Thank you for viewing. I hope you can give me your "likes," "follows," and save the shop. I revisited "Ginza Kani Mats," a Matsubagani (snow crab) specialty store that opened in December 2022. The head chef, Takuya Tanaka, originally from Tottori, runs two fresh fish restaurants in Tottori City, "Shunsai Kokorobi Honten" and "Tottori Bishoku Kokorobi Suehiro-dori Store." "Ginza Kani Mats" operates only during the Matsubagani season, from November to around March each year. The most shocking dish of the day was the "Kohako Kani Don" (Kohako crab bowl), with miso marinated in soy sauce as an accent, perfectly complementing the crab meat and rice. It was incredibly delicious. Unfortunately, Kohako crab is now out of season, so I'll have to wait until next season to try it again. The dishes I had that day were as follows:

I visited the newly opened Matsuba crab cuisine specialty store "Ginza Kani Matsu" in December 2022. The delicious Matsuba crab is only available from November to the end of March, so the store is closed outside of the Matsuba crab fishing season. It is a limited-time shop that delivers the highest quality Matsuba crab from Tottori to Ginza, Tokyo. The owner, Takuya Tanaka, is from Tottori and operates two seafood restaurants in Tottori City: "Tottori Bishoku Kokorobi Suehiro-dori Shop" and "Shunsai Kokorobi Main Shop." The store is the only one in Tottori City that owns its own fishing boat. The brand new interior features a modern and calming space with a clean white wooden counter seat with minimal steps. This time, I dined at the counter seat and enjoyed the following dishes:
- Matsuba crab soup
- Matsuba crab marinated in kelp
- Matsuba crab sashimi
- Butter-grilled crab claws with micro tomatoes
- Matsuba crab and bamboo shoots

I have attached photos, but these are all wonderful dishes. My personal impression is that the Matsuba crab and Tottori Prefecture's Koshihikari rice porridge was particularly delicious. The amount of Matsuba crab was more than the rice, so the rich flavor and taste of the crab stood out, making it a very tasty dish. I was able to enjoy the true flavor and umami of the crab, and I got excited about how delicious the crab was. I focused solely on the crab during this time. The employees and the owner, Mr. Tanaka, provided excellent service, and I had a great time. I would love to visit again. Thank you for the wonderful meal.

From November to March, the restaurant is open, while it is closed from April to October. All dishes feature crab at Ginza Kanimatsu. Unlike other crab specialty restaurants that serve sashimi or non-crab dishes, Ginza Kanimatsu serves only crab dishes! The head chef is very kind, and the seasoning is just to my liking! I love crabs, so I visited the newly opened Kanimatsu-san. They receive fresh Matsuba crabs directly from Tottori, and I could feel the master's discerning eye and dedication. The fresh interior and attentive service make for a calming atmosphere. They also pay attention to their tableware. The creative dishes not only taste great but are visually appealing as well. The season for snow crabs is ending, and the restaurant will be closed until the next season. I will visit again in November.

Last year at the end of the year, I visited Kanimatsu for the first time. On this day, I went with a close friend who is like family. The course meal, made with generous use of large and splendid Matsuba crabs, was one of the most delicious crab dishes I have ever had. I visited a new restaurant called Kanimatsu in Ginza, which just opened from Tottori Prefecture. We had a 1.2 kg Matsubagani (snow crab) and the crab miso soup was exquisite. The bill came out to 140,000 yen for two people. I wonder if this is a normal price for eating Matsubagani in Ginza. The price of the crab may vary slightly depending on the amount caught each day. A specialty store for Matsuba crabs has opened in Ginza 8-chome. They use Matsuba crabs from Tottori Prefecture and offer only crab courses, making it the first of its kind in Tokyo. The store operates only during the crab fishing season, from early November to late March. It was a surprise to find such a unique store in Ginza. I visited for the first time in mid-January 2023.
Course details:
- Matsuba crab shinjo (soup): The crab meat is so tender that it crumbles easily with chopsticks, and the flavor is richer than other stores.
- Seiko crab (low-temperature cooking): The chef prepares the crab in front of you, and the dish is served with the crab meat beautifully arranged in the shell. The crab is cooked at a low temperature, resulting in incredibly delicious meat.
- Matsuba crab with kombu: Crab kombu served in a beautiful glass dish. It has a light kombu flavor with a finishing touch of vinegar and yuzu, creating a delightful taste.

The chef prepared various dishes for us, including Matsuba crab sashimi, crab miso, and butter-grilled crab. Each dish was rich in flavor and showcased the quality of the Matsuba crab. The highlight was the Matsuba crab shabu-shabu, which was my personal favorite of the day. The fibers of the crab were tender and flavorful, and the dish had a perfect balance of ingredients. Overall, the experience of dining on Matsuba crabs at "Ginza Kani Matsu" was truly exceptional.
