Revisited - This year, my health check-up results were not as good as I had hoped, so I decided to clear out the cup noodles and instant ramen from my food stock at home. This place is originally from Fukuoka and is run by a comprehensive food manufacturer that originated from a soy sauce brewery established in 1893 (Meiji 26). The shop prides itself on using no chemical seasonings or preservatives. I purchased "Curry Udon" for 648 yen and "Nyumen Chicken Dashi Shio" for 540 yen at the Nihonbashi store, both of which were delicious. This time, I bought the following products that I have not tried before: "Luxury Nyumen (Sea Bream)" for 1,080 yen. This product contains regular nyumen noodles with a broth made of seared domestic sea bream, shaved kelp, yuzu peel, and bonito and tuna flakes. It is a bit pricey for a lunch option, but the richness of the sea bream, the crispy texture of the skin, and the refreshing aroma of yuzu make it a delicious dish. Thank you for the meal.

Chayano-ya's paper bag is in a New Year's greeting style. The bag looks expensive, and I was surprised by its gorgeousness and celebratory feel. Even though I only bought practical items like dashi packs and rice seasoning, I feel like I bought something expensive as I leave Takashimaya. I thought they would keep giving out the bags until they run out, but it turns out it's only until the 7th. It's perfect for New Year's greetings. Dashi packs are useful for those who cook, while freeze-dried miso soup or rice seasoning packs are handy for those who don't. They are more appreciated than sweets as they are consumed and disappear. This time, I got a large bag of dashi packs, chicken rice seasoning, and dry curry seasoning (for cooking in a rice cooker) for home use. I went to deposit the membership fee for Takashimaya's Friends Club and received a coupon for a 5% discount on purchases over 3,000 yen that can be used during the year-end gift season. I used it right away to buy a beautiful calendar with rose photos. It's hard to believe it only cost 300 yen. It's for charity and anyone can buy it at the Friends Club counter. I also bought my usual dashi pack (for home use), a hot pot soup base, and freeze-dried seaweed miso soup (for giving to others). Now I'm off to have sushi. *I was thinking of going to buy it soon, and I discovered this buried when I searched to see if the store had increased. The dashi I always buy at the Nihonbashi store. I sometimes forget to buy it on my way back from Midtown, but I knew it was in Shinjuku Takashimaya, so I wanted to visit. I happened to find it while wandering around. It's at the very back, a location that you wouldn't visit unless you knew about it. Well, I guess the customers here are all aiming for it, so it doesn't matter if it's in the back. It's great to be able to buy the dashi I always have at a store in a city I often visit. I can only buy it when I have few things to carry. It's still delicious. Once you start using this, you can't really use anything else. I'll visit again.

There are many dashi shops out there, but I always feel the most reassured when I visit this place regularly to make a purchase. I always buy the classic Chitoseya dashi with grilled flying fish. It's essential for simmered dishes and hot pot. I even add a little bit to sesame dressing. The rich and flavorful dashi is the best. I can't use the powdered dashi from the supermarket because I'm concerned about additives, and the taste is completely different. I really want to use it for miso soup that I make almost every day, but it runs out quickly. It's a bit pricey, so I feel like it's a waste to use it for miso soup, which is why I use the flying fish dashi from Kitano Ace for miso soup. Well, considering that it's additive-free and has an authentic flavor, maybe this price range is inevitable. It's also perfect for gifts. If I could ask for one thing, I wish they would open more stores. It would be great to have one in Ikebukuro or Shibuya.

This time, I visited here in the Shinjuku area to gather ingredients for sushi, and since we have run out of dashi stock at home, I came here to purchase it (laughs). Mixed rice seasoning dry curry 600 yen + Tax This product is used by mixing it with freshly cooked or microwaved rice (2 cups) and letting it sit for about 10 minutes to make dry curry. I followed the instructions and made it, and the curry was delicious with chicken, mushrooms, and carrots, with a moderate level of spiciness (laughs). Chanosha Dashi with grilled jaw 5 bags 358 yen + Tax I have purchased this many times before, and it is still delicious as always. Thank you for the meal.

I had a meal at Kayanoya, a shop operated by Kubara Honke Group, which was established in 1893 and specializes in selling products and running restaurants. They are known for their vegetable and egg soup, as well as their medium-spicy curry sauce. The shop originally only sold their "Kayanoya Dashi" through mail order, but due to good publicity, it has become popular among health-conscious individuals. The shop in Tokyo, where I used to live, was located in Roppongi's Midtown or Nihonbashi's Coredo Muromachi 3, but a new shop opened in February 2016 in the basement food market of Shinjuku Takashimaya, making it their 4th shop in Tokyo. The shop is for retail only, not a restaurant. I visited the shop with a friend who came from Japan and they bought the Kayanoya Dashi, freeze-dried soup, and retort pouch medium-spicy curry as souvenirs. The curry was meant to be refrigerated, but they brought it at room temperature. Despite this, the curry was rich in color and had a mellow flavor with a strong sweetness from the vegetables. It contained the classic trio of root vegetables (potatoes, carrots, onions) and beef. I used the method of heating it in hot water instead of transferring it to another plate and microwaving it. Kayanoya's online shop ships their dashi products internationally, which is good news for those living outside of Japan. However, delivery to some regions may be unreliable.

