February 4th. Today is a different pattern than usual. First, I went to my favorite bar, Bourbon-san, and then headed towards Matsuyamachi. I arrived at Toyo-san's Kitchen, which recently opened. It is located just a little west of Matsuyamachi Station, right after crossing the river. The restaurant is always bustling with customers. Today, there were two groups of customers ahead of me. I entered and sat at the corner of the L-shaped counter, with a woman and a man at each end. I ordered barley shochu on the rocks. The menu is written on a small whiteboard. Today's offerings include sashimi of horse mackerel, grilled crab miso, red wine-braised black wagyu beef, grilled chicken thigh with truffle salt, marbled wagyu steak, and grilled zuri with black pepper. There are also options like sesame tofu, gizzard shad, crab kamaboko, and radish with miso. It's quite an interesting lineup. I decided to order the grilled chicken thigh with truffle salt. Toyo-san asked if it was my first time here, and I blushed as I confirmed it, mentioning that I had peeked into the shop before. Despite appearances, I am shy around new people. The grilled chicken thigh arrived, with the skin still on. It was accompanied by cherry tomatoes, kaiware radish, and lemon, all nicely arranged. The meat was slightly tender, and while I couldn't quite detect the truffle aroma, the seasoning was just right. It makes for a great accompaniment to drinks. There are many regular customers here. Some are very friendly, while others are more reserved. It doesn't really matter to the restaurant, but it's a good reminder not to let others affect you. Bon appétit.
