I don't usually go to newly opened ramen shops, but when it's in the neighborhood and offers a conservative yet unique style of ramen, I decided to give it a try. This time, I visited a ramen shop called "Yatagarasu," which is said to be produced by the same people behind the shop in Kudanshita. I had some personal memories in Kudanshita that prevented me from visiting the shop there before, and I heard they were only open on weekdays back then. Since I recently moved to Suidobashi, I haven't had the chance to go there yet. Anyways, I went on a weekday night and found some available seats without having to wait. I ordered their recommended dish, the "White Wonton" in a large size. The soup was light and seemed to be either a salt-based or soy sauce-based broth, but either way, it had a good balance of flavor and a nice edge to it. The noodles were unique, with a hint of shrimp shell mixed in, which paired well with the soup. The wontons were a recent trend, with chopped shiso leaves adding a refreshing touch to the savory filling. The chashu was cooked at a low temperature, resulting in a tender and moist texture. Overall, the ramen had a conservative yet distinctive style, with added twists that made it stand out while still fitting within the traditional ramen framework. It was exactly the kind of shop I was looking for in the neighborhood. The bill was also reasonable at 1,200 yen, considering the current inflation in ramen prices. I look forward to trying their recommended "Black Chashu" next time.

I visited this restaurant for the first time by myself during lunchtime. It is conveniently located near Kodemma-cho Station. I arrived at 1:00 pm and found that the small restaurant with 8 seats was full, so I had to wait a few minutes. By the time I left, there were already three people waiting in line, indicating that this is a popular spot in the area. The customers were a mix of young office workers, as well as a couple of older couples, showing that the restaurant is loved by a wide range of ages and genders. Upon entering the restaurant, I purchased a ticket for the most popular dish, the White Shrimp Wonton for 1050 yen, as it was my first visit. I also added a side of bonito rice for 200 yen. The food was served within a few minutes and looked beautiful. The clear, light soup appeared to be mild, but it had a deep flavor profile with a fairly strong seasoning of dried fish, chicken, and pork. However, it was gentle enough to be able to finish the soup until the end. The shrimp wonton was a combination of plump shrimp and meat, which included shrimp, pork, and chicken. The wonton was not just a lump of meat, but had a refreshing flavor that was outstanding, thanks to the addition of green perilla. The restaurant, produced by Yatagarasu, had noodles that were typical of Yatagarasu - firm and slightly chewy, with a subtle flavor. There was only one staff member, who I assumed was the manager, but they were cheerful and had good customer service, leaving a positive impression. It is important. On a side note, I felt like the manager might be a fan of anime. I went there for the first time. I arrived around 12:30 and there was no wait, so I could enter smoothly. It was a little cooler that day, and I ordered the limited-time cold ramen. The flat noodles were very delicious. I plan to try the regular (hot) ramen next time.

The shrimp wonton ramen is delicious and standard. It has a nice shrimp flavor, and the wontons seem to have cilantro in them. The cold ramen is refreshing and slightly sour. The noodles are smooth and slippery. The chicken chashu is well-seasoned and tasty. The katsuobushi rice, with wasabi in it, is really delicious when mixed with the ramen broth. Overall, I was very satisfied with the food and service, and didn't have to wait long to be seated.

I visited "Nihonbashi Tokiwa" in Kodenmacho! The shop, produced by "Yatagarasu," opened in April 2023 and is already a popular spot. I ordered the "White Shrimp Wonton" and "Bonito Flakes Rice." The visual presentation of the White Shrimp Wonton was stunning, with a clear yet flavorful broth. The noodles were firm and had a nice texture. The toppings, including the Char Siu and additional shrimp wonton, were delicious. The Bonito Flakes Rice served as a perfect ending, turning the remaining soup into a flavorful porridge. I enjoyed every last drop of the meal!

