The silk cotton tofu (referred to as "Kenmendof" instead of "Kenmin tofu"), soy milk, ganmo, and yuba purchased were all excellent. The soy milk is like drinking tofu, with a rich flavor that may divide opinions, but the strong scent of soybeans is undeniable. The yuba is also a different experience from department store products, and Kenmendof is neither silk nor cotton, with a pleasant texture and a soybean fragrance that is indescribable. Nowadays, even the tofu from typical supermarkets has changed in quality, with a consumer-oriented approach that is off-putting and makes it difficult to enjoy. In contrast, the shop with the research institute in the corner of Tabata Ginza shopping street is truly bold and determined in their pursuit of their goals.
