Kayanoya, a famous natural food restaurant in Fukuoka, opened in April 2013 at Grand Front Osaka, a new spot in Osaka. The place is crowded with people, but despite that, I visited twice during my stay in Osaka. I didn't know much about it, but my sister, who loves dashi broth, said it was delicious. I tried the vegetable dashi and Kayanoya dashi at the storefront, and both were excellent. I wanted to buy both, but the Kayanoya dashi tea bags, which contain 30 bags, cost 1,890 yen, so I chose the Kayanoya dashi to enjoy at home. It is made with carefully selected, additive-free, domestic ingredients such as grilled jaw, bonito flakes, sardines, kombu, and sea salt. The tea bags make it easy to use this authentic dashi. Although it may seem expensive to me as an ordinary person, the dedication to creating this dashi makes the price reasonable. They also gave me a Kayanoya dashi recipe book, which was very helpful. At home, I use Marukyo miso "Ouko" (additive-free, similar to red miso) from Ichikawa, Chiba, along with this dashi to make delicious miso soup. Good dashi makes me feel like my cooking skills have improved. You can buy it online, and it is also available in Tokyo, with an eat-in option at Midtown, which I hope to visit someday.
