The restaurant was featured on a TV show called "Take me to the best restaurant, taxi driver." They use a type of pig called Hikoma pork (SFP), which seems to be a breed with delicious fat. I visited the restaurant for lunch on a Friday when they were closed on Tuesdays and Wednesdays. The butcher shop opens at 10 am and the restaurant at 11 am. The menu includes steak, minced cutlets, hamburgers, ginger pork, and more. You can order cuts by weight in 50g increments or by specific parts like rib loin, fillet, sirloin, shoulder loin, belly, arm, or leg. You can choose between tonkatsu or steak for cooking. I prefer tonkatsu over steak, so I ordered the Custom Cut Tonkatsu with an additional 550 yen. The prices listed are all before tax, and you can have unlimited rice refills. The prices for meat cuts are: Rib loin (100g) for 320 yen, Fillet (100g) for 310 yen, Shoulder loin (100g) for 290 yen, and Arm (100g) for 180 yen. They also offer a popular item, minced cutlet for 250 yen. For tonkatsu, you can choose between salt, sauce, or grated ponzu for seasoning, and even if you choose salt, you can still have sauce on the side. The cuts of meat are brought to your table by the staff. The minced cutlet is juicy and flavorful, with a generous thickness and a ginger flavor. The tonkatsu photos show arm, shoulder loin, rib loin, and fillet from left to right, with a crispy coating and a thickness of about 1cm each. The arm has a firm texture but releases umami as you chew, while the fillet is tender, and the shoulder loin and rib loin have delicious fat. The total bill came to 2090 yen (including tax) for 500g of meat, which felt like a good deal. Thank you for the meal.
