Chicken and pork soy sauce ramen (with seasoned egg) ¥950. The broth looked frothy on the surface, but it was just the right thickness and very flavorful. It was creamy and delicious enough to finish every last drop. The chashu was well seasoned and so tender that it could be cut with chopsticks. The noodles were similar to Tenkaichi's, and they paired well with the broth.

I was near an APA Hotel and decided to have a meal alone, when I spotted this place and decided to give it a try. I ordered the chicken and pork soy sauce ramen with extra char siu topping. As I had read in reviews, I was surprised by the foamy texture of the soup! When I tried to drink the soup, it was indeed very foamy, unlike the smooth texture of regular ramen. It was not the usual gulping sensation, but rather a light and fluffy soup experience. It caught me off guard at first, but as I continued eating, I found it surprisingly enjoyable. By the time I finished my meal, I was actually considering ordering an extra serving, but I decided against it as I was afraid of gaining weight. Thank you for the meal! ✨

Today, I had a solo lunch and decided to try the spicy miso ramen without expecting too much. It seems they only serve 20 bowls a day. I arrived around 11:55 and it was not crowded, which was nice. However, after 12 o'clock, it got really busy and there were no more empty seats. I didn't have high expectations, but the ramen was surprisingly delicious! Even though I'm not a fan of foamy broth, I still think it was tasty! I even ordered an extra serving. Thank you for the meal.

The food was served after about a 10-minute wait. I took a sip of the soup and tasted the rich soy sauce flavor spreading in my mouth. The taste was simpler than I expected, but it was still good. The noodles were a bit thin, but they mixed well with the soup, giving a simple ramen experience. It wasn't amazingly delicious, but it was decently tasty. When I started working at a restaurant for lunch, there was a tantanmen shop on the island of Kikai that I really liked. But then a ramen shop opened afterwards that I didn't enjoy as much, so I started avoiding the place. However, Yamachu Seimenjo, the ramen shop that replaced it, completely changed my mind. I might be exaggerating a bit, but I really like their creamy soup that they whip up in a blender. The chicken and pork salt flavor is recommended! The chicken and pork soy sauce is also delicious, but I prefer the salt version!

I also decided to try a different flavor of ramen, so I chose the chicken and pork white broth ramen from the middle row of the ticket machine. The chicken and pork white broth ramen was mild with a hint of tonkotsu flavor, more like a creamy chicken ramen. The balance of chicken flavor and richness is important in this type of ramen, and this one was well controlled. It was not too strong but still had a good depth of flavor. Overall, it was really well done. As for the rare chashu rice bowl, it had a strong sesame oil flavor, and the chashu was not as rare as expected. The broth was quite thick, making the bowl a bit different from what I had imagined. Personally, I prefer a regular chashu rice bowl.

This is their fourth store, and I remember wondering if they had this chicken clear broth ramen before. I don't recall having the white broth ramen either, so I started with the soy sauce ramen, which had a light and citrusy flavor. The noodles were made with whole wheat flour and were smooth and chewy. If you like soft noodles, I highly recommend them. The chashu was small but well-cooked, and the menma was cut into small pieces and had a strong citrus flavor. Overall, it was a delicious meal.

A new ramen shop specializing in homemade noodles has opened! The shop is decorated with lots of orchids, which is lovely. I tried their default soy sauce ramen with char siu rice bowl for 1190 yen. The standout feature was the smooth noodles. They are thin and smooth, with a clean break. I think they are low hydration noodles, and the texture is really smooth. I wonder if this is possible because they are homemade noodles. The soup is a slightly sweet soy sauce flavor with a hint of dried fish. It's not overly fishy, but a well-balanced sweet soy sauce soup. The char siu served with it is delicious and tender. The char siu rice bowl has the char siu shredded and sprinkled on top. They also offer a rare char siu rice bowl for an extra 100 yen, where the char siu is served as a whole piece. I'm happy to see more ramen shops opening in this area!

Yesterday (12/26), I ate delicious soy sauce ramen at a shop near Sakaisuji-Honmachi Station on the Osaka Metro Sakaisuji Line. After that, I moved to the neighboring Kitahama Station and visited this shop that opened on the 18th of this month for a consecutive meal. It was just before 12 o'clock when I entered, and the area was already almost full due to being a business district. I managed to find one empty seat at the counter and purchased a ticket for "Soy Sauce Ramen (800 yen)" from the ticket machine before sitting down. The bowl arrived quickly, with flat, medium-thin straight noodles peeking out from the soy sauce-colored soup. On top of the noodles were appetizing slices of chashu pork and bamboo shoots, along with plenty of finely chopped green onions and diced onions floating on top, creating a very appetizing visual. When I slurped the soup, I found it to be the classic clear broth made from chicken and seafood, slightly sweet and thick in flavor, very delicious and a taste I love. The flat, straight thin noodles had a smooth texture that was easy on the throat, and the chashu pork was tender and very tasty, with the other toppings also being well done. So, even though it was my second bowl yesterday, I finished it in no time. The Yamataka Seimen Group never disappoints, that's the overall conclusion.

It's been a while since I went to a new ramen shop in Osaka. Recently, ramen shops have been closing early in the evening, so finding one open until midnight is rare. This shop seems to be a new brand store managed by "Yamanaka Seimenjo" in Honmachi. The menu consists of three types of ramen: Soy Sauce Ramen, Chicken and Pork White Broth Ramen, and Chicken and Pork Soy Sauce Ramen. I ordered the Chicken and Pork Soy Sauce Ramen with a boiled egg, which the staff mentioned is the most popular. The soup was so creamy and had a rich flavor, made from Awa chicken, Kyushu chicken, and Kagoshima pork. The homemade straight noodles were slightly thin, and I chose them to be firm. The toppings included pork chashu, boiled egg, menma, and green onions. The boiled egg was a bit too firm for my liking. Despite having condiments like red pickled ginger, pepper, and chili pepper, I ended up eating the ramen without using them. Overall, it was a well-balanced and delicious ramen.

Today's weekday lunch was at a recently opened restaurant. It seems like Yamana Seimenjo has been expanding their locations everywhere. It feels like Yamana is always there. So, when I think of Yamana Seimenjo, I always think of tonkotsu ramen. Therefore, I planned to order the classic tonkotsu ramen today, but I came across a "unusual" menu item. As a member of the Spicy Miso Ramen Fan Club, I had to try it. I decided to also try the Tamago Kake Gohan (egg over rice) set. The items I ordered were Spicy Miso Ramen for 1,000 yen and Tamago Kake Gohan for 150 yen. The restaurant was bustling, and I was led to a narrow aisle at the back. I enjoyed the cozy atmosphere. The food arrived quickly. The Spicy Miso Ramen was initially white, but when stirred, it transformed into a red color. It was an interesting presentation. The flavor was a fusion of the restaurant's signature chicken and pork white broth ramen with spicy miso minced meat. It wasn't a traditional spicy miso ramen, but it pleasantly surprised me. The Tamago Kake Gohan was delicious, and I finished by mixing the soup with the ramen. It was a unique dining experience, and I enjoyed the "transformation" ramen. It was more of a "metamorphosis" than a "peeling" experience. It was a delightful meal.