The shop mainly sells dashi packs. That's how I perceive it. Although I don't do it much anymore, I used to cook a lot. I used granulated dashi sold at supermarkets, tried different brands, used thickly sliced bonito flakes, dried sardines, etc. I even made dashi using a bonito shaver, or used Rausu kelp. My favorite dish at Japanese restaurants is the "soup." I believe it's made with the best dashi the restaurant has to offer. I have experienced some incredibly delicious soups that made me feel weak in the knees. So, it's pretty obvious that the dashi used in this shop is really good. The dashi bases available here are the best I know of so far. The only issue is the price, but they have a surplus of talent and offer dashi samples generously. Their products are attractive and the flavor never disappoints. Just adding a dash of their dashi to a pot of water instantly elevates the dish. While I appreciate the depth of flavor that comes from slowly extracting kelp, I end up with a side dish of kelp every time... This time, I purchased kelp dashi and a limited edition snack that was advertised. The rice cracker type with bits of rice had a burst of dashi flavor that was well-balanced and not overpowering. The bean snacks were also delicious. They may be expensive, but the pursuit of flavor is evident. The taste is not just about what you put in your mouth, but also the overall experience from the busy atmosphere in the store to the presentation. That's what these products encapsulate. That's the impression I got from the shop today.

The chicken becomes incredibly tender and juicy, even with Hinai-dori or Awa-dori chicken. 800ml sake, 50ml Chayonoya Chicken Dashi x2, ingredient dashi, kombu dashi (Liken) stick x1. Fried rice - Cold rice for 2 bowls (Indica rice can be warm, but regular rice should be cold to avoid becoming mushy). 2 beaten eggs (add one to the rice and let it sit for a while). Char siu or ham, garlic, Chayonoya Vegetable Dashi 1 bag, salad oil, soy sauce 1 teaspoon, sake 1 teaspoon, pepper, ingredients: scallions, etc. Quickly finish with high heat, add a little soy sauce at the end for a fragrant touch (much tastier than high-end Chinese restaurant fried rice).

The parent company, Kyuhara Honke Group, is a soy sauce shop founded in 1893. Ten years ago, they only had stores in Colette Machida and Roppongi Midtown, but now they have 15 stores in the Tokyo area. Their brand power is still strong as their products are not sold in supermarkets. The soy sauce is delicious and makes a great gift or souvenir. It is well-received by both men and women, bringing indirect satisfaction to the gift-giver. Their basic products are a must-have at home once you try them. I purchased some for gifts and to restock my own supply this time as well.

I bought freeze-dried miso soup from Chionosha before. It's a bit expensive at around 200 yen per serving, but it's so delicious that I really want to eat it. Chionosha has stores at Tokyo Station and Nihonbashi (Coredo Muromachi), which are closer to my workplace, but I came all the way to Shinjuku Takashimaya because I can use my Ponta points there! They have red miso soup (4 servings) for 750 yen + tax, burdock miso soup (4 servings) for 750 yen + tax, low-salt Shiono-nanakusa miso soup (4 servings) for 750 yen + tax, and low-salt Aosa miso soup (4 servings) for 750 yen + tax. The Shiono-nanakusa and Aosa flavors are now available in reduced-salt versions! It's true that they taste a bit lighter if you use the same amount of hot water as before... but the broth is still rich, so it's delicious after all. The Chionosha dashi pack with grilled flying fish (12 packs) for 850 yen + tax is a staple in my house. I use these dashi packs to simmer daikon radish, and it turns into a very refined dish. It seems that you can also break open the dashi pack and use it as a seasoning. I paid for everything using my Ponta points. I'll definitely come back to buy more next time!

I received the famous Chionosha's seasoned rice mix, known for its additive-free dashi. I tried the "dried young sardines" and another one that I forgot to take a picture of, which was "five types of mushrooms." You just need to soak one packet in 2 cups of rice for 30 minutes and then cook it. I wasn't expecting much from retort seasoned rice, but it was truly delicious. It had a refined and gentle taste, without any unnecessary flavors or smells. It was like having restaurant-quality rice at home. I also received their dashi seasoning, which I forgot to take a picture of, but it makes a really good broth.
