On September 3, 2023 (Sunday) at 5:05 PM (time of entry), I visited Beforeafter. They have a new sushi case, which is smaller compared to the previous one. Since the head chef is working alone at the counter, cleaning seems easier now. The fresh seafood looks more transparent and vivid than before. I enjoyed my usual sushi. It was delicious.

The cold weather is starting to ease up, so I decided to go for a bike ride and explore the town. I came across a long-established sushi restaurant that has been around since 1889. Their sushi starts at 1000 yen. I had to go in. The place was bustling with regular customers ordering fresh sushi and chatting about the fish market in Tsukiji and local festivals. Listening to the conversations between the chef and the regulars was quite enjoyable. For 1000 yen, I got 8 pieces of sushi with pickles and miso soup with clams. The quality of the sushi was outstanding - the rice, the warmth, the size of the fish, and the freshness were all top-notch. I almost wish I had gone for the 1200 yen set with 10 pieces. The chef's son served me, and I wonder if he will take over the business in the future. But the chef is still so lively and passionate, I hope he continues for many more years to come.

I used to work near this restaurant, and from the first time I visited, I was impressed by the warm personality of the chef who always treats walk-in customers politely. Despite his age, he is very knowledgeable about various things, and it's enjoyable to listen to his stories while eating. Rather than deciding on a specific dish like "I'll have XX", it's more satisfying to ask for the chef's recommendation of the day and decide on what to eat on the spot. The balance between the rice and toppings is perfect, making the sushi very easy to eat.
