Late-night indulgent parfait "PatissiereMAYO" At 9:00 p.m., in front of Tenso Shrine on Roppongi's Ryudocho Museum Street. Tenso Shrine is a power spot with the address Roppongi 7-7-7, where people believe that their wishes will come true. However, it is said that this shrine doesn't hesitate to use any means to grant wishes, so people who prayed for dieting here ended up experiencing unfortunate events like the restaurant they reserved being closed or dropping the ice cream they wanted to eat (laughs). While sharing such stories, after waiting for 15 minutes, we entered "PatissiereMAYO," a small shop that only serves freshly made desserts and alcohol with a counter for 8 seats. It is a referral-only time slot after 9:00 p.m., and we were invited by a regular customer to visit. The owner, Mayo Miyata, has worked as a patissier at famous places like Cuisine Michel Troisgros, L'arpege, and Hasegawa Minoru. As soon as we entered, she apologized for the wait. This day, many people ordered multiple parfaits, causing delays in the previous customer leaving. Although the seating is limited to 90 minutes, since each cake is made fresh, ordering multiple items may lead to exceeding the time limit. I wanted to try the parfait made with mango "Toki no Shizuku" produced by Minoru Hasegawa, but it was sold out, and it was also the last day. Instead, we ordered the melon parfait and cherry parfait, along with freshly baked mango shortcake and coffee. Mayo-san and I had met several times with Minoru Hasegawa, so she remembered me, and we chatted while watching the parfait being made in front of us. The parfait that came out was a combination of various fruits, creams, jellies, and jams that brought together the different shapes, sizes, and textures of cut fruits. For example, using rhubarb with melon. The cream was not too sweet and fluffy, harmonizing well with various acidic flavors. It was recommended to pair it with seasonal champagne cocktail (melon), and indeed, the bubbly drink matched perfectly with the parfait. Next, a shortcake was made in front of us. Sponge cake was cut in front of us, two types of sugar cream were whipped in front of us, fruits were cut, and they were layered together to create a simple white shortcake enveloped in whipped cream. Her sweets do not rely too much on the sweetness of sugar but bring out the sweetness and umami of fruits in a balanced way. By the way, she developed an egg and wheat allergy from making too many cakes. Nevertheless, she still has to taste various things, which seems tough. However, her continuous creation is driven by her passion for sweets. This shop will relocate on August 15, 2023, to the 3rd floor of the same building. The current location will reopen as "PatissiereMAYOflat" on August 12, 2023, with almost the same store layout. There, they will mainly sell seasonal flavor gelato (6-8 types) and baked goods. There is also a terrace-like area on the 3rd floor where you can enjoy the ice cream you purchased. I am looking forward to visiting this new shop as well. PatissiereMAYO is closed on Sundays, Mondays, and Tuesdays, open from 6:00 p.m. to midnight, and operates by appointment only. PatissiereMAYOflat is open without reservations from 2:00 p.m. to 11:00 p.m.
