Since the opening of Park Hyatt in Niseko, the quality of gourmet food has significantly improved. Among them, my favorite French restaurant is Monsieur Montagnieu Morier! It's so sad that I can only visit in winter, but the exquisite French cuisine is tempting me to consider a visit to Niseko even in the green season... From the photos, you can see that there is a certain performance aspect, similar to Narisawa, or reminiscent of Michel Bras in Toyako, which unfortunately has closed now... But within the realm of Hokkaido French cuisine, Monsieur Montagnieu Morier has a distinct originality that I really love! Did you know that Niseko is the number one producer of lily bulbs in Japan? Laughing, I love lily bulbs so I feel so happy to enjoy freshly harvested and perfectly cooked lily bulbs...! The main dishes were venison and Tokachi beef. Hokkaido is truly wonderful. The vegetables, fish, shellfish, and meat were all perfect. Vegetables, gnocchi, and herbs. Lemon butter sauce. Everything is carefully prepared. Each ingredient is cooked and dressed with care. The vegetables are not just thrown into the pot. Delicious. Matsue abalone. I encountered an incredibly delicious dish. A dish that felt like an honor. Matsue abalone dressed in squid ink chaperon, with squid ink sauce and squid ink risotto. Three types of squid ink with different flavors that are not overwhelming. The cooking technique is excellent! Amazing! Applause! After a palate cleanser sorbet, Hokkaido beef fillet. The Halloween pumpkin was displayed on the table with chopstick rests made from pine tree branches. The turnip and prosciutto were served for eating with hands. The burdock soup (no photo) had a delicious flavor of butter and burdock, with foamy vegetable broth that popped in the mouth. The fried shiitake mushrooms were very meaty and large, served with mountain wasabi on top. They were presented on a wire-bound stand made of wood branches or roots. I stopped by for lunch on my way back from Sapporo. It was quite crowded this summer, with discounts like the "Do-min discount" available. The Chinese buffet in front was very busy. On this day, I reserved the 13,200 yen lunch course starting at 11:30. It felt so good to be in Hokkaido. They served corn, edamame, broccoli, Hokkai shrimp, kasube, Tokachi beef, and milk. Just like Moriére, the presentation was perfect.

I visited "Moliere Montaigne," a restaurant affiliated with Moliere in Sapporo, which has been awarded three stars by Michelin Hokkaido. It is about a 2-hour drive from Chitose Airport. I was very excited because I had previously enjoyed French cuisine at the Michelin-starred restaurant Michel Bras Toya Japan in Hokkaido. First of all, the location is fantastic. It has a luxurious resort atmosphere, and when I visited, there were few guests, so I was able to enjoy dinner at a leisurely pace. The dishes are beautifully prepared, using local ingredients with great taste. I definitely want to visit Moliere in Sapporo next time.

I was recommended to come here by a senior foodie when staying at Park Hyatt in Niseko. The cozy interior, with a mix of modern and woody elements, made me feel at ease. The menu was asked for during reservation, and on this day, we ordered the ¥22,000 course. The dishes included Basque ham and radish, carrot and potato tacos, Macaire's warm soup, butter sauce taraba crab, Matsue abalone, squid ink tempura, Hokkaido beef charcoal-grilled, and more. All dishes used local ingredients, which was a nice touch. The food was beautifully presented, delicious, and not tiring to eat. The standout dish was the abalone, which was steamed and then deep-fried with squid ink batter, resulting in a burst of umami flavor. The Hokkaido beef grilled slowly was also excellent. The staff's hospitality was top-notch, making this a restaurant I would love to visit again when in Niseko. ✨

Sapporo's Michelin 3-star modern French restaurant "Moliere" has a sister restaurant that opened in 2020 at the Park Hyatt in the flower garden area of the ski resort town of Niseko called "Moliere Montagne"! You can go directly from the slopes, so after skiing in the morning (taking off your ski or snowboard boots), choose the shortest lunch course. The food is incredibly delicious, the hospitality is kind, and the presentation is meticulous. This was the most impressive restaurant during my trip to Niseko!

Molière Montagne. This is a branch of the only three-star French restaurant in Hokkaido, "Molière". I visited this restaurant for the first time after it opened at the Park Hyatt Niseko HANAZONO. As expected of Molière! The taste, presentation, and service were all excellent. I was the only customer in the restaurant, so the sommelier kept coming to talk to me, but I could only drink a bus cup juice as I had to drive... I'm sorry. There are two lunch courses available, one for 5,800 yen and the other for 12,000 yen. I chose the 5,800 yen course. The total cost was 8,107 yen, including the course, bus cup juice for 900 yen, 10% service charge, and 10% consumption tax. As expected of Molière, it's quite pricey. Personally, I still prefer Macalister in the Molière group, but this place was also truly wonderful.

