Visited RISTORIA RADICE for dinner for the first time. The chef here trained in Emilia-Romagna and Cesenatico in Italy before further honing his skills domestically, opening his own restaurant in December 2013. In conclusion, I believe this restaurant deserves even higher praise than its rating on Tabelog. On this day, I opted for the "White Truffle Course" instead of the regular course. Despite the ban on importing Italian ham due to the African swine fever outbreak in Italy earlier this year, we were fortunate enough to enjoy the precious Culatello di Zibello. Each dish was delicious and satisfying. The chef's specialty, Panzarotti, was the MVP of the day. Additionally, a nationally renowned sommelier was present, and the wine pairings were excellent. Moreover, the chef shared a wealth of knowledge about white truffles and even conducted a mini white truffle seminar. Here are some key points I learned:
- White truffles cannot be found in Alba.
- White truffles in Alba are trademarked.
- White truffle hunters require a difficult license.
- Violations can result in license revocation.
- There are 6 types of truffle-hunting dogs, with 2 allowed in the mountains, but only 1 can accompany the hunter.
- White truffles come in various colors despite being called "white truffles."
- In Japan, white truffles are often generalized.
There are not many renowned Italian restaurants in Kyoto, so this was a pleasant surprise. I would love to visit again if given the chance. Thank you for the wonderful meal.