The order was "Shiroebi Wonton", totaling ¥1050. The soup was light and refreshing, but still had a rich flavor and depth. The broth had a low oil content and the thin whole wheat noodles were satisfying. The wontons were tasty, with a hint of acidity that I didn't mind, although I wished they had more of the firm texture of shrimp. The noodles were a bit too firm for my liking. The chashu was delicious, but the menma was average. The best part was the incredibly fast service (maybe because I was the first customer). I had high expectations, so it was disappointing that it didn't quite match my preferences. I don't think I'll be visiting again. Thank you for the meal.

The best recommended dish at the strongest light ramen shop in Komachimachi is the "White Ramen (Salt) ¥1,050", which has a high level of transparency and an elegant taste. The chashu is light and goes well with the clear soup. The "Black Ramen (Soy Sauce) ¥1,250" has a strong soy sauce flavor with a rich yet refreshing taste. Both are topped with shrimp wonton which has a chewy exterior and juicy interior, adding a delicious touch. The noodles are thin and beautiful, and the thick menma, spinach, and green onions complement the noodles well. For dessert, try the "Bonito Flakes Rice" by pouring soup over it and sprinkling black pepper on top. The manager, Mr. Owada, loves anime, so anime songs are played in the shop and there are Uma Musume figures displayed. He is very friendly and kind, so anime fans and ramen lovers will surely enjoy chatting with him.

First visit. I tried the recommended dish, Shiro, which is basically salt ramen. It has a light soup with thin noodles and plump shrimp wontons. Delicious. However, I think the soup could use a bit more punch. At first, I ate it as is, but later added some pepper for that extra kick. Next time, I might try the soy sauce-based black ramen.

Since the pre-opening, I went to eat because they started serving chilled dishes. During the pre-opening, they said the curry was finished so I couldn't eat it. However, they were serving it to acquaintances who came after me. Unlike Yatagarasu, this place seems more geared towards the general public in the neighborhood rather than enthusiasts. The ramen and curry are not extraordinary but simply delicious. It's a good place for regular use. In Ningyocho and Kodenmacho, where strong competitors abound, new award-winning restaurants are opening one after another. With Hamakatsu right behind Suzaku, enthusiasts might lean towards Hamakatsu. But if you have children, you'll probably choose Suzaku.

Located right next to the Kodenmacho Station, there is a ramen shop called Shuuro. It is within walking distance from Kanda Station and Higashi-Nihonbashi Station. The name of the shop comes from a bird, and it is supervised by the famous ramen shop "Yatagarasu". The interior of the shop is compact with only 6 counter seats. You purchase a meal ticket at the entrance before taking a seat. I visited on a Friday night and there was no wait, but sometimes it can get full depending on the timing. I ordered the following: - White Shrimp Wonton ¥1,050 - Black Shrimp Wonton ¥1,050 - Katsuobushi Rice ¥200 The white broth was clear with a hint of saltiness. It was refreshing yet had a savory oiliness to it. The black broth had a darker soy sauce color. It looked quite rich but tasted surprisingly refreshing with a good balance of richness and sharpness. The noodles were thin noodles with whole wheat flour. The shrimp wontons were packed with shrimp and had a satisfying texture. The chashu used purebred Duroc pork belly, which was moist and fatty, best enjoyed towards the end. The bowl also included thick bamboo shoots, spinach mixed with bonito flakes, creating a well-balanced dish. Lastly, pour the soup over the bonito rice and enjoy the aroma as a finishing touch. The black pepper on the table also goes well with the dish. Thank you for the meal!

The bonito flakes on the bonito rice were fluffy ☺️ When I poured the remaining soup over it, it was like a delicious ochazuke ✨ The soup of the black shrimp wonton (soy sauce) was refreshing, but also had a gentle flavor with a rich umami taste, making it delicious ☺️ This restaurant is produced by "Yatagarasu" and is a super popular place with a concept of ramen that is not too distinctive and can be eaten every day. Located just a 2-minute walk from Kodenmacho, I tried the recommended menu at Nihonbashi Suzaku: White Ramen (Salt), Black Ramen (Soy Sauce), with toppings of Chashu and Wonton. I also had the Katsuo-bushi rice. The soup was clear and refreshing, with a light and savory soy sauce base. The plump shrimp Wonton paired perfectly with the thin noodles. The homemade Wonton was delicious. Lastly, pouring the light soup over the Katsuo-bushi rice was exquisite. The bright atmosphere and friendly staff make it welcoming for women as well. Ramen lovers should definitely give it a try!

