"24 years old, a sushi chef with a strong core, looking forward to the future" On June 24, Reiwa 5th year, I went to meet a young sushi chef who has been posting about his meals, dishes, and sushi on Instagram. He is the son of a well-known Kansai Michelin-starred traditional Japanese restaurant, but he chose a different path as a sushi chef. We talked about his background and how he decided to pursue the path of a sushi chef, while sipping on some sake. We ordered the mid-range Omakase course for 10,890 yen with an additional small fin. The appetizers were typical of a sushi restaurant, including tofu, sashimi, grilled dishes, and chawanmushi, which showcased the quality of the work. The simplicity allowed us to enjoy the ingredients. The sushi-making process was elegant and the texture of the sushi was excellent. The marinated sea bream with kombu was moist and flavorful. The medium fatty tuna and marinated lean tuna were a balance of richness and freshness. The spear squid had a lovely decorative knife work unique to Hakata, and a sweet taste. The horse mackerel had a refined umami without relying on fat. The Amakusa shrimp was a highlight, and the red sea urchin was delicious. The Ansio from Tsushima was fluffy and soft. The additional small fin was indeed small, but it was a nice touch. The rolled sushi included Toro-taku and a soft gourd roll, which I enjoyed as a fan of gourd rolls. The ability to understand and delight the customer effortlessly, like knowing I like gourd rolls, shows true sense. Although I didn't mention dessert, the matcha pudding was rich with a subtle matcha flavor. Kirinji will be in Fukuoka until September, then moving on to the next stage at a famous sushi restaurant in Kansai. Recently, there has been an increase in sushi restaurants in Fukuoka offering a two-part course. Here, you can eat as much as you like of what you like. It's great for when you want to eat lightly or when you want to eat a lot. Reservations are also easy to make, so you can rest assured that you can enjoy delicious sushi even when you suddenly crave it. The atmosphere is nice and the food is delicious.

We had a meeting and went for a sushi lunch. We made a reservation over the phone in advance and they served us a course meal. It was great to be able to enjoy a crispy meal. If I have the chance, I would like to have a leisurely dinner there at night. Thank you for the meal.

This is a sushi restaurant located on the basement floor of the Nishitetsu Grand Hotel in Daimyo. We opted for the 8000 yen chef's choice course for dinner with my family of three. We started with appetizers and a toast. Then enjoyed a variety of fresh sashimi using seafood from Genkai. We also had grilled sea bream and a refined simmered dish. We then moved on to the eagerly awaited sushi time, with the skilled chef preparing a selection of exquisite sushi right in front of us. The meal ended with red miso soup and dessert. It's been a while since I visited Takadama. I usually go to the main store or Okura, but this time I went to the branch at Nishitetsu Grand. It feels a bit cramped, but it's still a comforting place.

Located in the basement of the Tenjin Nishitetsu Grand Hotel, this restaurant was discovered while dining at a Chinese restaurant on the same floor. It used to be a sushi restaurant before, but it seems to have changed at some point. Fukuoka has three major traditional sushi restaurants, and this is one of them. Many apprentice chefs trained here have gone on to open their own restaurants in the city. Previously, the main restaurant did not offer a lunch set and miso soup was an additional charge, but here they have a Sushi Lunch Set for 3000 yen, making it more accessible. In addition to the lunch set, they also offer nigiri sushi and other dishes. The interior of the restaurant seems to be similar to the previous one. Both of us ordered the Sushi Lunch Set. My husband had a beer for 770 yen (excluding tax), and I had tea. The meal started with a sesame sauce over okyuto, a Fukuoka specialty that I'm not particularly fond of, but it was still palatable with the sesame sauce instead of soy sauce. The cold chawanmushi with ginkgo nuts and fish slices was delicious. The clear soup had a rich fish broth flavor and was tasty. The sushi was served in assorted pieces rather than one by one. The selection included squid, tuna, shrimp, sea bream, amberjack, sardine, eel, salmon roe gunkan, and cucumber rolls. The pieces were small, but the rice was of decent quality. The taste was good for the price. The young chef who served us was friendly and engaged in conversation. Overall, if you can enjoy the taste of a traditional restaurant at this price, it's worth it.
