This is a new restaurant that opened on November 1st, and I visited it promptly as it was a relocated and renovated shop from the same Ishibashi area where Menya Matsukaze used to be. In addition to the default option, the noodle menu includes Half Soy Sauce (all half portions for ¥550), Soy Sauce Soup (noodles excluded for ¥500), Special Miso (¥790), Spicy Miso (¥850), Simple Mazesoba (¥590), Plus Mazesoba (¥690), Tonkotsu Tsukemen (¥850), and Extra Noodles (+¥100).
[Soup]:
The soup is a soy sauce flavor based on chicken, pork, with a hint of seafood and a slightly restrained oil content. It has a light and refreshing taste, low viscosity, with a light body. The rich umami of the animal-based slightly cloudy white broth and the elegant flavor of dried fish and seafood, combined with a rounded seasoning, create a gentle and slightly sweet taste that is very delicious!
[Noodles]:
The noodles are medium-fine wavy noodles from Tsurumi Seimen. The noodle portion is 120g. They are slightly shorter in length, thin yet with a very strong and bouncy texture. While the noodles have an average compatibility with the soup, the wheat flavor is well perceived and delicious. Although these noodles are tasty on their own, there may be other noodles from the same noodle maker that could have a better compatibility with the soup.
[Chashu]:
The chashu is a large piece of pork belly that is incredibly tender and easily falls apart. It has a slightly light seasoning, allowing the rich sweetness of the fat to be fully enjoyed and is very delicious!
[Flavored Egg]:
The flavored egg is soft-boiled with a slightly light seasoning.
[Other Toppings]:
Other toppings include white negi, menma, and nori. Additionally, you can enjoy flavor variations with table-side condiments like sansho pepper and ichimi.
[Atmosphere]:
The restaurant has a counter with 6 seats, two 6-seat private rooms, and one 4-seat table, totaling 22 seats. The semi-private rooms have a lively atmosphere in the evening. The friendly and cheerful customer service adds to the good impression, making it a pleasant dining experience!
