Today is another lucky day! It's the grand opening day of a new restaurant. To cut to the chase... it was delicious! Please go and try it out. I ordered the "Tonkotsu" ramen for 850 yen. It's not a pork clear soup, but intentionally a tonkotsu broth. I also ordered gyoza and rice. Today happened to be my third consecutive day of ramen adventures by chance. Originally, I was planning to go to Muteppou in Daikokucho today, but I decided to wait until next week when I will be passing by for work. For dinner, I had brown rice and fish... oh, no beer!? So, I rode my bike to a convenience store in a direction I don't usually go. And then, I stumbled upon a ramen shop that wasn't in my ramen database... I remembered there used to be a shop called Ichinoha here. I had been there a few times before, but each time the taste and service got worse. As I was contemplating this in front of the shop, a staff member, a friendly lady, opened the door and invited me in. "We just opened today. Would you like to try our food?" Thanks to the pleasant demeanor of the lady, my previous impression was instantly erased. I was drawn inside the shop... Usually, I would order the recommended menu at a new ramen shop, but here I decided to challenge the "Tonkotsu" ramen. Because in my mind, the thick and rich tonkotsu soup from Muteppou that I had been postponing for two weeks was flowing through my veins. With such a self-image, there was no way I could win this match, but still, I wanted to challenge the tonkotsu ramen. However, with the confidence and workmanship of the shop owner and the refreshing customer service of the lady, I felt like I couldn't lose. So, I placed my order. "One Tonkotsu please. And also, gyoza and white rice." Meeting the "Tonkotsu" ramen for the first time. It was beautiful. The noodles were smooth and chewy. The soup had a punchy tonkotsu flavor with a hint of saltiness and richness. The thickness was around 7, I would say. The chashu had just the right amount of fat and was well-seasoned, a well-balanced ramen that you wouldn't expect from the appearance of the shop owner. The tonkotsu's body blow gradually took effect, with a soup that was both moderately heavy and mellow, strangely elegant. The gyoza was crispy and well-seasoned, providing a satisfying bite. It paired well with the white rice and the ramen. They are open until 10 pm, so I decided to challenge the "Tonkotsu" ramen again soon and see how it compares to the "Tonkotsu Clear Soup".
