Located in the area of 3-12-3 Hakata Station Front in Hakata Ward, this restaurant is a 9-minute walk from JR Hakata Station and about a 7-minute walk from Canal City Hakata. It opened in September 2019 and recently opened a new branch in Kasuga in April 2022. The owner has experience working at "Hakata Shinfu" and "Genryu/Hyogo". They offer three types of tonkotsu ramen: "rich tonkotsu", "yatai tonkotsu", and "spicy tonkotsu", along with rice dishes, gyoza, and karaage. The exterior is on the first floor of an office building, and the interior has counter seats and table seats. During my visit, they were short-staffed due to the new branch opening, so the owner was managing the restaurant alone. I tried the "yatai tonkotsu ramen", which was better than the one at the Kasuga branch. The tonkotsu flavor was well extracted with a good balance of saltiness and umami. The broth was less fatty compared to the "rich tonkotsu" option, making it a good choice for women and elderly customers. The thin noodles paired well with the broth, and the thickly sliced pork belly chashu was delicious. The toppings included wood ear mushrooms and green onions. After enjoying delicious yakitori, it's a good idea to have some ramen as a finishing touch. When in Hakata, you definitely want to try the tonkotsu ramen as well. I visited this restaurant located near the yakitori place. There weren't many customers when I arrived, but more people came in later. Looking at the menu, they had two types of tonkotsu ramen: rich tonkotsu and street stall tonkotsu. It reminded me of a certain ramen chain's menu, haha. I ordered the rich tonkotsu ramen (800 yen). Lately, I've been seeing ramen priced over 1,000 yen frequently, so seeing 800 yen was a relief. They provided pickled ginger and mustard greens on the table for flavor enhancement. The soup was rich and creamy, with just the right amount of saltiness. I didn't add any toppings, but there was plenty of seared chashu pork and wood ear mushrooms in the bowl. They asked me about the firmness of the noodles when I ordered, and I requested them to be firm. The noodles were cooked perfectly to my liking. I left feeling full and satisfied. The chashu was thick and tender, and the noodles were thin and chewy, typical of Hakata ramen, but slightly thicker which I liked! Went to work in Hakata and discovered a ramen shop I had never heard of before! Tai-son...? I ordered a regular ramen as the shop seemed quite busy with customers. Most of the customers were Korean. There were only two staff members, so the service felt a bit slow. The ramen took a while to arrive due to more customers coming in. I get more irritated when the shop doesn't run smoothly rather than focusing on whether the food is delicious or not. But considering the size, having only three staff members might be too few. Overall, it was an okay dining experience.

This is my first time here. I heard from my son that the rich pork bone ramen is recommended, so I tried the special rich pork bone ramen. It came with pork belly, boiled egg, seaweed, and chashu, and it was a voluminous ramen. The noodles were thin, which I like. It was rich but not too strong in pork bone flavor, and delicious. The fried chicken was also big and crispy, very tasty. The colorful fried rice was moist and delicious. I also want to try the evening snack menu next time. I sat at the counter and ordered the A set (ramen of your choice with a pork bowl). I chose the standard street stall pork bone ramen for 750 yen, making the total 1000 yen. The pork bone ramen had a standard taste that was reassuring. The standout feature was the char siu, which had a slightly burnt and fragrant taste. My favorite part was the topping of spicy pickled mustard greens. Of course, I also added plenty of pickled ginger, grated garlic, and sesame seeds. I was very satisfied. I paid using PayPay.

The rich pork bone ramen with boiled egg for 920 yen was like an even richer version of their signature ramen. One of the great joys of being a salaryman is going on business trips. It was quite late on a Saturday night when I was drawn to a brightly lit restaurant that was still open. When I asked the staff for a recommendation, they suggested the "Rich Pork Bone Ramen." So, I decided to try the "Rich Pork Bone Ramen with Pork Belly." I asked for the noodles to be cooked "firm." The thick slices of pork belly and pork loin were delicious, and the green onions and wood ear mushrooms added a nice touch! I also ordered an extra serving of noodles, and it was perfect!

The toppings were seared chashu, Itoshima green onions, and wood ear mushrooms. I tried sprinkling some white sesame seeds on top. The noodles were low-hydration straight thin noodles, and I think it would be even more delicious if they were a bit firmer. It was a delicious bowl.

Today, April 20, 2023 (Thursday: sunny), I am in Fukuoka for a business trip. After the meeting and social gathering, I checked into the hotel. I asked the front desk staff for a nearby ramen shop, and they recommended "Menya Taiso" to me. The shop was only 400 meters from the hotel, so I easily found it and went in. I sat at the counter, checked the menu, and ordered the rich pork bone ramen for 800 yen with firm noodles. The ramen arrived shortly after. The soup seemed thick and rich, but I couldn't quite taste the umami of the pork bone broth. The noodles were very thin, typical of pork bone ramen. The chashu consisted of two slices, one large and one small, both slightly charred. The largest chashu was about 8x5 cm in size and 3 mm thick. I tried it, but even the chashu didn't impress me much since I found the soup lacking. I added garlic to change the soup's flavor a bit, which helped a little. Tomorrow, I will be going to Kurume, so I will try the ramen there. Thank you for the meal!

The rich pork bone ramen was 850 yen including tax, and the "good job" set was 750 yen including a draft beer and 5 gyoza. The Tokuramen is a thick pork bone ramen with no distinctive flavor, it feels like a well-behaved student. It comes with wood ear mushrooms and seared chashu. I wish they would make it 750 yen without the wood ear mushrooms. The gyoza is small, about the size of two from Osho. It might have been good to have ramen, extra noodles, and draft beer. The staff was also very nice. Thank you for the meal.

Attended a friend's wedding in Fukuoka during my university days. Most of the invited friends from outside Kyushu couldn't make it to the ceremony in Honshu, so I only knew one person there. After the reception, we decided to have a final bowl of ramen at Hakata Station. Initially, we planned to go to Ichiran Hakata, but they were already closed for the night. Luckily, my friend quickly found Taisho-san Ramen. We waited outside for about 10 minutes before being seated at the counter. I ordered the rich tonkotsu ramen (700 yen) that I had decided on while waiting. It was ready in less than 10 minutes. The charred, fragrant-looking chashu caught my eye, but I started with the soup. Wow, it was intense... Despite being stuffed from the wedding feast and drinks, this rich soup seeped through my entire body. The noodles were customizable in terms of firmness, so I chose normal. They were the typical thin straight noodles of Hakata ramen. Even at normal firmness, they had a nice bite to them. Finally, I tried the chashu that had piqued my interest. It was slightly thicker than usual and had a noticeable smoky flavor. The price was reasonable, and I left very satisfied.

After attending a study group in Hakata, I searched for a ramen shop to eat at before heading home and found a clean and inviting place in front of my favorite motsunabe restaurant.