I visited this restaurant without knowing much about its background or affiliation, as my companion made the reservation. It is said to be a popular restaurant that is hard to book. The atmosphere is designed to protect privacy, so I couldn't see or hear what other guests were doing. The course on the day included dishes such as carrot and daikon radish with prosciutto, burdock soup, shiitake mushroom fritters, a salad with fragrant vegetables like carrots and onions, abalone and risotto baked with bamboo charcoal breadcrumbs, grilled venison, cheese, Mont Blanc, and fruits. When I think of French cuisine, I used to associate it with techniques and sauces, but I learned that it can be modern and different. The dishes focused on bringing out the natural flavors of the ingredients, so categorizing them as French or Italian seems pointless. Naturally, there was no burden on the stomach like indigestion. I believe the same meal in Kansai would cost several times more. It's definitely worth going out of your way to visit this restaurant.

While English is more commonly spoken at the hotel, at the Morille Montagne restaurant located within the hotel, Japanese is also understood. The chef has trained in France and is affiliated with the 3-star French restaurant Morille in Sapporo. The seasonal menu priced at 9900 yen includes fresh local vegetables, corn cold soup, edamame fritters, a variety of seasonal vegetables, broccoli with carbonara-style boiled egg and shaved cheese, clam risotto, tea and lemon sorbet, Biei pork spare ribs, raclette cheese, milk sorbet with olive oil and black pepper, lemon jelly, and grapes. Surprisingly, there is a branch of "Moliere" in Niseko called "Moliere Montagne," located within the "Park Hyatt Niseko Hanazono" hotel. The restaurant offers a variety of cuisines, including teppanyaki, sushi, Chinese, and robatayaki, with "Moliere Montagne" specializing in French cuisine. I had the opportunity to dine there during my stay and was impressed by the elegant atmosphere and impeccable service. It's not that great. Restaurant Moliere is better. The drink options are limited, and I started to worry about the taste and service. When I asked for a glass replacement after ordering a new beer, I was told that they don't provide that kind of service, which surprised me. The food was disappointing as well. The atmosphere wasn't great, and neither was the clientele... I won't be going back there.

Morinall seems to be a famous restaurant in Sapporo, but as someone more familiar with Niseko, the name didn't ring a bell for me at first. However, after reading reviews, I realized it is a restaurant in the same group as Maccarina. I heard that the famous chef from Maccarina also runs a renowned French restaurant in Sapporo. Maccarina is well-known for being where the First Ladies dined during the Lake Toya Summit, and their French cuisine using vegetables from Muroran Village is excellent. Whenever I visit Niseko, I always make sure to stop by Maccarina. This time, I had a reservation at Maccarina, but upon discovering Morinall at Park Hyatt where I was staying, I changed my plans. I had the 9900 yen dinner. Both Morinall and Maccarina are exceptional restaurants with great service. The staff provides precise explanations of the dishes with a friendly yet appropriate distance. The dishes highlight the deliciousness of vegetables, allowing you to truly experience the goodness of Hokkaido. I particularly enjoyed the lively main dishes like the pork and risotto. I was satisfied with everything, including dessert. Enjoying French cuisine while overlooking Mount Yotei was truly special. I might find myself visiting Maccarina less often from now on.

I went to stay at the Park Hyatt in Niseko, where the famous Moriére is located. As soon as I entered the Park Hyatt, I felt like I had stepped into a foreign country. The staff were mostly foreigners, giving it an international atmosphere. The Moriére Montagne restaurant inside the hotel is managed separately and is also popular among non-Japanese guests. I had a delicious dinner there, starting with fresh ham and vegetables, followed by a variety of dishes including black abalone risotto and smoked meat with cheese. Everything was satisfying and enjoyable. You can dine at Moriére even if you're not staying at the hotel. I highly recommend giving it a try!

For lunch, they offer curry sets, grilled fish, and more, catering to both foreigners and Japanese customers. The quality of each dish is impeccable. The price range for lunch, excluding drinks, is around 2,000-3,000 yen, which is considered reasonable considering the overall quality. It's worth noting that many of the staff members are foreigners who speak English, so be careful not to inadvertently speak to them in English and get a confused response in Japanese. The photo shows a carpaccio of raw fish (maybe yellowtail?), which comes with bread and butter by default. Delicious!

In Sapporo, the Moliere and the food are the same, but here you can enjoy unique mountain delicacies. This time, the main dish was pork spare ribs, and I was surprised to see the smoked meat right in front of me. The meat was fragrant, tender, and delicious. The service was also excellent. The chef was friendly, and I learned a lot from our conversation. I will definitely visit again when I go to Hokkaido.
