I heard that a friend lives in Sendagi, and since I researched the gourmet food in Sendagi, I've been curious about a meat shop called Yokoetsuka. It seems that their homemade corned beef is popular and has been featured in various media. I was intrigued, but I didn't have a reason to go to Sendagi... One day, when I was using Ginza Matsuya, I saw it! Yokoetsuka's shop! The price was high, so I couldn't buy it right away and after much deliberation, I finally purchased it. The price is 2140 yen for one pack (400g, tax included)! The store also has bacon and side dishes, which all look interesting. I was well-prepared with a cooler bag to get it. At the store, there was a sign saying one per person only. It was a weekday afternoon when I visited, and there was still plenty of stock available. The beef is from Australia and the beef fat is domestically sourced. If unopened, it can be refrigerated for about 3 weeks, and once opened, it can be refrigerated for about 1 week. If frozen immediately after opening, it can last for a few months. When freezing, wrap it tightly with plastic wrap and then wrap it with aluminum foil to prevent discoloration caused by light. I saved half of it that way. I inserted a knife around the pack and placed it on a cutting board. The aroma of the fat and meat is amazing! I tried it in a Yukke style that I found on the internet. I put the sliced beef in a heat-resistant dish, covered it with plastic wrap, lightly heated it, and then shredded it. There was actually quite a lot of meat compared to the sliced amount. It's said to be delicious with egg yolk on rice, but this time I made a salad with it. You can feel the texture of the meat fibers, but the beef aroma is at its maximum and it's delicious! This would make a great impact and be appreciated as a gift at a home party! Corned beef seems to go best with bread. Following a recipe from Hotel Okura, I made a sandwich with toasted bread, corned beef mixed with mayo and Worcestershire sauce, and fried onions. It was amazing. I would love to make a bagel sandwich with it too! I thought it would be saltier, but it's not overly salty, so it's open to various adjustments. Personally, I found that microwaving it for about a minute until the beef fat completely melts and mixes well makes the fibers more tender and delicious. It's a bit expensive, so I hesitated a bit before buying it, but it's quite a large quantity for home use. Once I finish the frozen one, I would definitely love to buy it again when I have the chance to indulge! I'm also very curious about the directly operated restaurant in Kichijoji!
