The rich chicken broth miso soup with an accent of seaweed flavor exploded with umami. The spicy miso gradually melts into the soup, stimulating the appetite in a mysterious way as you eat. The hand-kneaded curly noodles are chewy and satisfying to eat. I should have ordered extra noodles. For some reason, Yamagata ramen has captured my heart and won't let go. Thank you for the meal. The restaurant's limited lunch hours make it difficult to visit often, but I want to keep coming back for this delicious ramen.

When it comes to spicy miso ramen in Yamagata, it has to be "Ryu Shanghai." I've had it a few times at the Shin-Yokohama Ramen Museum. They also have soy sauce ramen, but if you come here, it's all about the "spicy miso ramen." I ordered it with a flavored egg and half rice. The noodles are medium-thick curly noodles, and the toppings include chashu, naruto, menma, green onions, and seaweed. In the center, there's a bright red garlic-infused "spicy miso ball." The chashu is two slices of tender pork belly placed on top of the half rice, along with menma and the spicy miso ball. It's like making a mini chashu rice bowl. The restaurant was empty that day due to the stormy weather as a typhoon approached the Kanto region, but it was perfect for enjoying a hot bowl of ramen. The spicy miso ramen with rice, as always, was finished completely. This place operates during the day by renting space from an izakaya, and it's the second branch of "Sapporo Miso Ramen Aoiha" nearby. After a pre-opening period, it officially opened on June 27, 2023.

This new restaurant in the area serves Yamagata ramen, which is quite rare around here. However, they also run a bar at night, so it's a kind of dual-purpose place. I tried the Yamagata spicy miso ramen. The nori (seaweed) was surprisingly impressive. The soup is a chicken broth with a mild miso flavor. The red pepper adds a nice level of spiciness! The hand-kneaded noodles are delicious. Yamagata is a prefecture known for its high ramen consumption. I'm thinking of trying the normal soy sauce ramen next time!

Visited on a Sunday afternoon. Came across a new restaurant in Naka-En and decided to try it out. The place seemed to specialize in spicy miso ramen, so I ordered it with a seasoned egg. The service was quick, and the food was delicious, especially on a hot summer day. It was a great dining experience.
