Food & Drink Evaluation: The fillet cutlet is cooked to perfection, with a hint of pink in the center of the fillet meat and a slight juiciness when cut. The texture is just right, with a delicate and fine quality typical of fillet meat. The coating is thin and crispy, providing a pleasant crunch and allowing the meat's flavor to shine through. Overall, it is a very refined and delicate tonkatsu. Each piece is quite large, offering a satisfying dining experience. Various condiments such as yuzu pepper, seaweed salt, homemade sauce, mustard, and Japanese-style sauce are provided. Personally, I preferred the seaweed salt on its own to fully appreciate the meat's flavor. The Japanese-style sauce, a blend of soy sauce, vinegar, grated radish, and sesame, pairs well with the elegant fillet cutlet, but the slight acidity was a bit distracting. A simple sauce of dashi, soy sauce, mirin, and salt would be more suitable. The shredded cabbage is fresh and crunchy, served with a slightly spicy sesame dressing. The red miso soup with mushrooms is delicious, and the pickles are of high quality. The rice, cooked in a feather pot, has a firm texture, distinct grains, and a sweet flavor. The attention to detail in every dish, from the tonkatsu to the side dishes, reflects the restaurant's commitment to quality.
Ambiance & Service: The interior is chic and stylish, creating a welcoming atmosphere. However, as it is primarily a counter-style restaurant, it may not be conducive to lingering. The cleanliness is impeccable, and the service is extremely polite. Despite the busy lunch hour, the staff continued to be attentive and courteous until the end of the meal, leaving a positive impression.
Revisit: The food was delicious, and I would definitely like to return to try the pork cutlet next time.
