Today, I had some free time in the morning as planned, so I had a few ideas in mind and was unsure which one to choose. I decided to head to Sugamo to try the "Sugamo Ramen" for breakfast! "Sugamo Ramen" is a popular restaurant that opened in May of this year (2022)! Personally, when I heard the name "Sugamo Ramen," it reminded me of a famous "Chatcha-style ramen with back fat" shop that I had a soft spot for. I did some research and found out that the location was near the Toshima Market, similar to the previous shop, but the ramen itself was completely different. However, the fact that they were open 24 hours and served "morning ramen" intrigued me, so I decided to have a quick breakfast ramen here and then head to my planned destination to have a leisurely morning. I arrived at the shop by walking down Shirayama Street to the right (towards Itabashi) from the north exit of Sugamo Station. The shop is located on the 1st floor of an apartment building, with a narrow entrance but with red flags indicating ramen, making it easy to spot from a distance. The interior of the shop was small with only L-shaped counter seats. When I visited around 7:15 am today, there was one customer already seated and no one else waiting. I purchased a ticket for the basic soy sauce ramen (600 yen) from the ticket machine on the left side of the entrance, feeling a bit indecisive. After placing my order, the soy sauce ramen arrived in a few minutes. It had a very simple appearance, with a clear soup and slightly curly flat noodles. I was excited to see how it tasted! I took a sip of the hot soup, and it was delicious! The hot soup had a light and gentle taste with a slight animal-based richness and a vegetable-like base. Although the seasoning was quite subtle, it was easy to drink and I found myself sipping it involuntarily. The slightly curly flat medium-thick noodles were smooth and slippery, allowing the soup to coat them nicely as I slurped them up. They had a good chewy texture, a slight wheat fragrance, and a good mix with the soup, but I felt that the lack of seasoning prevented the flavor from fully expanding. The chashu was thinly sliced pork belly rolls, and the slightly sweet seasoning gave it a distinctive flavor. The bamboo shoots had a crunchy texture and a light seasoning with chili oil, making them delicious. The greens, which I think were Chinese cabbage, added a light bitterness as an accent. There were chopped green onions on the table for self-service, and adding them gave a nice flavor and texture accent. Finally, I savored the remaining soup once again, and as I drank it slowly, I found that it had a light yet rich taste with a subtle seasoning that didn't bother me. My impression of the ramen improved significantly, and I couldn't stop drinking it until I finished the bowl. Overall, the price range seemed reasonable, and the ramen had a good value for money. Although there were some aspects that I couldn't fully appreciate, such as the toppings and the subtle seasoning, the soup itself was light yet flavorful, and I was completely satisfied. I think the location near the Toshima Market is convenient, and the 24-hour operation makes it very user-friendly. I would definitely visit again when the timing is right!
