camphor tree slabs, and a stone floor. The owner, Musashi, personally greeted us at our table. We were seated in a space with a counter after passing through a few private rooms. It was a Friday night, so both the counter and private rooms were almost full. The drink menu could be accessed through a QR code or requested as a paper menu from the staff. The service was provided by a sommelier and his apprentice, while Musashi himself made all the sushi. We were served appetizers, sushi, and dessert in that order, with detailed explanations of the ingredients and cooking methods. The standout dish of the night was the shrimp, which had a perfect texture and rich flavor. The nori was dark and fragrant but not overpowering. Musashi's anakyu, a roll of warm grilled eel and cucumber wrapped in nori, had a subtle flavor enhanced by black shichimi pepper and citrus. The meal left us satisfied without feeling too full, and Musashi personally saw us off at the exit. While there were no surprises, the food and atmosphere were both clean and traditional.

Just the name "Sushi restaurant on the 34th floor of Aman" makes me feel like the entrance is overwhelmingly high for a commoner like me, but I decided to visit because the omakase course was 25,000 yen (excluding tax). The head chef here used to run a sushi restaurant called "Musashi" in a residential area of Minami Aoyama until last month, and he is a senior craftsman with 33 years of experience! He earned a Michelin star within 3 years of opening. He hails from Yamanashi and comes from a family of sushi chefs, so maybe that's why... Unlike the common red vinegar sushi rice, the rice here is white. However, it's not sweet because the main flavors are vinegar and salt. It has the taste of sushi rice preferred by people in the Kanto region, and it goes well with sake. The omakase course had fewer appetizers, so I was able to enjoy the nigiri properly. (Places with heavy appetizers can honestly be a bit much for women...) By the way, the appetizer was my favorite, ankimo, and it disappeared in an instant. The sushi here may not have bold flavors, but each piece shows skilled technique and meticulous work, giving a sense of stability. It was a reliable Edomae sushi experience. Thank you for the meal.

Sushi restaurant located on the 34th floor of Aman Tokyo in Otemachi. I didn't have high expectations, but the location is upscale. However, there is nothing particularly unique about it. The approach from the lobby is nice, typical of a hotel. The rice is unusually white. Overall, it seems to cater more to tourists.

The sashimi platter, otoro, and simmered hamaguri were outstanding when enjoyed together. The abalone appetizer was also delicious, but honestly, when you take away the ambiance factor, it's just average. The glassware and chopstick rests are from Baccarat, and the sake cups are colorful cut glass, adding a luxurious touch to the taste.

There are about 8 dishes of otameshi (chef's choice) appetizers and 8 pieces of nigiri sushi, all made with fresh ingredients. The location and atmosphere are great, but it feels like they need to put a little more effort into the presentation.

Yesterday, the grand opening of "Musashi by Aman" took place! It has relocated from "Sushi Musashi" in Omotesando. Their traditional work is meticulous! They pay great attention to every detail, from the pickled ginger to the nail! Musashi's pickled ginger is outstanding! They only use new ginger, so it is delicious without fibers. The rice is slightly firm, with a perfect balance of flavors! The amount of appetizers and nigiri is just right! I was very satisfied! If you stay at a hotel and can eat sushi of this level, it's the best! Truly impressive, Aman!
