I have always loved the taste here. The eggplant dishes, lamb dishes, and knife-cut noodles are excellent. The customers here are discerning adults, so the place is always busy, but not so crowded that there are long lines, which is nice. The spiciness here is of high quality, unlike the poor quality Sichuan-style spiciness that can upset your stomach the next day. The service is typical Chinese-style, so don't expect too much, but it's not bad either. Seriously, I love this place.

This is a restaurant known for its delicious knife-cut noodles. I wanted to try a certain popular dumpling place in Ginza on a holiday, but the line was too long, so I ended up at Shiaan because I really wanted to eat dumplings and fried rice. The lunch menu fried rice was generous in portion, served with soup and pickles. I ordered 4 dumplings on the side, and the total was around 1,200 yen. The fried rice was nicely cooked and the dumplings were hot and had a strong garlic and chive flavor, with the filling being firm. Personally, I prefer the filling to be juicier and softer, with a chewy skin. The staff's service was a bit... let's say not particularly friendly, but in a way, it added to the authentic feel. They still provided good service though! I prefer their knife-cut noodles and boiled dumplings over the mapo tofu I had before, which was too salty and not that great. Thank you for the meal!

This restaurant offers delicious food at reasonable prices not only for lunch but also for dinner. You can enjoy a la carte dishes, hot pot, and finish with knife-cut noodles. Be careful not to overeat and gain weight. The lamb skewers in the photo are a popular choice. By the way, the "white sour" is white wine mixed with carbonated water.

In Yurakucho, Tokyo, there is a Xi'an restaurant called XI'AN. When it comes to Xi'an cuisine, there is Wang Lue Yuan in Gakuenmae, Nara. While their specialty is Biang Biang noodles, XI'AN is known for their knife-cut noodles. I ordered the Spicy Knife-Cut Noodles for 880 yen. It arrived in just a few minutes. The size of the noodles varied, and they had a firm texture, similar to a cross between Houtou from Kofu and Sanuki Udon. The taste was similar to a spicy Tantanmen, but I wish it had more Sichuan pepper flavor. It was spicy, and I ended up sweating by the end. It was deliciously spicy. Thank you for the meal.

The classic summer cold noodles have a new menu item! Tried the "Black Vinegar Cold Tantanmen" out of curiosity for the black vinegar, but still prefer the usual "Cold Spicy Eggplant Knife-Cut Noodles". The black vinegar flavor wasn't as strong as expected, and the toppings in the eggplant noodles are more satisfying in terms of variety and portion. The Tantanmen was a bit too rich for my taste. I guess cheating on my favorite dish was a mistake. Sorry, Cold Spicy Eggplant Knife-Cut Noodles.

Shiaan's knife-cut noodles are so delicious that you'll miss them terribly if you don't have them for a while. Today's summer limited edition is the eggplant mala knife-cut noodles. The spiciness and the sweetness of steamed eggplant blend together perfectly, and the generous amount of tender chashu is very satisfying ❤️ Of course, with extra cilantro. Even if it costs extra, I would be even more satisfied if there were more eggplants, but that might be a bit luxurious.

Before watching a movie with a friend, we had a quick meal at this restaurant. We arrived right when it opened, but it was already almost full. Luckily, we managed to snag the last available seat. I ordered the Sanraku knife-cut noodles. It tasted very similar to my favorite knife-cut noodles from Akasaka Mitsuke that I used to frequent. The broth was flavorful, the noodles were smooth, and I ended up finishing almost all of the soup. They also offer a small size, so you can order a variety of Chinese dishes and enjoy them as a satisfying end to your meal. It was a delicious and satisfying dish.

The spare rib knife-cut noodles (not spicy), Bang Bang Ji doumiao stir-fry were all well-seasoned and satisfying. The dishes came out quickly, making it a good place to casually stop by. I want to come back again because there are other menu items I want to try (the steamed bun with meat filling looked delicious).

Reserved for a family on a Sunday night. Each person ordered a bowl of knife-cut noodles, along with some dumplings, eggplant, and saliva chicken. The cold saliva chicken arrived quickly. It had a spicy level of three chili marks, but even a middle schooler could handle it. We were told the eggplant was popular, so we ordered it, and it did not disappoint! It might be worth visiting just for that dish alone! The knife-cut noodles had varying cuts, offering different textures like smooth and chewy, which was enjoyable. The dumplings arrived when we least expected it. They were the type with plenty of chives and were not wrapped. Perhaps it was just luck, but none of them were a disappointment. Thank you for the delicious meal!

I arrived in the Yurakucho area just before 2 pm, a little late for lunch. Some restaurants had already finished their lunch service, but I noticed a noodle shop that was still bustling. I decided to eat there. I was seated on the second floor since the first floor was full. I ordered the fried rice set. The fried rice was flavorful and well-cooked, but it was a bit too salty for my taste. I left about half of it uneaten. Overall, the experience was okay, but I regret not trying the spicy noodles that the customer next to me was enjoying. I'll keep that in mind for next time. Goodbye!

Located about a 3-minute walk from Tokyo Metro Hibiya Station. I arrived at 12:10 on a weekday and was able to enter and be seated without waiting. I ordered the Spicy Knife-Cut Noodles for 880 yen with a large serving for an additional 100 yen. The noodles arrived about 5 minutes later. The spicy soup paired well with the noodles and was delicious.

This month was my first visit to this restaurant. It was almost full and customers without reservations were being turned away, showing how popular it is. This time, I ordered my favorite dishes for the first time: eggplant tempura, hot and sour soup noodles, and hoi kor lo, along with a cold dish of pork stomach. The pork stomach seemed a bit bland, but the other two dishes had a rich flavor, so overall it was a good balance. The eggplant tempura went well with white rice and I could see why it's the most popular dish. I've eaten here many times, but I always end up ordering the eggplant tempura about half the time. There are many items on the menu, and they all taste delicious, so I hope to try them all someday!

