"Ryu," a members-only sushi kaiseki restaurant that recently opened in Nakasu. The head chef is a former Japanese cuisine chef who trained at the luxury ryokan "Muryotou" in Yufuin. The menu consists of only a Chef's Choice Course, featuring 5 delicate and deep-flavored appetizers made with seasonal ingredients, followed by 10 pieces of sushi, a finale, and dessert. Each dish showcases the chef's meticulous craftsmanship, with the Chawanmushi at the end intentionally simple without any ingredients, featuring a gentle reset with honey and plum paste. Moving on to the sushi, starting with Medium Fatty Tuna, followed by the rich and sweet Marinated Squid, fatty Nodoguro, Ikura, Uni, and Botan Ebi, a luxurious lineup of toppings. The "Red Vinegar Rice" made with 5-year-aged red vinegar enhances the umami of the toppings. The cucumber with matcha salt, seaweed with homemade vinegar, and pickled Chinese cabbage instead of ginger were all delicious and kept us reaching for more. The course price includes drink charges (beer, shochu, whiskey, sake, etc.), allowing you to enjoy a variety of drinks without worrying about the bill. We also had the opportunity to enjoy a sake tasting recommended by the chef and hostess, making it a very meaningful and enjoyable experience. The restaurant has a warm wooden counter with only 7 seats, creating a special atmosphere like a hidden gem where you can enjoy a leisurely meal. Highly recommended for special occasions, anniversaries, dates, and meals with loved ones.
