I love beef stomach dishes, but I'm not a big fan of tomato stew. While I know it's delicious, it just doesn't give me the same satisfaction as enjoying a stomach dish. So, when it comes to French cuisine, I prefer dishes like "Can-Style" (cooked with cider or calvados, a specialty from the Normandy region) or breaded and fried, and for Italian cuisine, something like Lampredotto (a Florentine specialty stewed in white wine) is more appealing to me. However, it's hard to find restaurants that serve Can-Style dishes, and Lampredotto isn't a common item on menus. But recently, while riding in a taxi, I stumbled upon a sign that read "Florentine Tripe Dishes." It seemed like a new restaurant since there were no reviews on Tabelog, and it was open until late at night. I decided to give it a try and found that the first floor had only about 4 counter seats. The previous customer left after about 10 minutes, so I had the place to myself. I decided to go for the Lampredotto, which was tender and flavorful, satisfying my late-night cravings. When I chatted with the chef, I learned that he had trained at a tripe shop in Florence. It all made sense. Looking at the menu, I saw that they offered a variety of dishes from appetizers to main courses, making it more of a trattoria than just a tripe shop. And surprisingly, the restaurant was already in its third year of operation.