I recommend ordering both the white (salt) and black (soy sauce) ramen, and adding the recommended shrimp wonton topping. Lunch visit in Tokyo. I visited a place that opened this year in Ko-umamachi that I was curious about. I checked the ticket machine, and it seems that white is salt and black is soy sauce for the menu. Even though I was in the mood for soy sauce, I wanted to try the recommended dish since it was my first visit. I ordered the recommended No.1 item, the white shrimp wonton for 1050 yen. The presentation of the noodles and clear soup was great! The soup had a perfect balance of saltiness with a rich seafood umami flavor that matched perfectly with the broth. It also had a hint of animal-based richness. I couldn't identify it myself, but it was incredibly delicious soup! The noodles were whole wheat straight thin noodles, perfectly cooked so you can bite through them easily. They had a great flavor and were enjoyable to slurp. The shrimp wonton had a bouncy texture with a chewy skin. The shrimp flavor with the accent of ginger was very delicious. I understand why it's recommended. The combination with the soup was excellent and incredibly tasty. The crunchy bamboo shoots and mildly flavored chashu were best enjoyed with the soup. I was completely satisfied with the unexpectedly delicious taste. It was very delicious!

I finally tried the ramen shop near my company that I had been curious about. The ramen had thin noodles made with whole wheat flour from Kanou Seimen, which were delicious. The salt ramen broth was also tasty. The char siu was generous in portion and delicious.

The restaurant opened in April! I ordered the white shrimp wonton and bonito rice. The white ramen has a clear salt-based soup and straight thin noodles with whole wheat mixed in. When I checked Tabelog, I found two new ramen shops in Koedenmachi, opened on April 17, 2023, with 125 reviews in just 3 months. This seems reliable. It's probably this place... What was it before? I can't remember anything these days... White, black, shoyu, and shio. Until recently, ramen was synonymous with shoyu. But now, I'm leaning towards shio. The ramen era of shoyu, shio, and miso. Salt is gaining popularity. I'll give it a try. There aren't many ramen shops nowadays that you can have high expectations for. The shop opened on June 16, 2023, in Nihonbashi. It seems they were produced by "Kudanshita Yatagarasu" that I liked. I don't have many good memories of producer-style ramen shops. How involved is the producer really? I can't say in this day and age. Well, let's try it out. It's probably safe. A try. Nowadays, there aren't many ramen shops you can have high expectations for. On the left, there are recommendations for White Shrimp Wonton No. 1 and Black Chashu No. 2. White includes salt-based ramen, white ramen, white shrimp wonton, white chashu, and white shrimp wonton chashu. Black includes soy sauce-based ramen with the same variations. Prices range from 850 to 1450 yen, with an extra 150 yen for a large serving. I've been leaning towards saltier flavors lately, so I'll go with the White Shrimp Wonton. Wait, is "White Shrimp Wonton" just the wonton? I asked to confirm. The noodles are included!! I forgot to check if the noodles were cooked al dente. Can you make the noodles firm? The shop replied, "We usually serve them slightly firm." Can I trust them? I said, "Then, slightly firm, please." "White Shrimp Wonton with noodles." Beautiful! The clear broth with Sugo Seimen's speckled noodles. It looks perfect. Let's slurp... Oh, it's not slightly firm, it's slightly soft... The noodles from Sugo Seimen, I've encountered them many times, but I don't always like them. It depends on how they cook the noodles. The delicious clear soup, I'm a soup lover... It's delicious. My expectations were too high based on appearance. The chashu is well made. It's a well-crafted ramen shop. I kept wondering what it was that made me feel this way. The appearance exceeded my expectations. Maybe the noodles were slightly soft and the soup wasn't too hot, so it didn't overflow.
