It's about a 10-minute walk from Shichijo Station to a sushi restaurant at the Four Seasons Kyoto. I was able to make a reservation on a booking site during a busy period when everywhere else was fully booked. The lunchtime at hotels in Kyoto is surprisingly quiet because most visitors go out for lunch. The restaurant has a large counter made from a single wooden board, located to the right of the entrance of the Four Seasons Kyoto. I enjoyed the lunch course I reserved through the booking site, along with the recommended sake. The sushi was delicious, and I almost had the place to myself. The head chef was friendly and entertaining, making it a very enjoyable experience.

Located on the 3rd floor of the luxury hotel Four Seasons Kyoto, Sushi Wakan offers Edo-style sushi in Kyoto. Dinner time is divided into two sessions. Private rooms are available for a relaxing dining experience. The sushi rice had a slight sweetness with minimal acidity. The attention to detail in the ingredients was evident, and the sushi was delicious.

We stayed at the Four Seasons in Kyoto on this day and heard that Mr. Masuda and Mr. Yamaguchi had left, but our companion wanted to eat sushi, so we ended up making a big mistake. The price is top-notch, but the skill level of the sushi chef was terrible. It felt like a gathering of culinary school students... To make up for it, we went to eat ramen with our companion.

I was a bit skeptical about being able to enjoy authentic Edomae sushi while staying at the Four Seasons Kyoto, thinking it might be more geared towards tourists. However, I was pleasantly surprised by how delicious it was. While it may be a bit pricey, it's worth it considering the cost of staying at a hotel that costs tens of thousands per night. I will definitely make a reservation again next time I stay there.

Today, I visited Sushi Wakon located inside the Kyoto Four Seasons Hotel. Just a note, I cannot take photos of the food or the interior here. (Other bloggers may post photos of the food, but why?) Here, you can enjoy authentic Edomae sushi in Kyoto! I have been here for work before, but today I am here for a private meal, sitting at the counter and enjoying sushi prepared by the chef. The interior has a wonderful atmosphere! It's a shame I can't take photos. The meal begins! Starting with appetizers and moving on to nigiri, the fluffy shari and fresh toppings are superbly done! The chutoro leaves a lingering taste! The shrimp is plump and delicious! Oh, I wish I could take a photo (^^) Everything at the counter, from the tableware to the chefs, is perfect! Of course, the prices are quite high... Today, I enjoyed the sushi meal thoroughly! Thank you. After the meal, I had coffee and dessert at the hotel's cafe lounge before heading home. Thank you for another delicious meal today!

The Four Seasons Hotel in Kyoto has been awarded one star in the Michelin Guide Kyoto-Osaka 2018. After visiting there, I went to Sushi Masuda in Aoyama, Tokyo. It turns out that Masuda-san has passed on his skills to Wakan, an Edomae sushi restaurant. The atmosphere at Wakan is open and spacious, with a high ceiling and a striking 8-meter counter made from a single piece of Japanese cypress. The overall calm and chic ambiance, along with the faint scent of cypress, soft colors, and warmth, create a comforting atmosphere. The gentle head chef skillfully prepared each piece of sushi before us, providing attentive and hospitable service throughout the meal. I left feeling completely satisfied and would love to visit again. The dinner course I had that day was the Deluxe Chef's Choice Course, which included the following dishes in the order I ate them:

※Note: When I visited in 2018, photography was allowed, but it seems to be prohibited now. I made a reservation at a rather upscale restaurant for entertaining purposes. As a sushi novice, I may have appeared out of place, but the head chef welcomed me warmly. The dishes were beautiful, and what stood out the most were the traditional utensils and sake cups they used, which made me nervous not to break them as I cautiously enjoyed my meal. The customers seemed delighted by this presentation. The sushi was authentic Edomae style, with a subtle vinegar seasoning on the rice, elegant and light overall, with small portions that might leave younger diners in their 20s or early 30s feeling unsatisfied. I felt that at the time, but I imagine the depth and excellence of this restaurant become more apparent over the years. As for value for money... it's nonsensical to discuss that for a restaurant inside the Four Seasons Hotel.

I feel like I have overturned the notion that sushi restaurants in hotels are not delicious for the first time. Due to its location, there are many foreigners, but this is one of the few places in Kyoto where you can enjoy delicious sushi.

I stayed at the Four Seasons Hotel Kyoto and was very well taken care of. The private room fee was free, which was very helpful. I wish the Ritz-Carlton Kyoto would follow suit as their private room fee is too high. As for the food, the course was 30,000 yen. As others have mentioned, all the ingredients are air-flown from Tsukiji. They alternated between appetizers and sushi, with a wide variety of sake. The appetizers included a dish of hair crab and caviar with Tosazu jelly, steamed abalone, and steamed sea bream in sake. The first round of sushi included flounder and squid. The second round included tuna, hirame, shrimp, salmon roe, sea urchin, and conger eel. The appetizer of dried fish was a bit confusing. The soup from the steamed sea bream was delicious. The sushi rice was glossy and stood out, but slightly firm, making it a bit difficult to eat without it falling apart. The quality of the ingredients was great, but I wish there was more explanation about where the tuna and sea urchin were from. Maybe because I was in a private room? I would like to try sitting at the counter next time to experience the head chef's sushi.
