Chef: Sure, go ahead. This is my first time taking photos in this restaurant. It's a bit embarrassing to ask now after coming here so many times (laughs). Well then, let's begin.
Appetizer: Simmered abalone and leafy greens (I forgot the name) in broth. The abalone is tender and delicious. The soybeans are also soft but have a good texture. The broth is refreshing and tasty, with yuba included.
Sashimi: Tuna, yellowtail, flounder, cutlassfish, squid. Flounder tastes great with just salt. Cutlassfish is also wonderful. The yellowtail has a nice amount of fat, not too overpowering.
Soup: Miso soup with wild boar meat, burdock root, Kyoto carrot, and asatsuki herb. It's a white miso base but not too sweet, very tasty. The wild boar meat is incredibly delicious, no gamey taste and the fat is sweet. I could eat a whole bowl of this.
Grilled dish: Red snapper, eel, rapeseed blossoms in broth. The red snapper has crispy scales and tender, moist flesh. The eel is well-cooked and flavorful. The rapeseed blossoms are lightly blanched and soaked in broth, offering a crunchy texture, sweetness, and a hint of bitterness. Fantastic.
Simmered dish: Rice octopus, fuki (butterbur) and octopus. Delicious. The fuki is not overcooked, retaining a crunchy texture and a strong aroma. The flavor of the fuki lingers and it's delicious.
Main dish: Yellowtail shabu-shabu with oyster mushrooms and mibuna greens. Delicious. The yellowtail is light and flavorful, with maximum umami. And the broth is outstanding.
Rice dish: Bamboo shoot rice, pickles, red miso soup. The first bamboo shoots of the year. Soft, fragrant, and delicious. Of course, I had seconds.
Dessert: Strawberry and setoka jelly. The setoka is delicious, sweet but refreshing. A perfect ending. Once again, I am completely satisfied. It was truly delicious. Thank you for the meal.