The noodles are freshly shaved with a knife after you order, giving them a chewy texture that is delicious. The ingredients are fresh, the soup is flavorful, and overall satisfying. The prices are reasonable and they offer free extra servings, making it a good deal. However, the restaurant tends to be crowded, so there may be a wait. It's especially busy during lunchtime, so it's recommended to go early.

I used this restaurant for lunch this time. I was unsure of what to order, but I ended up ordering the Spicy and Sour Knife-Cut Noodles (large serving). The restaurant was almost full. My order was the Spicy and Sour Knife-Cut Noodles (large serving) for 980 yen. The dish consisted of knife-cut noodles in a soup with a prominent spicy and sour flavor. I ordered it without cilantro this time. The noodles had an interesting texture with uneven shapes and thickness. The ingredients included minced meat, boiled cabbage, and fried knife-cut noodles. Besides the spiciness and sourness, it would have been better if the flavor had more depth. The staff were mostly foreigners and while they lacked friendliness and smiles, they provided polite and efficient customer service. This Chinese restaurant is located near Hibiya Station.

As always, it's quite crowded here. The Sichuan pepper fried eggplant that I couldn't eat last time is delicious after all, the idea is wonderful. Also, I like mixing knife-cut noodles with chicken and potatoes, but there were only a few potatoes, which was a bit disappointing.

I visited Nishiki-san in Yurakucho/Hibiya for lunch, remembering the delicious knife-cut noodles I had tried a while ago. It was lunchtime and there were 2 people waiting outside, but we were seated on the second floor within 10 minutes. Last time, I enjoyed the sour and spicy noodles, but this time I couldn't resist the "limited lunch time" spicy tofu knife-cut noodles with half rice. I confirmed that they had cilantro, but later heard that you could ask for extra cilantro - I should have done that! The food was served in about 5 minutes. The portion of spicy tofu was a bit small, which was a bit disappointing, but the knife-cut noodles had a great chewy texture. The spicy tofu had a nice flavor with Sichuan vegetables. I wish there was more of it though. Personally, I prefer the sour and spicy knife-cut noodles. Maybe it's better to eat the spicy tofu with rice? About 60% of the customers were men, and there were also many women. Thank you for the meal!

It's getting cold, so I wanted to warm up with something hot and spicy, and decided to visit the Yurakucho branch for the first time. I arrived around 11:30 am and there were still plenty of seats available, so I was quickly seated on the second floor. As I looked through the menu, I couldn't take my eyes off the "Mapo Tofu Knife-Cut Noodles" available only for weekday lunch. I ordered it with extra cilantro. While waiting, more and more customers started to come in, and by the time my dish arrived, the restaurant was full. The table was set with a paper apron and napkin, which was very thoughtful. Now, the dish arrived. The scent of Sichuan peppercorns and cilantro filled the air. When I tried the soup and mapo tofu, I knew I would definitely want some rice too. When I lifted the noodles, the irregular and soft knife-cut noodles were coated in the spicy soup. I really love this type of noodles. They go perfectly with the mapo tofu. I ate while blowing on the hot noodles, and soon enough, I started sweating. Ah, it was so delicious! It was also convenient to be able to pay with PayPay. There was a line at the payment counter. Thank you for the meal.

This is a restaurant in Xi'an. All the dishes here are delicious, but this time I couldn't decide between hot pot and individual dishes, so I went with individual dishes. The lamb skewers with cumin flavor, 4 for 1,056 yen, are spicy and delicious. The spices go well with the lamb. The Mapo tofu, for 1,298 yen, is very spicy. It opens up your pores and makes you sweat. The soft shell crab tempura with Sichuan pepper, for 1,628 yen, has tender crab and is delicious. The eggplant tempura with Sichuan pepper, for 1,375 yen, is a classic dish that I love.

XI'AN Nearest Station: Hibiya Chinese, Ramen Hibiya's Chinese, and Knife-Cut Noodles are the pioneers who have spread knife-cut noodles nationwide. I went for lunch, but it seems like a great place for drinking parties too, with a variety of courses available. It's highly recommended for lunch ❤️ The set meals are all 900 yen ❕ They have set meals of Yulin Chicken, Sweet and Sour Pork, Mapo Tofu, and Fried Rice, with free refills of rice and soup. You can eat to your heart's content! I can't eat spicy food, so I can't have the knife-cut noodles, but for those who like spicy food, the Spicy Chicken is the most popular! The Yulin Chicken set meal had tender and delicious meat. Definitely try it for lunch ✨ It's also great for dinner and drinking parties with a 2-hour all-you-can-drink option (from 5,500 yen). You can have a cost-effective drinking party! Today I was feeling a bit hungover. After finishing up some errands in Yurakucho, I went to "Xian" for lunch and ordered the spicy hot knife-cut noodles. They asked me if I was okay with cilantro, and of course, I welcomed it! I was happy to see plenty of minced meat in the noodles. I eat spicy hot knife-cut noodles at other places too, but the ones here are definitely delicious! It had been a while since I last had it, but I was completely satisfied. Thank you for the meal.

I was lured in by the sign outside before noon and guided to the 2nd floor. As I climbed the stairs, I noticed duct tape stuck in various places, giving me a bad feeling. There were no customers on the 2nd floor. The noodles were plentiful and on the softer side. The toppings seemed to be just tofu, ground meat, and coriander. When I finished the noodles, I found that there wasn't enough soup to eat with the rice. It doesn't seem necessary to order rice.
