They didn't ask for any specific preferences unless prompted. The soup started off relatively light but gradually the richness of the pork and garlic came through. The noodles, which I didn't specify the firmness for, were slightly firm. Toppings included green onions, wood ear mushrooms, thinly sliced char siu, and a flavored egg, balancing out the overall dish. The staff seemed a bit understaffed due to the late hour, but the foreign staff member handled communication, efficiency, and presentation smoothly. I visited a ramen shop near Hakata Station, just a five-minute walk from the Chikushi exit. It had been about 10 years since my last visit. I tried the "Hakata Tonkotsu Ramen" for 750 yen. Despite its rich appearance, the soup was surprisingly light and went well with the thin noodles. There was no unpleasant smell typical of tonkotsu broth, and the flavorful chashu was delicious. I would recommend this ramen even to those who are not fans of tonkotsu ramen.

Overall, I randomly decided to eat at this restaurant while wandering around during lunchtime. I had been here before, but I hadn't reviewed it on Tabelog, so it must have been about 10 years since my last visit. I had the impression that they served tonkotsu ramen, but they also had tonkotsu shoyu ramen on the menu, so I decided to try it. It's interesting to note that it's called "tonkotsu shoyu" instead of "shoyu tonkotsu." The ramen had more of a tonkotsu flavor than shoyu, but it still made me crave ramen. While eating, I realized that the main difference between "tonkotsu shoyu" and "shoyu tonkotsu" is probably the thickness of the noodles. Personally, I prefer the style of ramen with a thicker broth. I visited during a business trip to Hakata in March 2023. I stopped by for a late-night drink. The staff inside seemed to be a foreign man handling everything alone. The place was messy and there was a line outside... but he remained calm and worked at his own pace. In a way, he had a strong composure. Some customers even helped with cleaning up bowls and helped with the operation. The slow service led to more people lining up, creating a strange cycle. The taste was a classic Hakata ramen flavor.

It had been a while since the three of us, who were colleagues, had a late-night ramen and a drink together. This time, I ordered the Hakata soy sauce ramen (530 yen). It was not your typical soy sauce ramen, but why it's called "Hakata" remains a mystery. Visually, it looked like a regular soy sauce ramen. I think the noodles were thin, which might explain the "Hakata soy sauce" label. Of course, I ordered it extra firm! The broth was slightly salty but went well with a beer in hand. The toppings were simple - chashu, wood ear mushrooms, and green onions. However, it lacked a distinctive feature that sets it apart. Perhaps I should have just gone with the tonkotsu ramen, as they have a variety of tonkotsu-based options here. Next time, I'll try one of those!

I didn't expect the light pork bone broth to be quite satisfying in Hakata. I didn't go to the restaurant with the expectation of having ramen, but someone had posted a photo and menu of roast pork and egg rice bowl from this place, and I wanted to try it. In the end, they didn't have what I was looking for, but I decided to go for the Barikoku Ajitama Tonkotsu Ramen for 880 yen, with an additional 150 yen for the special chashu bowl. I was surprised to find that when I entered the restaurant right after it opened, there was only one man in the kitchen, and as I walked towards the back to sit, I saw someone lying face down at the counter, completely covered and asleep. So I was seated right in front of the entrance, which was always open, and I felt it was quite cold there, even though I don't usually feel cold. The person who was sleeping turned out to be a staff member, who woke up later and stood behind the counter to take my payment. As for the ramen itself, I was expecting a miso-like topping on the chashu, but it turned out to have a very mild flavor, despite the rich pork bone broth. I started to doubt my own taste buds. However, when I tried the chashu bowl, it had a delicious flavor. But going back to the ramen, it still tasted quite bland. I tried adding sesame and pickled ginger, but it didn't help disguise the fact that it was lacking in flavor. I was surprised that a place like this could continue to thrive in Hakata.

On the way back to the hotel in November 2018. I wanted to eat ramen since it's a great opportunity. However, it was already past 11 PM and there weren't many ramen shops open. Among them, I found a shop that was still open! The staff were all foreigners. It seems like Tokyo and Hakata are not so different after all. The taste was very mild and safe. I tried three Hakata ramen in one day, but the price and taste may not be so different from Kanto region. It was a grateful shop that met the expectations of tourists returning from drinking!
