This Chinese restaurant is located less than a 3-minute walk from Takadanobaba Station on the JR Yamanote Line, towards Waseda University. It's on the second floor of a building, and since there is no sign outside indicating that they are open, it takes quite a bit of courage to check if they are indeed open. Being a new restaurant, my curiosity got the best of me and I decided to pay a visit. As soon as you enter, there is a ticket machine with a variety of options, making it difficult to decide what to order. Additionally, it seems that there are many types of noodles available for the knife-cut noodles, and you have to choose one. Not wanting to take too much of a risk, I decided to go with the Spicy Beef Knife-Cut Noodles, a dish I have had before. The restaurant is surprisingly spacious, with not only a counter but also table seating in the back. Despite the fact that it's hard to tell from the outside whether the restaurant is open, there were several Chinese customers inside, giving it a somewhat exclusive feel. After a short wait, the dish was served. The Spicy Beef Knife-Cut Noodles looked very flavorful and spicy. I dug in right away.

The bowl was larger than those at regular ramen shops, filled with plenty of soup and noodles. The portion of noodles was generous, not skimping at all. It seemed even more than a regular serving of tsukemen. Since it's a Chinese restaurant, I wasn't expecting the rich umami flavor of Japanese ramen broths. Indeed, the soup lacked depth in flavor, but it was hot and had a good spiciness that was pleasant. The distinctive scent of cilantro was also effective. The finely sliced beef added a nice touch. It was a good break from the noodles. Without it, I might have gotten tired of the dish due to the large portion. By the middle of the meal, sweat was dripping from my forehead, and my mouth was feeling quite numb. The thick and chewy texture of the knife-cut noodles stood out, and I savored the happiness of eating noodles. The sharp female staff efficiently managed the place, and it felt like the kitchen was in sync. The content was flawless, so the key will be in the proper marketing. There has been an increase in Chinese noodle shops recently, but I found this one to be particularly delicious. Thank you for the meal.
