When Mr. Tamagoro was in Higashi-Shinsaibashi (which is no longer there), he used to frequent a shop a lot! At most, he would go there eight times a week (in the evening and in the morning). I just love it! I always get the green onion topping. It just goes so well with Mr. Tamagoro's ramen... The flavor of the white onion complements the anchovy-based soup so well! It's also good with white rice! My friends like Mr. Tamagoro's tsukemen, but I prefer the regular ramen. Surprisingly, this was my first post. However, the restaurant I had in mind had a sign saying "Closed for a certain period." I see, it's becoming more common for restaurants to take breaks like this. Some establishments even receive financial aid, which can increase their income. It's a business decision. I have visited the Niboshi Ramen Tamagoro Honmachi branch near my workplace a few times. It's part of the same chain, so I feel a sense of security that it will be "foolproof." I stand in front of the ticket machine and hesitate a bit. There are significantly more options here compared to the Honmachi branch. It's overwhelming. So, I just randomly select something as usual.

It's been a while since I had a ramen that costs four digits. The small shop has an L-shaped counter, and there are only two other customers. The ramen is made in a smooth and flowing process. Watching this scene is never boring. Ta-da! A bowl with a big impact arrives.

The cute Naruto fish cake perched in the center catches my eye. The soul of Tamagoro is its soup. Slurp slurp slurp! Delicious! The soup is consistently tasty, and this niboshi (dried baby sardine) broth is exquisite. I take a big bite of the thick chashu. Oh, the meatiness is incredible. I'll devour the crunchy bamboo shoots too. It's a joy to savor the texture. The egg yolk glistens in orange. It must be a special egg. When it comes to Tamagoro, it's all about curly noodles. The chewy curly noodles have a bounce to them that's enjoyable. They mix well with the soup, so you get to fully appreciate the original flavors every time. Before I know it, all the solid ingredients are gone. Even after finishing the soup, I don't feel heavy or thirsty. Niboshi broth might actually be healthy, I think. Despite feeling like a bit pricey at 1,000 yen, I am completely satisfied with the meal. Thank you for the feast.

I came back to Tamagoro after a long time. I used to go there often, but today I visited the main store in Kuromon Market in Osaka. The curly noodles with rich bonito soup were exquisite, still delicious as always! I wanted to eat a lot today, so I had the chashu rice bowl and water dumplings set. Both were delicious. But I thought having ramen two days in a row might be a bit much, so I decided to go for "tsukemen" instead. It had been a while since I visited "Niboshi Ramen Tamagoro." I didn't realize they had a main shop in Kuromon? Or is it just the name? I had the niboshi tsukemen and added a seasoned egg. There was only one other customer as it was just before 2 pm. The noodles were thick and firm, perfect for dipping into the niboshi soup. I used to be really impressed by this niboshi tsukemen in the past, but now it doesn't quite excite me as much. Maybe because I've tried so many different places. The noodles and dipping broth were still good though, well-balanced. For lunch, I went to Kuromon Market in Namba. It's been a while since I last visited, and it was surprisingly quiet. I walked around and noticed that "Tamagoro" had changed its menu. I visited the restaurant "Niboshi Ramen Tamagoro Kuromon Honten" located in Kuromon Market for lunch that day. In the past, it was impossible to have lunch at Kuromon Market because there were too many overseas customers, but due to the current situation, I was able to visit. I purchased the "Salt Niboshi Ramen 800 yen" from the ticket machine at Tamagoro, a long time no see. I'm not a big fan of dried fish flavors, but this ramen had a strong anchovy taste without any fishy smell, so I was able to finish the broth. I had tsukemen at Ramen Tamajirou, known for their dried fish ramen. As expected from a chain with multiple locations, it was consistently delicious. I quite like tsukemen, but this one didn't have an extremely strong dried fish flavor. Perhaps a flavor that is too distinctive wouldn't work well for a chain with many branches. I also tried their ramen, and I think I prefer it over the tsukemen (lol). Even though tsukemen is great for the hot summer, taste-wise, I think I prefer ramen. It looked delicious in its simplicity. First, I took a sip of the soup. The savory flavor of the dried sardines after drinking was irresistible. The noodles were smooth and had a good texture. At the ticket machine inside the restaurant, you can choose the size of your noodles - regular, large, or special. I went with regular, but found the portion to be quite generous. The dipping sauce was rich and thick. At the end, you can dilute the sauce with soup from a pot. I poured in a lot of soup, but it was still too strong for my liking. Tamagoro is located off the main street of the market, with a unified Tamagoro-colored exterior like other shops. Inside, the majority of customers were of Chinese descent, and the staff, who could speak Chinese, skillfully guided them. First, you purchase a meal ticket from the ticket machine, then you are seated at a wooden L-shaped counter where you hand over your meal ticket. The menu features two main items: shoyu ramen and tsukemen with dried sardines, as well as a unique topping of water dumplings. As a limited-time special until the end of the year, they also offered Bali-style dried sardine ramen. I ordered the Bali-style ramen, which arrived in 7-8 minutes. The soup had a strong, dark grey color with a smoky dried sardine flavor mixed with pork bone broth. It had a higher level of dried sardines compared to the normal version, but it was not overpowering and even those who are not big fans of dried sardines would enjoy it. The noodles were the classic curly Tsukemen noodles, which stood out in the strong dried sardine soup. The toppings included thick slices of chashu pork, menma, chopped onions, narutomaki, and clams, with a generous amount of crushed dried sardines at the bottom. This was my second time trying the Bali-style ramen at Tamagoro, and I felt that this time the dried sardine flavor was even stronger. It was delicious.

In mid-September 2018, after eating ramen at "Kamiza," I wanted to eat another delicious ramen so I searched on Tabelog while returning to the area around Sennichimae. I avoided the place I was looking for because it was either tonkotsu or chicken broth, and instead, I found a sign for Kuromon Market across the intersection, so I decided to check it out. Even though it was late and some shops were closed, I explored the market. That's when I found this restaurant! I checked the reviews on Tabelog, but surprisingly, I wasn't very hungry, so my friend and I stood in front of the shop discussing for a while. We decided to go in anyway! Inside, there was a ticket machine on the left with the menu. I hesitated between the seasonal limited edition "Autumn Swordfish Niboshi Tsukemen" for 900 yen and the "Niboshi Ramen" for 730 yen. With the recommendation of the owner, we ordered both. Both had a strong and delicious scent of niboshi without any bitterness or unpleasantness, and the noodles were chewy and delicious.
