The owner of the shop seems to have returned to reopen his family's sushi restaurant after working as the sushi chef at Yokohama Bay Sheraton. You can taste the flavors of a high-class hotel here. I used to visit here about 2-3 times a year in the past, so it's been about 14 years since my last visit. The sushi here has always been delicious, and I'm looking forward to seeing how it has changed with the new generation taking over. It's often fully booked on weekends, and after several failed attempts, I finally managed to make a reservation and visit. I didn't look at the menu and just went with the omakase course. I think it included the chef's recommendations. After finishing the omakase, I ordered a few extra pieces and had around 20 pieces in total. The chutoro and otoro were delicious, but the chutoro was especially amazing, melting in my mouth the moment I took a bite. The botan shrimp was large and sweet with each bite. And the anago was exceptional, fluffy and soft, just how I remembered it from 14 years ago. The fish sourced daily from Tsukiji Market was fresh, but what really stood out was the perfectly balanced vinegared rice, making each piece a delight to eat. It was delicious 14 years ago, but it has evolved into an even more delicious experience now. The total cost was around $100 per person.

The son seems to have taken over the sushi department at a famous hotel in Yokohama and is known for his polite and excellent customer service. I made a reservation over the phone and was treated with great care. The counter was full, so I sat at a table and ordered a set menu for lunch, and then added two extra orders. The sushi was beautifully crafted and delicate. Thank you for the meal. I would like to come back next time and enjoy a leisurely dinner at the counter.

The chef who used to work at the Yokohama Bay Sheraton Hotel took over as the second generation owner and reopened the restaurant. We had the "Isshin Omakase Sushi" for 3,850 yen (tax included) at the time. We enjoyed a variety of dishes such as flounder, tuna, chutoro, squid, button shrimp, new salmon, simmered clams, anago, tekka maki, tamago yaki, and miso soup, all served one by one at the counter. It was a truly blissful experience.

Hachioji Sushi Isshin is a great place. It's a sushi restaurant that also serves as a residence. It's located near Chofu Junior High School with no other shops around. The phone number starts with two digits, so it's not a new establishment. There are no lunch specials advertised. When I asked if they serve lunch, the owner said they don't, and the prices for nigiri sushi are 1000 yen, 1200 yen, and 2000 yen. I ordered the 1200 yen nigiri, and got two pieces of tuna in the first half, five pieces as listed, two more pieces and a roll in the second half, and miso soup at the end. The owner makes the sushi, miso soup, and serves tea. The place seems to have been running for many years, with not many customers passing by. The owner is friendly and the conversation flows easily. Keep up the good work, owner-san.
