Today, despite being short on time, I headed to Sangenjaya to grab lunch. There was no time to ponder over what I wanted to eat - no standing soba shops for me, said my companion. They were in the mood for rice. So, we ended up at Manten, a place we had been to before. There were a few menu options, but my companion insisted on ordering two servings of chicken karaage as it would be quick. We waited, but it seemed to be taking longer than expected. "Maybe our order didn't go through?" suggested my companion. Lunch at izakayas is usually served quickly, so this delay was unusual. My companion had to reschedule their afternoon plans over the phone. It took over 20 minutes for our food to arrive. The meal included rice, miso soup, pickles, cold tofu, a small dish of cabbage salad, potato salad, tomato, boiled broccoli, mayonnaise, and the main dish - chicken karaage. The chicken karaage was piping hot and freshly fried. It got me thinking - the only item that needed cooking after ordering was the chicken karaage. Everything else could be prepared quickly. The fact that we received freshly fried chicken karaage 20 minutes after ordering meant that they must have started frying it just before serving. Many people were ordering the chicken karaage set, so they could have prepared in advance to serve them faster. Looking at the kitchen, it was clear that the cooking process was inefficient, causing delays for customers. In the evening, the place becomes a bustling pub with a large number of seats. Despite offering a smaller menu during lunch, the operation was still slow. My companion, an industry professional, analyzed that the operation was poorly managed. Compared to the wide variety of menu items at Yoshinoya, it was evident that the operation at Manten was lacking. I'm not criticizing, just thinking it's a shame that despite being affordable and delicious, they are not maximizing their potential. Slow order taking, long wait times for food, and delays in payment all directly impact customer satisfaction, a basic principle in marketing. From ordering to serving, it took 23 minutes. We finished eating in 5 minutes.
