I originally planned to have the Iwanaka pork belly shabu-shabu at Shabuzen Roppongi, but due to having tonkatsu for dinner the night before, I decided to switch to beef shabu-shabu instead. I ended up trying the limited-time three major Wagyu beef (Kobe beef, Omi beef, Matsusaka beef) comparison and a piece of Mazuda beef sirloin. I got off at Roppongi Station on the Hibiya Line and walked towards Tokyo Tower to reach Shabuzen Roppongi. It had been 17 years since my last visit in 2004, and the atmosphere of the restaurant had changed significantly. After being seated, I was served with water, appetizers of roast beef and fresh vegetables. The roast beef with raw onions and a slightly sweet sauce was delicious, and the fresh vegetables served in an ice-filled container looked refreshing. Dipping the vegetables in the special sauce enhanced the flavor even more. Soon, the comparison of Omi beef, Kobe beef, Matsusaka beef rib roast, Mazuda beef sirloin, vegetables, rice, ponzu sauce, sesame sauce, chili oil, and grated garlic were brought to my table, and I enjoyed the shabu-shabu. I tried the rib roast of Kobe beef, Matsusaka beef, Omi beef, and the sirloin of Mazuda beef in that order. Matsusaka beef rib roast had the best silky texture, while all meats had a rich umami flavor that was hard to rank. The vegetables included two types of mushrooms, tofu, kuzukiri, and Chinese cabbage, providing a variety of options. The finishing udon had a unique light green color. For dessert, I had vanilla ice cream with a creamy texture and rich sweetness that was excellent.
