I visited the restaurant around 7pm on Saturday night. There were about 3 people waiting outside, and after I left, there was a line of over 10 people. It's better to come early. This restaurant operates on a system where you purchase a food ticket inside before lining up. I bought a ticket for the ramen with egg and miso, and then joined the line. After about 10 minutes, I was seated at the counter. Soon after, my order arrived. The visually rich miso dipping sauce and glossy noodles looked appealing. I dipped the medium thick noodles into the soup. Despite the rich appearance of the dipping sauce, the first thing I noticed was the umami of the broth. It was lighter than expected due to the good dashi base. The miso was not overpowering and blended well with the broth. The noodles were nicely chilled and balanced well with the warm dipping sauce. They had a smooth and chewy texture, with a hint of sweetness from the wheat. The chashu pork and soft-boiled egg in the soup were also well-prepared. This miso dipping ramen may not be traditional, but everything harmonized well. It's a well-executed dish, which explains its popularity. Interestingly, almost half of the customers at this restaurant are foreigners. It's great to see that Kyoto's delicious ramen shops are popular among foreigners. It seems that ramen shops with a strong umami flavor are especially popular among foreigners. It's wonderful that delicious ramen is enjoyed by people from all over the world. Thank you for the meal.

Tsukemen (large) for 1,100 yen. It was my first time trying miso tsukemen. The meat miso at the bottom of the soup was well mixed with the noodles, which was good! Before the opening, I lined up and checked reviews, and there were quite a few negative opinions, so I was a little worried that it might be a disappointing restaurant despite its high ratings. However, it was actually quite delicious. It may not be as good as the ratings suggest, but it was still good. Since it was my first visit, I wasn't sure, but it said on the ticket machine that the noodles were cold, so it seems they don't serve hot noodles. That was a minus point for me. I arrived before 10:50, with 3 people waiting ahead of me. I entered when they opened and left before 11:25, but there were already more than 10 people waiting outside. It seemed like there were mostly foreign visitors. Thank you for the meal.

I went to "Sanda" sensei's shop, which I have visited several times, and I was looking forward to it. The miso-flavored tsukemen was delicious! The noodles were chewy, and the chashu was tender and I finished it all in no time. However, I'm not good with spicy food, so I wish the soup was less spicy. Since it's a popular place, I recommend avoiding meal times and aiming for an early time. It's rare for a ramen shop to have a place to store your belongings, which is appreciated by women. When lining up outside in the summer, there are mosquitoes, so it would be good to have insect repellent spray available.

As mentioned by others, please be careful with the ordering process at this restaurant! Make sure to buy a meal ticket before lining up!! I visited around 8 pm and there were about 7 groups waiting in line. Waited for about 30 minutes to enter. Once inside, the food was served promptly. The taste was average. The dipping noodles were a bit spicy for me, as I prefer a milder curry sauce. I don't think it's worth the long wait, but the chashu was excellent!! ✨ I would line up again just for the chashu! The staff were also very friendly ☺︎

However, by 11 am, more customers arrived and there were about 10 people waiting outside. More than half of them were foreigners. I ordered the miso tsukemen (large) for 1100 yen. The button for extra noodles was missing, I wonder if they don't offer it anymore? It had been a while since I last ate here, and while I could taste some spiciness, the miso flavor wasn't as rich as I expected, and it felt a bit bland to me. It's not that the flavor was weak, but it just didn't suit my taste. The chashu was tasty but there was only one thin slice. The noodles didn't have any distinctive characteristics. There were two staff members and the owner wasn't there. Honestly, I had a pretty good impression of this place before, but this time it didn't quite meet my expectations. Maybe I should try their ramen next time for a second chance?

The miso tsukemen (regular size for 900 yen) is said to be the most popular dish at this shop. I went to this shop during my lunch break, but the line was so long that I couldn't eat during that time, so I went after work instead (although there was still a line in the evening). The "Junmai Miso" dipping sauce is made by stir-frying miso and ground meat, adding fish powder and chili oil for a spicy kick, while still bringing out the sweetness of the miso. It has a sophisticated flavor that is both stimulating and mellow. The open kitchen allows you to see the cooking process from the counter seats. The noodles are thick to match the dipping sauce, with a chewy texture that is satisfying even when eaten on its own. There is a sweetness that comes out as you chew. For the finishing touch, you can add a soup wari (soup refill) with a Japanese-style dashi base. It adds a refreshing aftertaste to the spiciness and mellowness of the miso.

Arrived around 9:00 PM thinking I could eat right away, but surprisingly there was still a line. Many foreigners were there. Waited for about 20 minutes and finally got in. The appearance was too simple. The taste was...huh?! Delicious!! It had a miso flavor like tantanmen. I will definitely line up for this! It's been a while since I had a hit like this with mazesoba. The price is a little over 1,000 yen, so it's a bit on the expensive side, but it's a place I'd like to visit occasionally.

The thick noodles were slightly rough, and the rich miso dipping sauce had a strong dashi flavor, reminiscent of chocolate, and was rich and flavorful. It had been 3 years, and I deeply savored it. Finally, I tried the highly anticipated "Aged Ramen Kubota" because it often appears on Instagram. I really wanted to try their signature dish, the "Miso Tsukemen." The first bite of the rich soup was slightly spicy. The main flavor is miso in the soup, paired with chewy thick noodles. It is indeed delicious. However, there are many other ramen shops in Kyoto that serve tastier tsukemen with seafood broth. Sorry, even though it's a popular shop, I would rate it 3.5 out of 5.

I didn't have dinner, so I went out for noodles. In the still intense summer heat, I decided on the refreshing cold "Tuna Salt Cold Ramen" and the finishing "Tuna Ochazuke" without hesitation. The clear broth with tuna and chicken chashu is a combination that is beyond imagination from the usual miso tsukemen. It's a slippery and satisfying dish that makes you want to gulp down the soup in one go, but I managed to hold back and poured the soup into the ochazuke! The tuna ochazuke creates a new harmony and provides the ultimate satisfaction. While enjoying the refreshing flavors, I also start to crave the miso tsukemen again. I will definitely revisit this restaurant.

The noodles at Shinakaya have a good firmness, and they are delicious on their own! ☺️ The soup is a rich miso flavor. While fish and pork bone or pork bone thick dipping noodles are common, this may be the first time I've found a delicious miso dipping noodles shop. Due to being in Kyoto, there were many foreigners. I also bought a meal ticket and waited for about 20 minutes. I tried the Miso Tsukemen Large (1100 yen), where thick noodles were dipped in spicy miso soup. Unfortunately, I didn't feel particularly impressed. Disappointing. Even though I waited in the heat... I may have set my expectations too high.
