Founded in the second year of Enkyo (1745), the sake brewery Jozima in Fukuoka has a long history of sake brewing, benefiting from the abundant water of the Chikugo River, beautiful large grains of Chikugo rice, fragrant Hita cedar, and the skill of the skilled sake brewer. The main ingredient rice used in the brewery is Yamada Nishiki from Fukuoka, aiming to create a sake that is "local". It pairs well with Fukuoka's soy sauce and miso, complementing the local cuisine. The sake is dry with a fruity taste, making it easy to drink. The aroma is rich and refreshing. Fukuoka is great! Cheers to Honjozo Hana no Tsuyu, a dry and delicious sake!

The town is known for hosting sake brewery opening festivals, with tours being organized for enthusiasts. Among the sake breweries in Castle Island Town, the highest quality brewery is Flower Dew. Flower Dew sake is known for its smooth and easy-to-drink taste, often referred to as "women's sake." I recommend trying the Kouryukan brand of sake, which can also be found at JR Kurume Station, making it a great souvenir option.
