The scorching heat these days really makes it feel like summer is in full swing~ When it's this hot, I only crave for eel or Jiro ramen haha I'll have some time off for a little over a week starting next week, so I couldn't resist revisiting Nomasaru Jiro, which I've been wanting to go back to. It's been about 5 months since my last visit. I arrived around 11:30 on a super hot weekday. I bought my meal ticket and joined the line of 6 people outside. There were 5 people waiting inside. I was tempted by the tsukemen and shikuwasa, but since it's been a while, I went with the default option this time too. I chose the small ramen since I now know how much I can eat from my Jiro adventures. The place has both counter and table seating, and it's spacious and easy to get into Jiro. The service was friendly and there was no tense atmosphere. After about 10 minutes, I moved inside and was seated right away. The turnover is quick here as well. There were 3 staff members, including the owner and a man with glasses. Two people were in charge of serving the noodles. There's self-serve water with ladles provided. Tare, togarashi, pepper. There was also sweet tare near the cold water dispenser. I sat down at 11:44 and got my bowl at 11:51. ▶︎Ordered Items - Small Ramen 900 yen Oh, garlic and fat~! The amount is no joke haha The bowl was filled with noodles and a surprising amount of vegetables for a no-call order. The pork belly sticking out was unbelievable haha First, I tried the soup that I was looking forward to. It's so delicious... the punch is really strong haha It's thick, creamy, and full of emulsified richness. It's full of pork flavor, umami, and richness. It has the wildness of Jiro and the unique tonkotsu flavor of Nomasaru. The seasoning is strong and the salty-sweet impact is excellent. It's different from Hibari or Sakuradai, also emulsified, and it's really delicious. The vegetables were as generously served as I remembered. The volume easily surpasses other shops that offer extra vegetables. The cabbage was about 30% of the type that's crispy and sweet, and it's delicious when combined with the fat. I got carried away and almost finished it all at first, but I regretted not saving some for later haha The noodles had a strong wheat flavor as soon as I lifted them. They were slightly thin and flat, chewy, and had a satisfying firmness. They had a rich wheat flavor that didn't lose to the strong soup. The noodles were longer and easy to eat. The amount of noodles was clearly more than other shops. I think it was about 350g before boiling. There were two large pork slices. One was flat, but the other was an unbelievably thick end slice. Last time, it was all fatty, but this time there was plenty of lean meat, so I was relieved haha Both were thick and tender, full of pork umami. They weren't dry, and the seasoning was just right. The garlic was strong, but it was overshadowed by the soup, so I couldn't really taste it haha Next time, I'll try getting extra garlic. Oh, Nomasaru is really something else. It won't lose to the heat haha I like Matsudo, Hibari, and Nomasaru because they each have their own character and they serve the emulsified soup that I love. However, in terms of volume, Nomasaru is overwhelming. If you have a small appetite, definitely go for the small size. I took about 15 minutes taking photos, but I enjoyed it thoroughly haha Next time, I'll try the tsukemen. Thank you for the meal~!
