Fukuoka City Chuo-ku Maizuru's hamburger shop, "FRISCO". On this day, it was a weekday but I was on summer vacation. I decided to go to Glory & Bar, a curry shop in Tenjin 2-chome, but to my surprise, it was gone and replaced by a Mongolian cuisine restaurant. So, I headed to Frisco, which was nearby. The restaurant is located towards the back of a mixed-use building, second from the last in the hallway. It's a bit hard to find. Upon entering, I found a few counter seats and a couple of small tables. It's a small place and not particularly clean or stylish. I sat at the counter and ordered a hamburger, fries, and drink set (tax included 1500 yen). The master molded the patty in front of me, seasoned it with salt and pepper, and started grilling it over charcoal. After a few minutes, the hamburger arrived. Underneath the bun, there was patty, onions, tomatoes, and lettuce. There wasn't much sauce or ketchup, just mustard spread on the bottom bun. It was delicious, with the meat's flavor coming through strongly. I didn't need the ketchup on the table, the default was perfect. I finished it all in no time. After the previous customer left, I ended up chatting with the master for about an hour. The master had lived in America for over 30 years starting from the late 1960s. The origin of Frisco's burger is the hamburgers from American households in the 1960s and 70s. Even now, about a third of the customers are foreigners (from America, Canada, etc.). They come from all over the country seeking this old-fashioned taste. It's a simple but delicious hamburger. I will definitely come back to Frisco! P.S. Well, the conversation with the master was endless, and I got to hear about the master's eventful life. I won't go into detail here, but it was so interesting that a whole book could be written about it. P.S. While I was engrossed in conversation with the master, three young white customers came in. When the master asked in Japanese if they could speak Japanese, they looked puzzled, so the conversation continued in English. Truly impressive. (laughs)
