The coffee industry has different waves. The first wave started from the late 19th century to the 1960s, when coffee became more affordable and mass-produced, becoming a popular drink among the general public. In Japan, Dr. Sartori Kato invented instant coffee, and the founder of UCC Ueshima Coffee, Mr. Tadao Ueshima, developed canned coffee. After this, coffee shops continued to increase until the bubble period. The second wave began in 1971 when Starbucks was born in Seattle. In contrast to the first wave, which focused on cheap consumption, the second wave used high-quality beans and advanced roasting techniques. Starbucks landed in Ginza in 1996. I started enjoying Starbucks in Seattle two years before it arrived in Japan. At that time, Starbucks was everywhere in Seattle, becoming a "common presence." The third wave emerged around 2000. Its characteristics include using coffee beans harvested from single species of plants, single-origin, hand-drip brewing, and light roasting. Blue Bottle Coffee landed in Japan in 2015. From 2020 onwards, coffee shops have been opening one after another in the Waseda area. Starting with Ammonite Coffee in July 2020, followed by Aun Coffee in September 2020, Coffee Ya in November 2020, Kohaze Coffee in March 2021, and Natsumezaka Coffee in September 2021. On June 10, 2022, our shop opened. Our shop is located in Bunkyo-ku, Mejirodai 1-chome, but Tabelog classified it as "Waseda Cafe," so I will review it as part of Waseda. The owner of our shop gained experience at BE A GOOD NEIGHBOR in Sendagaya before becoming independent. I received information from a dog friend in the neighborhood that "pets are allowed in the store," so I went with my two beloved dogs. Since I cannot drink coffee during the day, I ordered an iced lemonade. There are seats along the walls in the store, and you will be served while sitting down. The seats felt a bit cramped when bringing two medium-sized dogs like ours, although it should be fine for small dogs. The homemade lemonade had a good balance of lemon acidity and sweetness, making it an easy-to-drink lemonade. I thought it would be a perfect drink for hot summers. PayPay was not available as they had just opened, but I would appreciate it if they introduced it in the future. Mejirodai 1-chome was not a particularly exciting area, but with yuloom zymology opening and our shop opening, slowly but surely, trendy shops are emerging, which makes me happy.
